WHITE PEACH SORBET
This tastes exactly like a white peach!

Steps:
- Peel white peaches, leaving a little bit of peach skin to add texture and color. Cut chunks from peaches into a bowl and discard pits. Add lemon juice.
- Puree peaches and lemon juice with an immersion blender until smooth. Stir in sugar to taste. Blend again. Chill peach mixture in refrigerator for 1 hour.
- Pour peach mixture into an ice cream freezer and freeze according to manufacturer's instructions.

- Add peaches to a blender; blend until smooth. Measure out 1 1/2 cups peach puree into a bowl. Immediately stir in lemon juice and refrigerate.
- Combine water and sugar in a small saucepan and bring to a boil. Stir until sugar is dissolved, about 1 minute. Remove from stove and cool to room temperature. Refrigerate simple syrup until chilled, about 1 hour.
- Pour chilled peach puree and simple syrup into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

PEACH AND RASPBERRY SORBET
This is a fabulously easy and elegant sorbet that you absolutely don't need an ice cream freezer for. This also works well with plums, any kind of berry and mangos.

- Slice the peaches and lay single layer on a cookie sheet covered with parchment or plastic wrap.
- Place the raspberries separate from the peaches on the same cookie sheet. Freeze 3 hours or overnight.
- Remove from freezer and let sit for 10 minutes.
- Using a small amount of the peaches at a time (maybe 6 or 7 slices) drop them in a food processor fitted with a sharp blade and process. You will need to stop it occasionally and scrape it down, be patient, until it reaches sorbet consistency.
- For each batch add a bit of sugar to taste (I usually use about 1 tbsp, depends on how ripe the peaches are).
- As you finish each batch, place it into a bowl and put in the freezer (mix each batch into the subsequent batch.).
- When you are done processing the peaches, pour all the raspberries into the processor and 2 tbsp sugar, process as above.
- Dump the raspberries on top of the peach sorbet and fold in with a spatula.
- Drizzle with a little chambord or limoncello if desired.

- Blend all ingredients in a food processor or high-speed blender until thoroughly combined.
- Pour into a rectangular loaf pan and smooth into an even layer.
- Freeze for 2 hours, or until frozen but still a little soft for scooping. (If freezing overnight, cover with a lid or plastic wrap, but let it sit out at room temperature for about 5-10 minutes before scooping.)
- Scoop into a bowl.

WHITE PEACH SORBET
Steps:
- Cut the peaches in half and pit them. Plop them into a blender and puree until smooth and homogenous, 1 to 3 minutes. Pass the puree through a fine-mesh sieve into a medium bowl. Use a ladle or spoon to press on the dregs of the puree to extract as much juice as possible; you should only be discarding a few spoonfuls worth of solids.
- Bloom the gelatin (see page 29).
- Warm a little bit of the peach puree and whisk in the gelatin to dissolve. Whisk in the remaining peach puree, the glucose, salt, and citric acid until everything is fully dissolved and incorporated.
- Pour the mixture into your ice cream machine and freeze according to the manufacturer's instructions. The sorbet is best spun just before serving or using, but it will keep in an airtight container in the freezer for up to 2 weeks.

- Powdered gelatin can be substituted for the sheet gelatin: use 1/2 teaspoon. In a pinch, substitute 35 g (2 tablespoons) corn syrup for the glucose.
- With all things fresh and seasonal, it's always important to taste, taste, taste. Make the sorbet base to your liking with more glucose, salt, or citric acid (see page 26).
- Instead of a whisk, use a hand blender to mix the sorbet base.
WHITE PEACH SGROPPINO
The Sgroppino is an old between-course palate cleanser, dessert or aperitif drink that marries prosecco with sorbet and a touch of vodka. It's a simple enough affair once you have the sorbet, in this case made from white peach puree. You very gently whisk the spirit (in this case, peach brandy or peach vodka) and wine (in this case, prosecco) into the sorbet and turn it into a glass, to be consumed, ideally, quickly, while it still retains a bit of the semifreddo intact.

- For nectarine sorbet:
- Place all ingredients in large bowl; toss to coat. Cover and refrigerate overnight.
- Puree fruit mixture in processor until smooth. Strain, pressing on solids in strainer; discard solids. Process puree in ice cream maker according to manufacturer's instructions. Transfer to container; cover and freeze until solid, about 4 hours.
- DO AHEAD Can be made 3 days ahead. Keep frozen.
- For white peach ice cream:
- Place peaches, 3/4 cup sugar, corn syrup, and ascorbic acid in large bowl; cover and refrigerate overnight.
- Puree fruit in processor until smooth. Strain, pressing on solids in strainer; discard solids. Cover and chill until ready to use.
- Whisk yolks in large bowl. Bring cream and remaining 3 tablespoons sugar to boil in heavy medium saucepan, stirring until sugar dissolves. Gradually whisk hot cream mixture into yolks; return mixture to same pan. Stir constantly over medium heat until custard thickens enough to leave path on back of spoon when finger is drawn across, about 5 minutes. Strain custard into medium metal bowl; place over large bowl of ice water and stir frequently until custard is cold. Whisk in peach puree. Process in ice cream maker according to manufacturer's instructions. Transfer to container. Cover and freeze at least 4 hours.
- DO AHEAD Can be made 3 days ahead. Keep frozen.
- Divide ice cream and sorbet among 8 bowls. Spoon sliced peaches and nectarines over and serve.
