WHITE TRUFFLE POPCORN
Popcorn gets elevated with rich and earthy truffle oil. Vegan and Gluten-Free!

Steps:
- Add the 3 tablespoons of vegetable oil to a large pot with a lid. Heat at medium high heat until the oil is watery and coats the entire base of the pot.
- Add the corn kernels and cover the pot with the lid. Shake the pot every 5-10 seconds, so that the kernels do not burn. You'll begin to hear them popping - remove pot from heat when the popping slows down.
- Let the pot rest about 30 seconds before removing the lid, as some kernels may still pop.
- If using margarine, heat it in a small bowl in the microwave for 30 seconds, or until melted.
- Add the truffle oil to the margarine and mix together. Pour mixture onto the popcorn and shake it for even distribution. Season with salt and serve.

- Mix the truffle oil, parsley, and Parmesan cheese in a heat-safe bowl.
- Place unopened package of popcorn into center of microwave oven; cook on High power until the bag fills with popped corn and the pops occur about 2 seconds apart (1 1/2 to 4 minutes, depending on oven's power). Open hot bag carefully and pour into bowl. Toss with truffle oil mixture; season to taste with sea salt.

- 1. In a cup or small bowl, mix together the unpopped popcorn and oil. Pour the coated corn into a brown paper lunch sack, and sprinkle in the salt. Fold the top of the bag over twice to seal in the ingredients. Cook in the microwave at full power for 2½ to 3 minutes, or until you hear pauses of about 2 seconds between pops. Carefully open the bag to avoid steam, and pour into a large bowl. -- OR -- Pop corn in an air popper per instructions.
- 2. Spritz the popcorn with butter flavor PAM and white truffle oil, in desired amounts. Start with TINY amounts and toss the popcorn as you spray. A little bit of the truffle oil goes a LONG way... Toss the popcorn with additional salt or some grated Parmesan cheese after the oil is sprayed on, if desired. (Tip - One of those small plastic squirt bottles found in the "vacation miniature toiletries" section works just as well as a genuine oil mist sprayer... but it should be opaque and not clear if you store the truffle oil in it for a time).

- In a large, 6 or 7 quart heavy pot, add the 2 tablespoons of canola oil and 1 teaspoon of truffle oil, along with 3 popcorn kernels. Turn heat to high (I usually set it to 9 out of 10)
- When the 3 test kernels have popped, add the rest of the popcorn and cover. Shake the pan as needed, and popcorn should start popping almost right away. When popping slows down and there is 1-2 seconds between pops, remove from heat and pour the popcorn into a large bowl.
- Wipe out the pan to remove any crumbs, do NOT return the pan to heat. Add the other teaspoon of truffle oil to the pan, and the butter. Using the residual heat in the pan, melt the butter, swirling it so that it doesn't burn.
- As soon as butter is melted, pour half of it over the popcorn and sprinkle with half of the truffle salt. Toss the popcorn with your hands to distribute the butter. Then pour on the rest of the butter and sprinkle with the rest of the salt, toss again. Add more truffle salt if needed/to taste. Serve immediately.

- In a heavy bottom saucepan, heat 3 popcorn kernels and the oil on medium high heat. Cover with a lid. Wait until the 3 kernels pop and immediately remove the saucepan from the heat.
- Add the rest of the popcorn kernels, the sugar, and the black pepper. Stir it so that the kernels are coated evenly with the sugar and pepper.
