CLASSIC LASAGNA WITH BéCHAMEL
This classic lasagna recipe is made with béchamel and bolognese for the perfect hearty and cheesy comfort food everyone will enjoy.

- Heat olive oil & butter in a large pot or Dutch oven over medium-high heat. Add the onion, carrots & celery and sauté until the onion is translucent about 5 minutes.
- Next, add in the 2 teaspoons of salt & minced garlic and cook for 1-2 more minutes. Add the ground turkey (or meat of choice) and cook for 10 minutes, until browned, crumbling and stirring occasionally.
- Pour in red wine (optional), deglaze the bottom of the pot & allow to cook for 4-5 minutes. Add the can of crushed tomatoes, salt, pepper, thyme & basil and stir to combine everything.
- Bring the sauce to a boil, cover, turn the heat down to medium-low & simmer for 45 minutes.
- Once the bolognese is done, cook lasagna noodles (if they need to be pre-boiled) according to package directions
- Melt butter in a small saucepan over medium heat. Once melted, whisk in the flour and cook for 2-3 minutes until it turns a light golden color. Slowly pour in the milk while whisking.
- Bring the sauce to a simmer and whisk regularly until it thickens, about 10 minutes.
- Turn off the heat and season with salt, pepper, garlic powder and nutmeg & then stir in parmesan cheese.
- Preheat the oven to 375° F. Using a 13x9 inch baking pan, spoon a thin layer (about 1/4-1/3 cup) of bolognese on the bottom of the pan.
- Add a layer of lasagna noodles. Spread a layer of the bolognese over the layer of noodles, then add a layer of béchamel (approximately 1/3 cup). Sprinkle about 2 tablespoons of parmesan cheese on top.
- Repeat the layers two to three more times until you run out of noodles. Layer the top layer of lasagna noodles with the last of the béchamel sauce, remaining parmesan cheese and 1/2 cup of mozzarella cheese.
- Bake uncovered for 45 minutes until golden and cheese is slightly bubbling. Let rest for at least 30 minutes and enjoy!

WHITE LASAGNA (LASAGNA BECHAMEL)
White lasagna can be made using a wide variety of fillings. This version uses bacon, leeks and spinach. No-boil lasagna noodles make assembling this lasagna a breeze. They tend to be thinner than regular dried lasagna noodles and therefore seem more like fresh homemade pasta in the final dish.

- 1. Heat the olive oil in a large skillet. Saute the sliced mushrooms and leeks until limp. Remove from the vegetables from the skillet and set aside.
- 2. Cut the bacon slices into small pieces by slicing crosswise at 1/4 inch intervals. In the still warm skillet, cook the bacon slowly, over medium low heat. Allow much of the fat to render out of the bacon as you prepare the rest of the ingredients. Do not cook too fast or the bacon will become hard. Remove the bacon pieces from the fat and drain on paper towels.
- 3. In a medium saucepan over medium heat, melt the butter. Add the flour and whisk to remove all lumps. Allow the flour to cook in the butter for about 3 minutes, whisking occasionally. Add the milk. Bring slowly to a simmer, stirring occasionally. Do not use too high a heat or the sauce will scorch. Season with the salt, pepper, and nutmeg. When the sauce is thickened to the consistency of heavy cream, remove from the heat.
- 4. In a large bowl, stir together the ricotta, spinach, eggs and pesto sauce.
- 5. In a rectangular glass baking dish, do the following layers (from bottom to top): -thin layer of sauce (bottom) -layer of noodles -optionally, another thin layer of sauce -optionally, another layer of noodles (at this point you should have used only 1/3 of the sauce) -the ricotta-spinach mixture -layer of noodles -layer of sauce -the leek and mushroom layer -the bacon (or other meat, poultry or fish) -layer of noodles -the remaining sauce -the shredded mozzarella -the grated parmesan (top)
- 6. Bake uncovered in a 350F oven for 1 hour or until the noodles are soft and the top is golden brown. The lasagna is best if covered with foil kept in the oven (turned off)for another 30 minutes before serving.
LASAGNA WITH BECHAMEL
I was watching "Inedible to Incredible" with my daughter and they made this lasagna - something like it anyway. The recipe on their website is missing items from the ingredients list and VERY heavy in prep. So I simplified and altered it heavily. My family loved it! Hard to believe lasagna can be this good and not loaded with cheese!

