I am posting this recipe, by request. It is a very nice non-tomato sauce vegetarian lasagna. Not gluten-free!

2 small zucchini (about 8 oz. each)
1/2 bunch broccoli
1 bunch spinach leaves (firmly packed)
2 tablespoons butter (or margarine)
1/2 teaspoon dried oregano leaves
1/2 teaspoon salt (divided)
15 ounces ricotta cheese (can be part skim)
2 eggs
12 lasagna noodles (about)
3 tablespoons butter (or margarine)
1/4 cup flour
2 1/2 cups milk
1/4 cup parmesan cheese
8 ounces mozzarella cheese (slices)

Steps:

  • Dice zucchini. Coarsely chop broccoli and spinach.
  • In a nonstick 12 -inch skillet over medium heat, melt butter (or margarine), cook zucchini, broccoli, oregano, and 1/4 teaspoon of salt, stirring frequently, until vegetables are tender-crisp, about 5 minutes. Add Spinach and toss until wilted. remove skillet from heat.
  • In medium bowl, with fork, mix ricotta and eggs; set aside.
  • Prepare lasagna noodles as label directs. Drain.
  • Meanwhile, preheat oven to 350 degrees F.
  • In 2-quart saucepan over medium heat, melt 3 tablespoons margarine (or butter). Stir in flour and 1/4 teaspoon salt until smooth. Gradually stir in milk; cook, stirring constantly until sauce comes to a boil and thickens. Remove saucepan from heat; stir in Parmesan cheese.
  • In13-by-9-inch glass baking dish, layer half of the prepared lasagna noodles, half of the ricotta mixture, half of the vegetable mixture, and half of the mozzarella. Top with half of the sauce, then with the remaining noodles, ricotta, and vegetable mixture. Spoon remaining sauce over vegetable layer; arrange remaining mozzarella on top.
  • Bake lasagna 40 to 45 minutes until hot and bubbly. Let lasagna stand 10 minutes for easier serving.

3 red peppers, cut into large chunks
2 aubergines, cut into ½ cm thick slices
8 tbsp olive oil, plus extra for the dish
½ quantity tomato sauce (see below)
300g fresh lasagne sheets
½ quantity white sauce (see below)
125g ball mozzarella (or vegetarian alternative)
handful of cherry tomatoes, halved

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Lightly oil two large baking trays and add the peppers and aubergines. Toss with the olive oil, season well, then roast for 25 mins until lightly browned.
  • Reduce the oven to 180C/160C fan/gas 4. Lightly oil a 30 x 20cm ovenproof dish. Arrange a layer of the vegetables on the bottom, then pour over a third of the tomato sauce. Top with a layer of lasagne sheets, then drizzle over a quarter of the white sauce. Repeat until you have three layers of pasta.
  • Spoon the remaining white sauce over the pasta, making sure the whole surface is covered. Scatter over the mozzarella and cherry tomatoes. Bake for 45 mins until bubbling and golden.

1 tablespoon extra-virgin olive oil
1 cup chopped yellow onion
2 large cloves garlic, finely chopped
3 (10 ounce) packages frozen mixed vegetables (such as green beans, carrots, zucchini and yellow squash)
¼ cup chopped fresh basil, plus more for garnish
3 tablespoons unsalted butter
6 tablespoons all-purpose flour
3 ½ cups whole milk
½ cup grated Parmesan cheese
¼ teaspoon salt
1 (9 ounce) package no-boil lasagna noodles
2 (12 ounce) packages frozen butternut squash puree, thawed
4 cups shredded Italian cheese blend

Steps:

