225g butter , softened
80g icing sugar
1 orange , zested and 1/2 juiced
300g self-raising flour
40g cocoa powder
175g dark milk or milk chocolate , chopped
40g chopped candied orange peel
5 strips sugared candied orange peel , each cut into 5 pieces
1-2 tbsp milk

Steps:

  • Beat the butter with an electric whisk until it is light and fluffy, then beat in the icing sugar a little at a time, adding the orange zest and 1 tbsp orange juice. Beat in the flour and cocoa a little at a time, then mix in the chocolate and orange peel and 1-2 tbsp milk.
  • Divide the mixture into two, pat each into a rough log shape on a piece of non-stick wrap or baking parchment, then use the wrap to help you shape each piece into a log around 15cm long. Chill until firm, about 2 hrs (see tip, below).
  • Heat the oven to 180C/160C fan/gas 4. Line two baking sheets. Cut ½cm-thick cookies from the dough and lay them on the baking sheets, leaving space so they can puff up and spread. Put a piece of sugared candied orange on top of each. Bake for 10-15 mins or until the cookies are puffed. Cool on the sheets for a couple of mins before sliding them onto a wire rack. Will keep for two to three days in an airtight container.

1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 large egg
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 cup dried cranberries, chopped
3/4 cup white chocolate chips
3/4 cup macadamia nuts, chopped

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheet with parchment paper.
  • With an electric mixer, cream the butter and both sugars together until smooth. Add the vanilla and egg, mixing well. Sift together the flour and baking soda. Spoon the flour mixture gradually into the creamed sugar mixture. Stir in the cranberries, white chocolate chips and macadamia nuts. Drop by heaping spoonfuls, about 2 tablespoons, onto the prepared baking sheets, 2 inches apart. Bake one sheet at a time until lightly golden on top and the edges are set, 12 to 15 minutes. Cool on the sheet about 5 minutes, and then transfer to a wire rack to cool completely. Store in an airtight container for up to 2 weeks.

1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). In a microwave-safe dish, melt the unsweetened chocolate, stirring frequently until smooth. Set aside.
  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the egg and vanilla. Combine the flour, baking powder, and salt; stir into the creamed mixture. Divide dough in two. Mix orange zest into one half, and melted chocolate into the other half. Use a bit of each mixture to form a ball about 1 inch in diameter.

  • Preheat oven to 350 degrees F (175 degrees C).

Steps:

  • PREHEAT oven to 350°F.
  • COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar and brown sugar in large mixer bowl until creamy. Beat in egg and orange peel. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.

1 1/2 cups quick-cooking oats (not instant)

Steps:

  • Preheat oven to 375°F.
  • In a large bowl using an electric mixer combine the sugar, brown sugar and butter; mix well to cream together.
  • Add in egg and vanilla extract and mix until combined.
  • Add the cinnamon, baking soda, salt and flour and mix well.
  • Fold in the oatmeal, dried cranberries and white chocolate chips- making sure that all ingredients are uniformly distributed.
  • Roll dough into 1-inch balls and place 3 inches apart onto a greased cookie sheet and bake at 375° for 10-12 minutes, just until the edges are lightly golden.
  • Remove from oven and let cool for 2-3 minutes on the cookie sheet, then transfer cookies to cooling rack.

2 1/4 cups all-purpose flour (500 ml)
1 cup packed light or dark brown sugar (250 ml)
1/2 cup granulated sugar (125 ml)
1 teaspoon baking soda (5 ml)
1/2 teaspoon fine salt (2 ml)
1 cup cold butter, cubed (250 ml)
1 teaspoon pure vanilla extract (5 ml)
2 large eggs
1 cup chopped white chocolate (250 ml)
1 cup macadamia nuts, roasted and chopped (250 ml)

Steps:

  • Preheat the oven to 350 degrees F. Line baking sheets with parchment paper.
  • In a food processor, mix the flour, brown sugar, sugar, baking soda and salt. Add the butter and pulse until coarse crumbs form. Add the vanilla and eggs and continue processing until creamy. Add the white chocolate and macadamia nuts.
  • Using a spoon or small ice cream scoop (about 1 1/2 tablespoons), place balls of dough on the prepared baking sheets, about 3 inches apart to allow for spreading.
  • Bake until light brown with set edges but still soft in the center, about 18 minutes, rotating the pans halfway through. Do NOT over bake these cookies.
  • Cool on the baking sheets about 5 minutes and then transfer to cooling racks to cool completely. Store in airtight container or plastic bag to stay soft and moist.

The first time I made this recipe I spilled 1/3 bottle of the orange extract in the bowl. The cookies were still great. If you are partial to orange flavor, add a full tablespoon instead of the recommended amount below.

1 cup granulated sugar
1 egg yolk
2 teaspoons finely shredded orange peel
2 cups all-purpose flour
1/4 cup orange marmalade
6 ounces bittersweet chocolate
1 tablespoon shortening

Steps:

  • In a large mixing bowl, beat butter with electric mixer on medium to high speed for 30 seconds. Add sugar. Beat until combined, scraping sides of the bowl occasionally. Beat in egg yolk and orange peel. Beat in as much flour as you can with the mixer. Stir in any remaining flour.
  • On a lightly floured surface, roll dough to 1/2 inch thickness. Using a 1 1/2-inch round cookie cutter, cut into rounds. Press your thumb into center and fill with 1/4 teaspoon orange marmalade.
  • Bake on parchment-lined baking sheets in a 375-degree oven for about 12 minutes or until edges are lightly browned. Transfer to a wire rack and let cool.   • 6. For glaze mix powdered sugar with orange juice a little at a time until the consisentcy is easy to drizzle onto the cookies. Makes approximately 3 dozen delicious cookies!

Steps:

  • Put the chocolate in a small microwave-safe bowl and microwave in 30-second intervals, stirring, until melted, about 2 minutes. Let cool slightly. Whisk the flour, baking powder and salt in a medium bowl.
  • Beat the butter and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Beat in the egg until smooth.   • Pre-heat the oven to 170°C/gas mark 3 and line a large baking sheet. Melt the dark chocolate in a microwave in 30 second blasts or over a pan of barely simmering water until melted. Remove from the heat and leave to cool.
  • Place the flour, cocoa, bi carb and salt into a bowl and set aside. Cream the butter and sugars together in a bowl until light and fluffy. Add the cooled melted chocolate and beat to combine.
  • Beat in the orange zest and egg, followed by the flour mixture. Once combined stir in the chocolate chunks.
  • Roll the dough into small or large balls, depending on what size you want your cookies, and place on the baking tray. Bake for 15-18 minutes or until a skewer inserted in the middle of a cookie comes out clean.
  • Once baked, remove from the oven and leave the cookies to cool on the tray for 5-10 minutes before transferring them to a wire rack to cool.
