Categories     Dessert

Time 6h35m

Number Of Ingredients 12

300 grams Digestive biscuits or graham crackers, broken into pieces
115 grams (1/2 cup or 1 stick) butter
500 grams (2 and 1/2 cups) full fat cream cheese*, room temperature
100 grams (1/2 cup) caster sugar or granulated sugar
1 teaspoon vanilla extract
3 large eggs, room temperature
120 ml (1/2 cup) full fat sour cream, room temperature
1 teaspoon cornflour or corn starch
150 grams good quality white chocolate, melted
75 grams (1/2 cup) white chocolate, finely chopped
250 grams (2 cups) fresh raspberries, to decorate
Icing sugar or powdered sugar, to serve

Steps:

  • Preheat oven to 170 C (340 F) standard / 150 C (300 F) fan-forced. Line the bottom of an 8-inch springform pan with baking or parchment paper.
  • Add cookies to a food processor and whiz until finely crushed. Place crumbs in a large mixing bowl. Melt butter in the microwave, then pour over cookie crumbs and mix well. It should resemble wet sand.
  • Place wet crumbs in your prepared pan and press down gently to form one even layer. Use the back of a spoon to smooth crumbs. Pop in the fridge.
  • Add cream cheese (make sure it's nice and soft) to a large mixing bowl and beat for a minute or two until smooth and creamy. Add sugar and vanilla and beat again. Then add eggs, one at a time, beating on a low speed until incorporated.
  • Add sour cream, cornflour and melted chocolate and stir until smooth - but try not to overmix. Add white chocolate chunks.
  • Pour cheesecake filling over cookie crust and smooth the top. Bake in the oven for approximately 35-40 minutes or until it no longer wobbles in the middle. Try not to over bake it as it will continue to cook as it cools. Leave the cheesecake in the oven with the door ajar (with the oven turned off) for at least one hour.
  • Remove cheesecake and leave to cool at room temperature before transferring to the fridge. The cheesecake is best left in the fridge for 3-4 hours (or overnight) until it cools completely and becomes nice and firm before slicing.
  • To serve, top with fresh raspberries and dust with icing sugar.

WHITE CHOCOLATE CHEESECAKE WITH WHITE CHOCOLATE BRANDY SAUCE

White Chocolate Cheesecake with White Chocolate Brandy Sauce image

This is a dense cheesecake that is very smooth and melts in your mouth. The white chocolate brandy sauce tops it off. I just nap it over the center of the slice of cheesecake on the plate. I garnish it with mint leaves and either raspberries or strawberries.

WHITE AND DARK CHOCOLATE SPIRAL CHEESECAKE

White and Dark Chocolate Spiral Cheesecake image

This recipe is originally a Karin Goren masterpiece. Karin Goren is a local Israeli food personality, always smiling, always baking the most wonderful things. I watched her do this cheesecake on her show, Sweet Secrets, and was able to recreate this wonderful dish over the past weekend. Of course, not being able to leave well enough alone, I played around with her recipe, made a few changes, and here is my version

Provided by Mirj2338

Categories     Cheesecake

Time 1h40m

Yield 16 serving(s)

Number Of Ingredients 10

150 g cookie crumbs
100 g melted butter
1 kg soft white cheese (I used 9% fat, can use cream cheese)
3/4 cup sugar
6 eggs
300 g white chocolate chips
1/3 cup cream (unwhipped)
1 tablespoon cornflour
300 g dark chocolate chips
1/3 cup cream (unwhipped)

Steps:

  • Preheat the oven to 200 degrees Celsius.
  • To make the base:.
  • Mix the cookie crumbs with the melted butter and pat into the bottom of a 26 cm diameter springform pan.
  • Place in the oven to "set" for about 7 minutes.
  • Remove and set aside to cool.
  • To make the filling base:.
  • Beat all the ingredients together until well blended.
  • Pour half into a large, 4 cup measure cup, pour the other half into another 4 cup measuring cup. Alternatively, you can use jugs, pitchers, whatever is available, as long as it has a handle and a spout.
  • Melt the white chocolate chips together with the cream and stir to blend.
  • Add the cornflour and stir again.
  • Add this mixture into one of the cheese filling jugs. Stir to blend.
  • Melt the dark chocolate chips together with the cream and stir to blend.
  • Add this mixture into the other of the cheese filling jugs. Stir to blend.
  • Okay, here comes the fun part --
  • Carefully pour a portion of the white chocolate filling into the middle of the crust.
  • Now carefully (I mean CAREFULLY) pour a portion of the dark chocolate filling into the middle of the white filling.
  • Now CAREFULLY pour some of the white chocolate filling into the dark chocolate filling.
  • Now CAREFULLY pour some of the dark chocolate filling -- okay you get the picture?.
  • Keep this up until you have a series of concentric circles. Again, I cannot mention it enough, do this carefully so you don't mess up the circles.
  • Very carefully transfer this to the oven.
  • Bake at 200 degrees C for 10 minutes.
  • Turn the oven down to 120 degrees C and bake for a further 60 minutes.
  • Turn the oven off and let the cheesecake hang out in the cooling oven for another 2 hours.
  • Transfer to the refrigerator and let it hang out there for another 24 hours.
  • When you cut slices you will have the most gorgeous white and dark "zebra-ed" portions.