  • Preheat oven to 375°F. Lightly coat a 9-by-13-inch baking dish with cooking spray.
  • Heat oil in a medium skillet over medium-high heat. Add onion and cook, stirring often, until just tender, about 5 minutes. Add garlic and cook, stirring often, for 1 minute. Transfer the onion and garlic to a large bowl; stir in frozen vegetables and basil.
  • Melt butter in the skillet over medium-high heat. Add flour and whisk to combine. Cook, whisking, for 30 seconds. Gradually add milk; cook, whisking constantly, until the mixture thickens, 2 to 3 minutes. Add Parmesan and salt; whisk until smooth. Remove from heat.
  • Spread 1/2 cup of the cheese sauce on the bottom of the prepared baking dish. Layer on 3 lasagna noodles, evenly spacing the noodles crosswise in the dish. (The noodles will not cover the bottom of the dish but will expand when baking.) Top the noodles evenly with 3 cups vegetable mixture, 3/4 cup cheese sauce and 3/4 cup shredded cheese. Layer 3 lasagna noodles over the cheese; spread half the squash over the noodles and sprinkle with 3/4 cup cheese. Repeat the layers once, starting with noodles and ending with squash. Sprinkle with 3/4 cup cheese. Layer with the remaining 3 lasagna noodles; spread the remaining cheese sauce over the noodles and sprinkle with the remaining cheese.
  • Lightly coat a sheet of foil with cooking spray; cover the baking dish coated-side down. Bake for 30 minutes. Uncover and bake until golden brown and bubbly, about 15 minutes more. Let stand for 15 minutes before serving. Sprinkle with basil, if desired.

2 zucchini, sliced
2 green bell peppers, cut in 1-inch pieces
1 (8 ounce) package sliced fresh mushrooms
1 onion, cut into 8 wedges
1 tablespoon chopped fresh basil
1 clove garlic, pressed
½ teaspoon salt
¼ teaspoon ground black pepper
12 lasagna noodles
2 (28 ounce) jars pasta sauce
1 (16 ounce) package shredded mozzarella cheese
1 cup freshly shredded Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a large baking sheet with cooking spray.
  • Arrange zucchini, bell peppers, mushrooms, and onion wedges on prepared baking sheet. Scatter basil and garlic over vegetables and spray with cooking spray. Season with salt and black pepper.
  • Bake in preheated oven until vegetables are lightly browned and tender, 10 to 25 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain.
  • Bring pasta sauce to a simmer in a saucepan over medium-high heat. Mix mozzarella cheese and Parmesan cheese in a bowl.
  • Pour about 1/3 cup pasta sauce in a 9x13-inch baking dish. Layer 3 lasagna noodles over sauce. Spread about of 1/4 the roasted vegetables over noodles and top with about 1/4 the sauce. Sprinkle 1/4 of the mozzarella-Parmesan cheese mixture over the sauce. Repeat layers 3 more times, ending with the cheese.
  • Bake in preheated oven until cheese is melted and sauce is bubbly, 20 to 25 minutes. Allow lasagna to rest for 10 minutes before slicing.

2 medium zucchini, trimmed and cut lengthwise into 1/4-inch-thick slices
2 red bell peppers, quartered lengthwise
1/2 teaspoon black pepper
1 3/4 teaspoons salt
2 garlic cloves, minced
3 tablespoons unsalted butter
1/4 cup all-purpose flour
3 1/2 cups whole milk
3 ounces Italian Fontina, coarsely grated (1 cup)
1 ounces finely grated Parmigiano-Reggiano (1/2 cup)
3 tablespoons finely chopped fresh basil
5 (6 3/4- by 3 1/2-inch) or 10 (7- by 6 3/4-inch) no-boil lasagne noodles

Steps:

