2 whole whole chickens (3 lb. each)
2 small lemons, cut in half
1 cup KRAFT Original Barbecue Sauce
1 tsp. dried Italian seasoning
4 cloves garlic, peeled

Steps:

  • Heat grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350ºF.
  • Trim and discard excess fat from chickens. Squeeze lemon juice into small bowl; reserve lemon halves. Add barbecue sauce and seasoning to juice; mix well. Place 2 each lemon halves and garlic cloves inside each chicken cavity.
  • Place chickens, breast-sides up, on grate over unlit area; cover. Grill 1-1/2 to 2 hours or until chicken is done (165°F), turning and brushing occasionally with sauce for the last 20 min. Remove and discard lemon halves and garlic from chickens before serving.

1 chicken, whole
Olive oil to taste
Salt and pepper to taste
Barbecue sauce to taste

Steps:

  • Heat grill to medium. Remove and discard the liver, gizzard, neck, etc from the inside cavity of the chicken. Rinse inside and outside of chicken with cold water. Place chicken on a cutting board, breast side down. Using kitchen shears, cut along each side of the backbone of the chicken. Discard backbone. Open and press chicken flat. If necessary, cut with a sharp knife a bit at the very top of the middle of the breastbone to help the chicken lay more flat. Rinse chicken again. Rub inside with some olive oil, and season with salt and pepper. Turn the chicken over, and also rub the top of the skin with some olive oil, and season with salt and pepper. Place chicken, skin side down, on the grill. Grill until skin has grill marks, is a golden brown and nicely charred. When it's reached this, turn the chicken over carefully. Continue to cook until internal temperature is 155°F. Brush with barbecue sauce. If you wish, you can also flip the chicken again and apply barbecue sauce to the underside, and flip back again. Remove from grill to a plate. Allow to rest for 10 minutes and then cut into serving pieces.

2 small lemons, juice and zest of, reserving lemon halves
1/2 cup barbecue sauce
1 teaspoon italian seasoning
2 -4 garlic cloves, peeled
1 (3 lb) roasting chickens
1 (16 ounce) packaged seasoned stuffing mix

Steps:

  • Preheat oven to 350 degrees.
  • Add lemon juice and 1/2 teaspoon zest to barbecue sauce; mix well.
  • Place chicken in baking pan, place 2 of the lemon halves and garlic cloves inside the cavity of the chicken, rub the outside of the chicken with remaining lemon halves and discard; tie the legs together using kitchen twine.
  • Bake for 1 hour 45 minutes or until chicken is cooked through. The internal temperature should be 165 degrees F, basting with the sauce mixture every 5 minutes during the last 20 minutes of baking.
  • Sprinkle with reserved lemon peel during the last 5 minutes.
  • Prepare the stuffing mix as directed on package, place stuffing in oven during last 30 minutes of chicken baking time.
  • Remove and discard lemon halves and garlic cloves from chicken cavity; skim fat from drippings in baking pan; serve drippings with chicken and stuffing.

2 cups ketchup
1 cup store-bought BBQ sauce
1/2 cup light brown sugar
1/2 cup rice wine vinegar
1/4 cup Worcestershire sauce
2 tablespoons stone ground mustard
1 teaspoon BBQ rub or Cajun seasoning
2 whole chickens, about 3 pounds each
1/4 cup vegetable oil
2 tablespoons salt
1 tablespoon white pepper
1 teaspoon cumin

Steps:

  • For the sauce: In a bowl whisk together the ketchup, BBQ sauce, sugar, vinegar, Worcestershire sauce, mustard and BBQ rub seasoning. Then pour the sauce in a thick-bottomed saucepan over low heat. Cook to blend the flavors, 10 to 15 minutes. Once warmed, remove from the heat and hold in a warm spot.
  • For the chicken: Preheat the oven to 300 degrees F. Drizzle both sides of each chicken with the oil. Next, mix the salt, pepper and cumin in a bowl, and then sprinkle over both sides of each chicken. Place the chicken, breast-side up, on a flat cookie sheet and cook until the internal temperature reaches 165 degrees F, 30 to 35 minutes.
  • When fully cooked, remove the chickens and lightly glaze the skin with the BBQ sauce. Return the chickens to the oven, allowing the BBQ sauce to glaze the birds, 10 to 12 minutes.
  • Serve with a choice of sides.