DARK CHOCOLATE CHEESECAKE

Dark Chocolate Cheesecake image

Provided by Ree Drummond : Food Network

Categories     dessert

Time 3h45m

Yield 2 to 4 servings

Number Of Ingredients 12

Nonstick cooking spray, for the pan
5 chocolate graham crackers
4 tablespoons salted butter, melted
2 ounces 70% dark chocolate
12 ounces cream cheese, at room temperature
1/3 cup granulated sugar
1 teaspoon cocoa powder
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
1 large egg
1 cup canned cherry pie filling
1 sprig fresh mint, for garnish

Steps:

  • For the crust: Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray a 6-inch springform pan with cooking spray to coat the bottom and sides.
  • Add the graham crackers to a resealable plastic bag. Using your hands or a rolling pin, crush the graham crackers into crumbs. Transfer them to a mixing bowl and add the melted butter. Fold and press together with a spatula until a loose, crumbly mixture is made. Pour the mixture into the bottom of the prepared pan and press to create an even base for the cheesecake. Chill the crust in the fridge while you make the filling to set the base.
  • For the filling: Add the chocolate to a heatproof bowl and set the bowl over a pan of simmering water. Heat, stirring with a spatula, until the chocolate is melted and completely smooth. Set aside.
  • Mix the cream cheese, sugar and cocoa powder in a food processor until smooth. Remove the lid and scrape down the sides of the bowl. Add the vanilla, salt and egg and process until completely incorporated. Scrape down the sides once more. Turn the machine back on and while the machine is running, drizzle in the melted chocolate and allow it to completely incorporate into the mixture.
  • Pour the chocolate filling over the prepared crust and smooth out the top with a spatula. Transfer the cheesecake to the center rack and bake until the filling is no longer soupy but still slightly jiggly, about 32 minutes. Turn off the oven and open the door just a hair. Allow the cheesecake to sit in the warm oven for 15 more minutes with the door ajar.
  • Transfer the cheesecake to a cooling rack and let cool for 30 minutes.
  • Run a sharp knife around the edge of the pan to help free the cheesecake, but keep it in the pan. The cheesecake will continue to shrink while it cools and this step makes it easier to separate the cheesecake when you are ready to serve it.
  • For the topping: Pour the cherry pie filling onto the cooled cheesecake and smooth into an even layer, leaving a bit uncovered around the edges. Cover the springform pan with plastic wrap and refrigerate for at least 2 hours.
  • When you are ready to eat, remove the cheesecake from the fridge and transfer to a serving platter. Garnish with a sprig of mint and serve.

Time 6h

Yield 10 serving(s)

Number Of Ingredients 14

10 ounces graham crackers, crushed into crumbs
7 tablespoons unsalted butter
1/2 cup heavy cream (whipping cream)
8 ounces good quality white chocolate, chopped
3 (8 ounce) packages cream cheese, room temperature
1 1/4 cups granulated sugar
5 large eggs
1 teaspoon vanilla extract
1 pinch salt
boiling water
1 1/2 cups granulated sugar
1 3/4 teaspoons lemon juice
1 pint heavy cream
4 tablespoons unsalted butter

Steps:

  • Pre-heat the oven to 375°F Combine the graham cracker crumbs with the melted butter and press into the bottom and 1 1/2 inches up the side of a 10 inch spring form pan.
  • Bake for 10 minutes and then allow to cool completely on a wire rack.
  • Reduce the heat to 325°F and prepare the cheesecake batter.
  • Place the chopped white chocolate into a heat safe bowl and set aside. Bring the 1/2 cup of cream to a simmer over medium heat in a small sauce pan. Pour the hot cream over the white chocolate, swirling the bowl to submerge it and allow to stand for one minute. Stir the chocolate gently until melted completely.
  • In a stand mixer with the paddle attachment, beat the cream cheese until smooth and lump free. Add the sugar and mix, scraping down the sides of the bowl as needed.
  • On medium speed, slowly add the white chocolate ganache. Once combined you can add the eggs, one at a time, beating on low speed until each egg is incorporated. Once you've added all the eggs, mix in the vanilla and salt and pour into your prepared pan.
  • Set the pan onto a couple large sheets of aluminum foil and smooth them up the sides of the pan to waterproof.
  • Set the cheesecake into a large roasting pan and then place in the oven. Pour the boiling water into the roasting pan, filling to about one inch (no higher than the lowest edge of aluminum foil). Allow to make at 325°F for one hour then reduce heat and bake at 300°F for an additional 60-90 minutes until the center is just set. The outer ring of the cheesecake for about 3" should be set.
  • Remove from the oven and allow to cool completely on a wire rack. Once cool chill for at least 4 hours before serving.
  • To glaze, gently warm the 1 cup of the caramel sauce on the stove or in the microwave until slightly runny and then pour onto the cheesecake. Smooth the caramel over the cake and serve.
  • To make the Caramel Sauce: In a medium sauce pan over medium high heat, combine the sugar and lemon juice. Stir with a wooden spoon until the sugar is mostly melted then set aside the spoon and swirl the pan over the heat to keep the color even throughout.
  • Continue to cook and swirl until it sugar turns a medium amber color. Watch it carefully, the sugar will quickly darken and should it become dark brown or black it will taste bitter and unpleasant.
  • When the sauce turns the right color slowly whisk in the cream. If the caramel hardens with the addition of the cream, do not worry. Just continue to add the cream and bring the mixture back to a a boil over medium heat. Continue to stir until the sugar has remelted. Allow to boil for 5 minutes then remove from heat and stir in the butter.
  • Pour into a heat safe container and chill until ready to use.

WHITE CHOCOLATE CHEESECAKE WITH WHITE CHOCOLATE BRANDY SAUCE

White Chocolate Cheesecake With White Chocolate Brandy Sauce image

A crustless cheesecake that I wrote on an index card years and years ago. I, now, see it on the internet, but it's been around pre-internet. The white chocolate may be doubled, but not really necessary with the lovely sauce which compliments this cheesecake highly. Should you want a crust, almost any will do...oreo, graham cracker, cookie, shortbread...
