Fudgy, gooey white chocolate brownies are heaven in brownie form. These are made in one bowl, and the flavor actually improves after they cool down. If you love white chocolate, these are for you!

2/3 cup unsalted butter
6 oz white chocolate (, use baking white chocolate not candy melts)
3/4 cup granulated sugar
1 teaspoon vanilla
1/4 teaspoon salt
2 large eggs (, room temperature)
1 and 1/4 cup all-purpose flour (, spooned & leveled)
1/3 cup white chocolate chips
1/3 cup semi-sweet chocolate chips (, or dark)

Steps:

  • Preheat the oven to 350F degrees.
  • Line an 8x8 inch baking pan with aluminium foil & spray with non-stick cooking spray and set aside.
  • In a medium sized microwave-safe bowl, melt the butter and white chocolate in short 20 second bursts. Stir after each 20 second burst.
  • After both the butter and white chocolate are melted, cool for 5 minutes.
  • Whisk in the granulated sugar, followed by the vanilla, eggs and salt.
  • Gently fold in the flour.
  • Pour/spoon the mixture into your prepared pan and bake for 20-24 minutes, or until the top is set and the sides are starting to pull away from the pan. An inserted toothpick should come out with a few moist crumbs, or clean.
  • Allow the brownies to cool fully in their pan.
  • To serve, lift the brownies out of the pan using the aluminium foil edges. Carefully peel back the sides of the foil, then cut into 9 or 12 squares.
  • In a small bowl, melt the white chocolate chips in the microwave in short 20 second bursts, stirring between each burst. Drizzle the white chocolate over each square. Repeat the process with the semi-sweet chocolate chips.

2/3 cup (95g) all-purpose flour
1/3 cup (35g) unsweetened cocoa powder (I use Dutch-processed)
1/2 teaspoon salt
7 oz. (200g) bittersweet chocolate, coarsely chopped
2/3 cup (150g) unsalted butter, cut into pieces
3 large eggs
3/4 cup plus 2 tablespoons (175g) granulated sugar
7 oz. (200g) white chocolate chips or chunks

Steps:

  • Preheat oven to 350°F/180°C. Line a 9x13 inch pan with parchment paper or aluminum foil, leaving enough overhang on the sides for lifting the brownies out after baking.
  • In a small bowl sift together flour, cocoa powder, and salt. Set aside.
  • In a medium heatproof bowl, place chocolate and butter. Heat mixture in the microwave in 20- to 30-second intervals, stirring between each interval, until melted. Alternatively, you can set the bowl over a saucepan of simmering water, stirring occasionally. Set aside.
  • Using a mixer fitted with the whisk attachment, whisk eggs and sugar on high speed until thick and pale, 4-5 minutes. Turn off mixer. Slowly add in chocolate mixture and fold, using a rubber spatula, until combined. Add flour mixture and keep folding just until combined. Fold in white chocolate.
  • Pour batter into prepared pan and smooth the top. Bake for 15-18 minutes. Don't open the oven door in the first 13 minutes of baking. Mine are ready in 15 minutes, it sounds too short but these brownies aren't very thick and it's important to keep them fudgy, so be careful not to overbake. A toothpick inserted into the center of the brownies should come out moist, not dry. Let brownies cool completely on a wire rack. You can refrigerate until set for easy cutting. Lift brownies out of the pan using parchment paper and cut into bars. Slightly warm they're heavenly!
  • Store brownies at room temperature or in the fridge in an airtight container for up to 4 days. Serve warm or at room temperature. Brownies can be frozen for up to 2 months. Thaw them overnight in the fridge.

Super sweet and tender with a slightly fudgy center, they contain creamy white chocolate chunks that nod to the snowy frosting on the cake version. For particularly pristine cookies, reserve some of the white chocolate chunks to arrange on top of the cookie, as they tend to get tinted pink when mixed into the batter.