- Meat Sauce: Brown ground meat until no longer pink. Drain off fat, if any, and add the white wine. Cook, stirring bits up from the bottom, until the wine has evaporated. Add spaghetti sauce, bring to a simmer, move to back burner, turn heat to lowest setting, cover.
- Bechamel Sauce: In large saucepan, melt butter over medium heat. Whisk flour into butter and allow to cook for 2 minutes. Slowly add milk, continuing to whisk until the mixture is smooth and begins to thicken. Add salt, pepper and nutmeg, reduce heat to lowest setting, cover.
- Preheat oven to 400 degrees. Bring water to a boil and prepare dry noodles according to package directions. If using no-boil noodles, take boiling water off heat, add noodles, cover and let sit for 5 minutes before assembling lasagna. I left the no-boil noodles in the hot water during assembly, using tongs to grab, drain and layer noodles as I went.
- Assembly: Use 8x8, 7x11 or similar sized pan. Line bottom of pan with noodles, add about 1/2 cup of meat sauce, then layer about 1/2 cup of bechamel sauce on top. Repeat these layers until all the sauces are used up. Sprinkle the top layer of bechamel with parmesan cheese. Don't fret if there are leftover noodles.
- Bake 40 - 50 minutes or until cheese is golden brown.

- Pre heat the oven to 375 degrees.
- For the Bechmel sauce, bring the oil and butter to high heat and stir in the flour a little at a time to avoid clumping.
- Add the milk and, stirring continuously, the salt, pepper, shallots, garlic, and bay leaves.
- Simmer for about 5 minutes, stirring occasionally. Discard the bay leaves and reerve.
- For the lasagna, place the two flours and the salt in the bowl of a stand mixer. With the mixer on low speed, drizzle in the oil until a smooth dough ball is formed and pulls away from the side of the bowl. Add a little water OR a little flour if the dough is too dry OR too wet.
- Turn the dough out onto a floured board and divide in to 8 or 10 manageable hunks.
- Run each hunk through a pasta sheeter to create lasagna sheets approximately 5x9.
- Pour enough of the Bechemel into a 5x9 baking dish to just cover the bottom and lay a sheet of pasta on top of it.
- Cover this sheet with the chicken and cover that with another sheet of pasta.
- Spread the mushrooms on top and cover with another sheet.
- Continue the layering by adding the Manchego, pasta, Pecorino, pasta, Taco cheeses, and pasta.
- Cover the layers with the remaining Bechemel sauce and top with the bread crumbs.
- Bake for 25 minutes and let set up 10 minutes.

- Preheat oven to 375°F In a medium bowl, mix cheese layer ingredients together well and set aside.
- VEGETABLES: In a large skillet, heat the onion and garlic over medium heat. Sauté until the onions are translucent. Add the zucchini and mushrooms. Saute until the water has evaporated from the zucchini. Add sliced tomatoes, tomato paste and seasonings. Cook to reduce and thicken. Set aside.
- BECHAMEL: Melt the butter in a medium saucepan over medium heat. Whisk in the flour slowly until the roux, whisk or stir for about 1-2 minutes.
- Add the milk slowly while whisking constantly to avoid lumps. Cook over medium heat for about 5 minutes until the béchamel comes to a medium thickness (soft paste texture) Remove from heat and rest 2 minutes, stirring occasionally, to cool slightly. While whisking, slowly add the eggs a little at a time until incorporated well.
- ASSEMBLY: To a 9x13 pan, Spread a thin layer of Bechamel sauce into the bottom of the lasagna pan. Place a layer of cooked lasagna sheets, cut to fit into the pan if necessary. Add a thin layer of cheese mixture, then some spinach, followed with a vegetable layer. Repeat.
- Continue layering in this manner until ingredients are used up. Pour the remaining Bechamel sauce over top. Bake for 40-45 minutes or until bubbly. Let stand for 10-15 minutes before slicing.

- Cook lasagna according to package instructions; drain. Separate lasagna and lay out flat on wax paper or aluminum foil to prevent sticking as they cool.
- Combine fontina cheese, vegetables, 2-1/2 cups of ricotta and the egg.
- Assemble: Place layer of lasagna on bottom of 13 x 9" baking dish. Spread with 1/2 of the cheese mixture. Repeat layers, ending with lasagna.
- Sauce: Saute onions in oil until tender. Add flour and nutmeg. Stir in broth and remaining ricotta. Cook and stir until mixture comes to a boil. Spoon over lasagna.
- Sprinkle with Parmesan cheese.

- For Vegetables set colander in large bowl.
- Add eggplant; toss with generous amount of salt.
- Let stand for about 30 minutes.
- Heat oil in heavy large pot over medium-high heat.
- Add onion, celery and carrot.
- Sauté until onion is translucent, about 8 minutes.
- Add eggplant, potatoes, pepper, zucchini and broth.
- Cover and cook 5 minutes, stirring once.
- Uncover and cook until vegetables are tender, stirring often, about 10 minutes longer.

- Repeat layering one time.
- Top with 5 lasagna noodles.
- Spoon remaining sauce over noodles.
- Top with remaining Parmesan cheese (Can be made one day ahead and then cover and chill).
- Bake lasagna uncovered on center rack until sauce is bubbling, about 30 minutes (45 minutes if previously chilled).