  • Put oven racks in upper and lower thirds of oven and preheat oven to 425°F.
  • Cut 3 (1/3-inch-thick) lengthwise slices from center of eggplant and reserve remainder for another use. Brush 2 large shallow baking pans with 1 tablespoon oil total, then arrange eggplant, zucchini, and bell peppers in 1 layer in pans. Brush vegetables with remaining 2 tablespoons oil and sprinkle with pepper and 1 1/4 teaspoons salt. Roast, switching position of pans halfway through roasting, until eggplant and zucchini are browned and tender, 15 to 20 minutes total, then transfer eggplant and zucchini to a plate. Stir in cheeses, basil, and remaining 1/2 teaspoon salt.
  • Soak noodles in hot water just until pliable, 8 to 10 minutes.
  • Spread 2/3 cup sauce in an 8-inch square baking dish. Drain 1 large noodle or 2 small noodles on a clean kitchen towel (not terry cloth) and put over sauce in dish. Top with half of zucchini in 1 layer, 1/2 cup sauce, and another noodle (or 2). Make another layer with all of eggplant, 1/2 cup sauce, and another noodle (or 2), and another with all of bell peppers, 1/2 cup sauce, and another noodle (or 2).   • Bake until golden and bubbling, 25 to 30 minutes. Let stand in pan on a rack 20 minutes.

2 medium eggplants
2 small zucchini's
4 small tomatoes
8 clove garlic
1/4 c olive oil
1 1/2 tsp kosher salt & 1 tsp pepper
1/4 c parmesan cheese
CHEESE FILLING
15 oz (1 container) ricotta cheese *i used part skim*
1/4 c fresh parsley chopped
1/4 c chicken broth
1/4 c parmesan cheese
1 tsp salt
pinch of pepper
BECHAMEL SAUCE
3 c milk
5 Tbsp flour
2 1/2 Tbsp butter or margarine
1/3 c parmesan cheese
1/2 tsp nutmeg
pinch of pepper
ADDITIONAL INGREDIENTS
1 c roasted red peppers in olive oil *drained*
1 can(s) chicken broth (14.5 oz)
1 small onion diced
2 Tbsp olive oil
1 pkg lasagna noodles, uncooked
3 Tbsp chopped fresh parsley
2 c mozzarella cheese, low-fat
1/4 c white wine

Steps:

  • 1. Preheat oven to 325F. Set the parmesan to the side to use later. On a baking sheet wrapped with aluminum foil. Lay your cleaned veggies. Score the eggplant vertically to insert 4 cloves of garlic into the eggplants. Drizzle with olive oil, kosher salt and pepper.
  • 2. Bake 1hr to 1hr and 15 minutes till veggies are nicely roasted and a little charred.
  • 3. While veggies are roasting, you can prepare your cheese filling. In a small bowl, add your ricotta, your parmesan cheese, parsley, salt & pepper. Start stirring, the mixture will be thick. Add 1/4 c of chicken broth, and stir thoroughly. Chill till ready to use.
  • 4. Meanwhile, dice your onion and saute it with 2 tbls of olive oil. Just till tender and starting to carmelize, set aside. Once the veggies are roasted, let them cool till able to handle. In a food processor, add all the veggies, as is. The sauteed onion, 1 c of roasted red peppers, 1/4 c of wine, 1/4 c of chicken broth and parsley. Whizz in processor. Add the 1/4 c of parmesan cheese, and whizz for a more seconds.
  • 5. In a 13 x 9" pan, spray with nonstick spray. Lay 4 noodles over bottom. Add veggie puree.
  • 6. Dallop the ricotta mixture over the veggie puree.
  • 7. Sprinkle with mozz. cheese.
  • 8. Lay another layer of noodles over and continue to layer until you reach the top. (I got 3 layers). Pour the remaining can of chicken broth all over the lasagna set aside.
  • 9. In a saucepan prepare you bechamel sauce. Melt your butter, add your flour, cook it for about 1 minute or so, add your milk and whisking constantly, continue to whisk till mixture has thickened. Turn off heat, add your parmesan cheese and your pepper. Pour over lasagna and spread. Sprinkle your nutmeg. Wrap tightly with aluminum foil. Set on a cookie sheet and bake for 45 minutes. Uncover and bake for another 15 minutes.
  • 10. Let cool about 10 minutes cut into squares of your choice. Enjoy!!