1/2 cup/115 grams unsalted butter (1 stick), at room temperature
3/4 cup/150 grams granulated sugar
1 large egg
1 to 1 1/2 tablespoons red food coloring, preferably gel
1 1/2 teaspoons vanilla extract
1 1/2 cups/195 grams all-purpose flour
3 tablespoons cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
2 tablespoons buttermilk or whole milk
4 ounces/115 grams white chocolate, coarsely chopped into chunks (3/4 cup)

Steps:

  • Move racks to the center of the oven, and heat the oven to 350 degrees. Line 2 baking sheets with parchment paper.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light and fluffy, 4 to 5 minutes. Add the egg and mix until fully incorporated, about 1 minute more. Scrape down the sides of the bowl.
  • Add 1 tablespoon red food coloring (and up to 1 1/2 tablespoons for really red cookies) and vanilla extract and mix on medium speed to combine. Scrape down the sides of the bowl.
  • In a small bowl, whisk the flour, cocoa powder, baking soda, and salt to combine. Add to the mixer and mix on low speed until fully incorporated, 1 to 2 minutes. Add the buttermilk (or milk) and mix on low speed to combine, then scrape down the sides of the bowl.
  • Add about 3/4 of the white chocolate and mix on low speed to combine. Scoop 2 tablespoon-sized balls of dough onto the prepared baking sheets, leaving at least 1 1/2 inches between each piece. Use your palm to flatten the balls slightly.
  • Press the remaining white chocolate chunks into the surface of each piece of dough. Bake for 12 minutes, until the cookies appear set on the outside and puffed in the center, rotating the baking sheets halfway through. Cool completely on the baking sheet.

Nonstick cooking spray
4 ounces / 113 grams unsweetened chocolate
8 tablespoons (1 stick) / 113 grams unsalted butter, cubed
1 1⁄4 cups / 250 grams granulated sugar
1 teaspoon / 5 grams pure vanilla extract
1⁄2 teaspoon / 3 grams fine sea salt
2 eggs / 100 grams large eggs
1⁄2 cup / 60 grams all-purpose flour

Steps:

  • Get prepared
  • Arrange the oven racks so one is in the center position. Preheat the oven to 400°F.
  • Spray the bottom and sides of an 8-inch square baking pan with nonstick cooking spray. Cut a piece of parchment paper 8 inches wide and 15 to 16 inches long. Lay the paper in the pan so it travels up and over two of the sides. Spray the paper with nonstick cooking spray.
  • Make the batter
  • Pour 1 to 2 inches of water into the bottom of a small saucepan and choose a bowl that fits over the saucepan to make a double boiler. Make sure the water is not touching the bottom of the bowl; if it is, pour some water out. Bring the water to a boil over high heat, then reduce the heat to medium-low to maintain a gentle simmer.
  • Unless you are using chocolate chips, roughly chop the chocolate. Put the butter and chocolate into the bowl of the double boiler and melt them, using a heat-proof rubber spatula to stir and scrape down the sides of the bowl so the chocolate doesn't burn.
  • Remove the bowl from the double boiler and wipe the bottom of the bowl so no water drips. Add the sugar, vanilla, and salt and whisk them in. Add the eggs one at a time and whisk until the batter is shiny and smooth, 1 to 2 minutes. Add the flour and stir with a rubber spatula until no flour is visible.
  • Bake the brownies
  • Using a rubber spatula, transfer the batter to the prepared pan. Use the spatula to smooth out the top of the batter.
  • Place the brownies on the center rack of the oven and bake for 20 minutes, rotating the pan from front to back halfway through the baking. Remove the brownies from the oven and cool on a cooling rack. The tops will appear dry, but the insides will remain fudgy if you poke the center with a toothpick or cake tester. Holding the sides of the parchment paper, lift the brownies out of the pan and place them on a cutting board. Using a large knife, cut the brownies into 16 equal pieces.
  • Store the brownies in an airtight container at room temperature for up to 1 week or freeze for up to 3 months.
