SUNFLOWER AND FLAX SEEDS WHOLE WHEAT CAST IRON BREAD
Sunflower and Flax Seeds Whole Wheat Cast Iron Bread - no kneading required and only a few ingredients turn into a super crusty delicious bread.

Steps:
- In a big bowl mix flour, salt and yeast together. At this time you can add the sunflower and flax seeds and stir them around a bit. Pour water into the bowl and using a spatula mix it until it's all incorporated. Cover the bowl with plastic wrap and let it sit on your counter for 12 to 18 hours.
- Preheat oven to 450 F degrees. Add your ]cast iron pot to the oven and heat it as well until it's at 450 F degrees.
- Remove pot from oven and remove the lid from it.
- Flour your work surface really well and make sure you flour your hands really well. With your floured hands gently remove the dough from the bowl and roughly shape it into a ball. Take the ball of dough and drop it into the pot. Cover the pot with the lid and place it back in the oven.
- Bake for 30 minutes with the lid on, after which remove the lid and bake for another 15 to 20 minutes until golden brown.
- Remove from the oven and let cool.

FLAX SEED BREAD (BREAD MACHINE)
I saw flax seed at the grocery and bought it without any idea of what to do with it. I found out that flax seed contributes fiber and omega-3s to the diet. Even better, it made this delightful, speckled loaf with a nutty flavor. Wonderful as is or toasted.

Steps:
- Place ingredients in your bread machine as directed by your manufacturer.
- Set to dough cycle. Check the consistency after about 10 minutes - if it looks dry, add a little more water.
- After initial rise, remove, shape in a large round loaf (or whatever you like), let rise again on a cornmeal dusted baking pan.
- Preheat oven to 400 deg. If desired, brush loaf with an egg wash (one egg beaten with 1 tbl. cold water). Slash loaf with sharp knife. Place in oven. After 15 min., reduce temperature to 350 deg.
- Bake for an additional 25 minutes or until loaf is done - an instant thermometer should read 205 deg.
- Turn onto cooling rack and let cool.
- Note: If using flax seed, 2/3 cups seed will grind into 1 cup flax meal.
- Note2: If using egg wash, you may also sprinkle loaf with whole flax or poppy seeds.

This recipe works great on the popular Panasonic SD-YD250 Bread Bakery. This recipe is for 1-1/2 lb loaf (size M). For 2 lb loaf (size L) change the servings below to 1.25 loaf and for 2-1/2 lb loaf (size XL) change the servings to 1.5 loaf.

- Place all dry ingredients in bread pan (except dry yeast).
- Pour water slowly into the bread pan.
- Add honey and oil.
- Fill the yeast dispenser with dry yeast.
- Program for whole wheat bread.
- Press start or set timer.
- Add millet, sesame or sunflower seeds instead or combined with flax seeds.
- The directions are for Panasonic SD-YD250 if your machine doesn't have a yeast dispenser please follow instructions when to add yeast.
- You can also set the machine to basic white bread and you'll get a softer crust.

- Measure carefully, placing all ingredients except seeds in bread machine pan in the order recommended by the manufacturer. Add nuts at the Raisin/Nut signal or 5 to 10 minutes before last kneading cycle ends.
- Select Basic/White cycle. Use Medium or Light crust color. Do not use delay cycle. Remove baked bread from pan, and cool on wire rack.
- I made mine on the Dough cycle.
- At the end place dough on floured counter; cut in half, shape into 2 loaves and place in 2- 8" loaf pans. Slash the loaves and brush with liquid eggs if available.Let rise 45 minutes in warm place.
- Bake at 350* for 30 minutes or until cooked.

- Start with a sponge. Mix together all ingredients except for the flour in your kitchenaide mixer stand. Add 1 1/2 cups of the flour and let stand for 30 minutes till bubbly in mixer bowl. Then add in the remaining flour till the dough is ready to rise in a greased bowl. The dough should not be sticky and springs back when touched. Let rise for 1 1/2 - 2 hours or double in size in a greased bowl covered with plastic wrap. Form dough into a loaf and place in your loaf pan. Let rise another 30-45 minutes till double. Bake at 350 degrees for 30 minutes. Butter the top when done and let cool.
