Whole Grain Morning Glory Muffins image

Whole wheat pastry flour combines with apples, raisins, carrots, coconut and walnuts in these nutritious and satisfying muffins.

1 1/3 cup whole wheat pastry flour
1/2 cup sugar
1/4 cup packed brown sugar
1 1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
2 cage-free eggs
2/3 cup safflower oil
1 teaspoon pure vanilla extract
1 Fuji or Granny Smith apple, cored, peeled and diced
1/2 cup seedless raisins
1 large carrot, grated
1/2 cup toasted walnuts, finely chopped
1/4 cup plus 2 tablespoons dried flaked unsweetened coconut, divided

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix together flour, sugar, brown sugar, baking soda, cinnamon and salt; break up any brown sugar lumps with your fingers or a wooden spoon.
  • In a separate bowl, whisk together eggs, oil and vanilla, then add to flour mixture and stir just until combined.
  • Add apples, raisins, carrots, walnuts and ¼ cup of the coconut and stir gently until well combined.
  • Spoon batter into 16 paper-lined muffin tins, filling each about ⅔ full.
  • Top evenly with remaining 2 tablespoons coconut and bake until golden brown and a toothpick inserted into the center comes out clean, 25 to 30 minutes.

3/4 cup ground flax seeds
3/4 cup oatmeal
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 cup shredded carrot
1 cup finely chopped peeled apple
1/2 cup raisins
3/4 cup milk
2 eggs
1 teaspoon vanilla

Steps:

  • *groundflax seed (measure after grinding; coffee grinder is good for grinding flax seed) Preheat oven to 375.
  • Lightly grease muffin tin.
  • Combine all ingredients.
  • Spoon batter into muffin tins about 3/4 full.
  • Bake for 15-20 minutes.
  • Makes 12-14 muffins depending on size.

1 cup all-purpose flour
1 teaspoon salt
4 teaspoons baking powder
1 large egg
1 1/4 cups milk
1/4 cup oil

Steps:

  • Preheat oven to 350°.
  • Combine all ingredients in a large bowl.
  • Grease your large muffin pan.
  • Pour mixture into the muffin pan.
  • Bake for 25 minutes, or until a knife comes out clean.
  • Note: What I mean by 7 grain cereal is one of those 7, 10, or 15 grain hot cereals, OK?

Well sort of whole wheat...half and half, but these are pretty tasty, easy to make, healthy for the most part, and very filling. I came up with this on my own with experimentation. The very slight hint of sweetness combined with the nutty crunch flax flavor is good stuff. Try with some honey!

1 cup self rising flour (heaping)
1 cup king arthurs whole wheat flour (heaping)
1/4 cup brown sugar
1/2 cup flax seed
1 carrot (large)
1 apple
1 cup canola oil (olive oil works too)
2 tablespoons molasses (or honey)
1 cup skim milk

Steps:

  • -Preheat oven to 450.
  • -Mix flours, flax, and brown sugar together (to be really healthy, grind half of flax seed in coffee grinder.
  • -Finely grate carrot, grate apple, and mix in with dry mixture.
  • -Mix in oil and molasses (you can substitute honey for molasses).
  • -Add milk until you get a thick, but wet dough. May use less or more than a cup.
  • -Spray muffin tin and drop dough into tin.
  • -I like to sprinkle some extra flax seed on the top of each muffin to get them toasted and crunchy.
  • -Put in oven and bake for about 20 minutes or until brown on top.
  • -Top with a little honey -- enjoy!

These muffins are delicious. My very, very picky son loves them for breakfast and doesn't even realize they are full of good things for him. You can easily substitute the grains in the recipe for whatever you prefer or have on hand.

½ cup raisins
1 cup all-purpose flour
1 cup whole wheat flour
⅔ cup white sugar
2 teaspoons baking powder
½ teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
1 teaspoon ground allspice
½ cup nonfat dry milk powder
¼ cup toasted wheat germ
¼ cup wheat bran
3 tablespoons uncooked farina hot cereal (such as Cream of Wheat®)
3 egg whites
1 ¼ cups unsweetened applesauce
1 large carrot, peeled and shredded
⅓ cup vegetable oil
¼ cup bran cereal
3 tablespoons raw sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 18 muffin cups with paper liners.
  • In a small bowl, cover the raisins with water, and set aside to plump. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, allspice, dry milk powder, wheat bran, and farina cereal until thoroughly combined.
  • Drain water from the raisins. In a separate bowl, beat the egg whites until frothy, then mix in the drained raisins, applesauce, carrot, vegetable oil, and bran cereal. Pour the liquid ingredients into the flour mixture, and briefly mix just to moisten (do not overmix). Fill muffin cups about 2/3 full, and sprinkle each muffin with about 1/2 teaspoon of raw sugar.
  • Bake in the preheated oven until the muffins are set and the tops are golden brown, 25 to 30 minutes. A toothpick inserted into the center of a muffin should come out clean. Serve warm.

1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup honey or 1/2 cup 100% pure maple syrup, if making for an infant and avoiding honey
1 egg
1 teaspoon pure vanilla extract
1 cup unsweetened applesauce
3/4 cup carrot, shreds

Steps:

  • Preheat oven to 350 degrees F. Line muffin pan with paper, foil, or silicone liners, and set aside.
  • In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, and salt.
  • In a large bowl fitted with an electric whisk (or beaters), mix the butter, honey, egg, and vanilla together on medium speed. Turn down the speed and slowly add in the flour mixture until well-combined. The batter will be fairly thick.
  • 4. Using a spatula, carefully fold in applesauce and carrots. Divide batter evenly among the muffin cups. Bake for 22 to 24 minutes or until a toothpick comes out clean and muffins are beginning to turn golden brown on top.

2 egg whites
1 cup blueberries (fresh or frozen)

Steps:

  • Mix dry ingredients in a large bowl.
  • Make a well in the center of the mix and add wet ingredients.
  • Mix just until combined, then fold in berries.
  • Bake 18-20 minutes at 400.