4 lasagna noodles, cooked and drained
2 medium carrots, grated
1 small zucchini, grated
1 small sweet red pepper, diced

1/4 cup all-purpose flour
2 cups whole milk

  • Cut 3 noodles widthwise in half. Cut remaining noodle widthwise into thirds. In a skillet, saute the carrots, zucchini, red pepper, mushrooms and garlic in oil until tender; set aside. In a saucepan, melt butter. Stir in flour until smooth; gradually add the milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Add the Parmesan cheese, basil, onion salt and garlic powder. In a bowl, combine the ricotta, egg, cheese and seasoning., Spread 1/4 cup white sauce in an ungreased 7x5x1-1/2-in. (3 cup) baking dish. 3 shallots
2 garlic cloves
½ teaspoon sugar
3 medium carrots (the total weight of about 200 g/ 7 oz (See note 1 and 2))
2 red or yellow bell peppers
1 medium zucchini
½ broccoli (or use only broccoli stems if you have leftovers)
1 1/3 cup frozen peas
3 cup chopped cremini mushrooms (optional (See note 2))
4 tablespoons olive oil (divided)
2 cans chopped tomatoes (400 g/ 14 oz each)
1/2 cup water
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried rosemary
1 tablespoon lemon juice
1/4 cup butter
1/2 cup all-purpose flour
3 cups milk
9 no-boil lasagna sheets (See note 4)
2 mozzarella balls (125 g/ 4.4 oz each)
1 cup freshly grated hard cheese (Parmesan or vegetarian hard cheese)
a few gratings of nutmeg
fine sea salt and pepper

Steps:

  • Peel and finely chop the shallots and the garlic. Keep separately.
  • Clean the vegetables. Cut the carrots, bell peppers, zucchini into small cubes. Set aside in a bowl. Divide the broccoli into small florets and chop the broccoli stem into small cubes as well.If using mushrooms, wipe them clean with kitchen paper and slice them thinly. Set aside separated from the other vegetables.
  • Defrost the peas.
  • Cheese: Chop the mozzarella into cubes and grate the Parmesan. Set aside separately.
  • Preheat the oven to 180 degrees Celsius/ 360 degrees Fahrenheit.
  • Saute: Heat 2 tablespoons of olive oil in a large pan. Cook the shallots until translucent, about 2-3 minutes. Add the garlic and stir for 1 minute. Add the sugar and stir for another minute or until slightly caramelized.
  • Add the chopped vegetables, except the mushrooms, and cook for about 8 minutes or until softer. Stir well a few times in between.
  • Simmer: Add the chopped tomatoes, water, dried herbs, and lemon juice. Stir well, bring to a boil and simmer the sauce for about 10 minutes until slightly thickened.
  • Fry mushrooms: In the meantime, cook the mushrooms if using. Heat the remaining oil in a pan and fry the mushrooms until golden and until all the juices they have released are evaporated.
  • Melt the butter in a small saucepan. Sprinkle the flour on top and stir for 1 or 2 minutes until lightly golden. Slowly start adding the milk while whisking all the time to avoid the formation of clumps.
  • Let the sauce simmer for 2 or 3 minutes while whisking or stirring continuously. Adjust the taste with nutmeg, salt, and pepper.
  • Butter a rectangular casserole dish of about 30x20 cm/ 12x 8 inches. You should have 3 layers of noodles, and you should finish with a layer of Parmesan.
  • White sauce: Place a few tablespoons of white sauce in the prepared casserole dish. Spread them all over the bottom of the dish.
  • Pasta sheets: Add some lasagna sheets. I can use 3 sheets for each layer, but use as many as they fit in one layer without overlapping.
  • Vegetable sauce: Cover with 1/3 of the vegetable sauce.
  • Cheese: Add ½ of the mozzarella and 1/3 of the hard cheese on top. Cover with white sauce.
  • Repeat twice. End with the last layer of grated hard cheese.
  • Bake the lasagna in the preheated oven for 30-40 minutes or until bubbly and golden. Check if the noodles are cooked through by inserting a fork into the lasagna.
  • Rest for about 10 minutes, cut into 12 squares, and serve with a green salad.
