ALFREDO SAUCE
This Alfredo Sauce is my version of a classic white cream sauce! Just 20 minutes to make the richest, creamiest, pasta, pizza, or dipping sauce. So versatile, easy, and yummy!

Steps:
- Melt butter in a non-stick straight edged sauté pan (or similar pan) over medium low heat.*
- Once melted, add in garlic, Italian seasoning, dried basil, salt, and pepper and cook, whisking constantly, for 30 seconds.
- Slowly whisk in the heavy cream.
- Bring to a simmer, and simmer for 5 minutes, whisking constantly.
- Reduce the heat to low, and whisk in the cheese, little by little, until fully melted. Do this slowly to avoid clumping and graininess.
- Taste and re-season, if desired.
- Serve with hot pasta, as a dipping sauce, or as a base for a pizza, etc.

SEAFOOD ALFREDO SAUCE
Creamy and delicious! This is very quick to make since the shrimp and crab is already cooked. Bay scallops are so small that they cook in two minutes. You can make this with just shrimp or with any combination of the seafood mentioned in the recipe. I sometimes add about 1/4 cup dry white wine before adding the milk and half and half. I let it cook for about 2-3 minutes and then proceed. This dish can be served over pasta and also over rice.

Steps:
- Melt butter in heavy or non-stick pan.
- Add flour and stir for about 2 minutes. Add all spices. Don't let it color.
- Whisk in half and half and milk. Heat over a low-medium flame until it is thickened and very hot. Don't let it boil. This step usually takes 10 minutes.
- Add parmesan cheese, stir and take off flame.
- Immediately add raw scallops and stir. Let stand 2 minutes. It cooks that fast.
- Stir in cooked shrimp and crab. Taste for seasoning. Serve.
BASIC ITALIAN WHITE CREAM SAUCE (LIKE AN ALFREDO OR BECHAMEL)
This recipe is for a basic Italian White Cream Sauce (like an Alfredo or bechamel) for Pasta, Chicken, Shrimp, etc. You can add other ingredients to suit your liking, this is the basic version - goes great over Fettuccine or Tortellini... you can also add 1 teaspoon oregano or parsley to flavor. If you throw in some bacon, carmelized onion & a handful of frozen peas & serve over pappardelle it is absolutely fabulous!

- Melt butter in small saucepan cooking over low to medium heat, stirring for about 5 minutes.
- Add flour and stir until the butter and flour are well combined. Pour in cream & remaining ingredients, stirring constantly as it thickens.
- Add more cream or flour depending on desired consistency.

WHITE WINE GARLIC ALFREDO SAUCE
Couldn't seem to find a recipe I liked so I made my own and thus far all my friends have enjoyed it, hope you do too. Also its really important to use freshly shredded/grated parmesan, nothing pre-shredded/grated will melt correctly and it will be grainy and lumpy.

Steps:
- 1. In medium sauce pan heat heavy whipping cream over medium low heat stirring occationally. (Do NOT let it boil.) Depending on your stove 5-15 minutes.
- 2. Add pressed garlic and mix well, slowly add parmesan cheese while constantly stirring.
- 3. Slowly mix in white wine while stirring, then add salt and pepper to taste. Reduce heat a little let sit stirring occassionally for 6-8 minutes.
- 4. Let cool slightly and serve over fettucini or linguini.
- **I like to add 1 lb. grilled chicken and 2 cups steamed broccoli to the sauce before I serve it. Also I top with extra parmesan cheese. But it's of course optional!
WHITE SAUCE ALFREDO SEAFOOD THING
Amazing delicious and so simple to make. You can add a few shrimp or crab or lobster or squid or scallops or all of the stuff mentioned or some kind of white seafood (no swimming fish with fins)
