White Christmas candy is a great treat to make with kids. It is so easy to make! I've been making them since elementary school. Not only will it be beautiful on your cookie plate, it's addictingly delicious too!

WHITE CHRISTMAS CANDY
During the holiday season a few years back, my husband brought this wonderful candy home from work. The co-worker who'd shared it graciously included the recipe...and I've been making it ever since! Besides being perfect for family munching, this creamy, "Christmasy" candy is dandy for holiday craft shows and gift giving.

Steps:
- 1. In medium or large microwave save bowl, melt candies in medium-high heat til melted, stirring occaisionally. I use 80% heat, but not high as candy can scorch!)While melt, place candy canes or mints into large ziplock baggy and crush with a hammer on a cutting board. Crush to small pieces. Pour melted chocolate onto cookie sheet lined with parchment paper. Sprinkle with crushed candy. Lightly press and large pieces into the chocolate just a tiny bit so when it hardens, they don't fall off. Place in fridge to harden. Break into whatever sized pieces you like.

Steps:
- Melt the chocolate. Place the peppermint sticks in a heavy, locked plastic bag and crush them fine by whacking and then rolling them with a rolling pin. They should have about the same consistency as crushed ice. When the chocolate is melted, stir in the peppermint oil. Stir in all but 2 tablespoons of the crushed peppermint pieces and spread the mixture out on the cookie sheet, about 1/4-inch thick. It will not fill the pan completely. Sprinkle the reserved peppermint stick over the top. Let set at room temperature until hardened, about 2 hours. (Or, refrigerate for 30 minutes to harden more quickly.) Use your hands to break into pieces. Store in an airtight container for up to 2 weeks.

Steps:
- Tempering the chocolate for the bark requires a double boiler. If you don't have a double boiler, improvise one by using a saucepan and a stainless steel bowl: Nestle the bowl into the saucepan, allowing a few inches of space to remain between the bottom of the bowl and the bottom of the saucepan. Keep an extra bowl of a similar size on hand to transfer the chocolate for cooling. Rest the chocolate thermometer on a towel. Line a baking sheet with foil.
- Pour a couple inches of water into the bottom half of the double boiler and heat over medium-low to just below a simmer. Put the chocolate in the top half of the double boiler and set over the hot water. Slowly melt the chocolate, stirring with a heat-resistant rubber spatula. As the chocolate melts, check the temperature periodically to make sure it stays between 82 and 86 degrees F. If it starts to rise above this temperature, quickly transfer the chocolate to the bowl on reserve and stir briskly to reduce heat. Return bowl to double boiler to maintain heat between 82 and 86 degrees F.
- Remove bowl from over the hot water just before all the chocolate melts. Stir vigorously until the chocolate melts completely. Check temperature again. Stir in the oil until evenly blended. Chocolate is now tempered and ready to use. Keep within the 82 to 86 degree F range, returning bowl briefly to the double boiler if necessary.
- Quickly stir the fruit and nuts into the chocolate. Spread chocolate mixture out on the prepared baking sheet so it's about 1/2-inch thick and the fruit and nuts are coated. Set bark aside at room temperature to harden. Break into angled pieces. Store in an airtight container at room temperature.

Quick and easy. Instead of the cranberries you can make the 1/2 cup of fruit in to 1 cup, that is the original recipe, like the vegetable shortening. The yield will depend on how small or large you will cut the candy, so don't take any notice of what I have stated there.
