MEDITERRANEAN PASTA

- Bring a large pot of water to a boil and add 1 tablespoon salt. Cook the pasta until al dente. Reserve 1/2 cup of the pasta water, then drain.
- While the water boils and pasta cooks, prep your vegetables and remaining ingredients: mince the garlic; halve the cherry tomatoes; drain and roughly chop the artichokes; drain and slice the olives in half. Once the vegetables start cooking, the recipe goes quickly, so you want to be ready.
- Heat the olive oil in a large skillet over medium high heat. Add the tomatoes, garlic, the remaining 1 teaspoon salt, pepper, and crushed red pepper flakes. Cook, stirring frequently, until the garlic is fragrant and the tomatoes begin to break down and release some juices into the oil, 1 to 2 minutes.
- Add the pasta to the skillet and toss to coat. Add the artichokes and olives. Drizzle the lemon juice over the pasta. Continue tossing and cook for 1 to 2 minutes, until warmed through. If the pasta seems too dry, add a splash of the reserved pasta water to loosen it. Taste and adjust the salt and pepper as desired. Remove from heat and sprinkle with Parmesan and parsley. Toss once more and enjoy.

Steps:
- Heat 1 Tbsp.
- oil in medium skillet over medium heat; add chicken.
- Cook, stirring, until chicken is cooked through, about 5-7 minutes.
- Remove from skillet and drain on paper towel.
- Begin heating water for pasta.
- Heat remaining oil in same skillet and add onion and green pepper.
- Cook for about 3 minutes.
- Add frozen vegetables and garlic.
- Cook, stirring, for 5-7 minutes.
- Cook pasta according to package.
- While pasta is cooking, add chicken broth, basil, salt, pepper, and parmesan cheese to skillet and stir to combine.
- Return chicken to skillet; reduce heat and simmer for 4 minutes.
- Drain pasta and place in large serving bowl.
- Top with chicken and vegetable mixture and serve immediately, with extra parmesan cheese for sprinkling.

- Cook the past according to package directions. Drain. (I cook the pasta with salt).
- In a large saucepan, under low heat, mix olive oil and chopped garlic, stirring constantly until garlic start browning.
- Turn off the heat, add angle hair, toss. Add salt, if necessary, and black pepper to taste.
- Serve with grilled chicken strips and lots of grated mozzarella and parmesan cheese on top.
- Notes:.
- Use extra virgin olive oil.
- When heating the olive oil with garlic be very careful so you don't burn the garlic.

- Preheat oven to 325 degrees F.
- In a large suacepan, melt butter over low heat.
- Stir in the package of dressing mix.
- Blend in wine and golden mushroom soup.
- Mix in cream cheese, and stir until smooth.
- Heat through, but do not boil.
- Arrange chicken breasts in a single layer in a 9x13 inch baking dish.
- Pour souce over chicken.
- Bake for 60 minutes in the oven.
- Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil.
- Cook pasta until al dente, as directed on package instructions.
- Drain.
- Serve chicken and sauce over pasta.

- In skillet, combine olive oil, onion, bell pepper & garlic.
- Sauté over medium heat until veggies are tender.
- Add tomatoes, oregano, salt & pepper.
- Bring to a boil for 1 minute.
- Reduce heat & simmer for 10 minutes.
- Add Seafood & simmer another 3 minutes.
- Serve warm sauce over pasta.

- Cook spaghetti according to package directions omitting salt. Drain and set aside.
- Preheat oven to 350 degrees.
- Spread breadcrumbs evenly on a baking sheet.
- Spray with cooking spray.
- Bake 5-7 minutes or until crumbs are golden brown. emove from baking sheet, and cool.
- Increase oven temperature to 425 degrees.
- Combine bread crumbs, 1/4 cup parmesan cheese, salt and pepper in a shallow dish, and set aside.
- Pour egg beaters into second shallow dish and set aside.
- Spray baking rack with cooking spray, and place on baking sheet, and set aside.
- Dip each chicken breasts in egg beaters, then coat with seasoned bread crumbs. lace on baking rack, and lightly spray chicken with cooking spray.
- Bake for 20 minutes or until chicken reaches an internal temperature of 165 degrees.
- Top each chicken breasts with 2 tablespoons of spaghetti sauce, and 2 teaspoons cheese.
- Bake for 5 minutes, or until cheese melts.
- Heat remaining spaghetti sauce in large saucepan over medium-high heat for 2-3 minutes, or until hot.
- Add spinach and cook 2 minutes, or until spinach wilts.
- Add cooked spaghetti, and toss to coat with sauce.
- Continue heating until hot.
- PLace spaghetti mixture on serving platter, and top with chicken.
- Serve immediately.

- Heat the olive oil in a large skillet over medium heat. Season the chopped chicken with sea salt, freshly cracked pepper, and garlic powder, to taste. Add the chicken to the skillet and cook, stirring occasionally, for 5-6 minutes.
- Prepare the pasta in salted water per instructions. Angel hair usually takes 3-5 minutes to cook. Drain once it has finished cooking.
- Remove the cooked chicken from the skillet and place into a bowl. Add a drizzle more of olive oil to the skillet then add the artichoke hearts, grape tomatoes, capers, and a dash of crushed red pepper flakes. Cook , stirring occasionally for 2 minutes. Add the minced garlic, and cook, stirring constantly for 1 minute. Add the chicken broth and lemon juice to the skillet then season with sea salt and freshly cracked pepper, to taste. Cook for 2 minutes then add the cooked and drained angel hair pasta to the pan along with most of the parsley. Toss until evenly coated with the sauce. Pour into a serving bowl then top with feta cheese and the remaining chopped parsley. Serve immediately. Enjoy.
