WHITE CASTLE HAMBURGERS..& CHEESEBURGERS

When I was a volunter at Chicago's U.S.O. Midway Airport,I would bring a couple of sacks full of sliders with me as an extra treat for the sailors from Great Lake's Navy training station, passing thru the airport. Time 15m

Number Of Ingredients 5

1 lb ground beef
1 medium onion
1 pkg hot dog buns
pkg sliced american cheese.. if you want a cheeseburger
1 small cap to pen

Steps:

  • 1. On waxed paper, divide the ground beef into 16 equal size pieces. Then form each into 2-1/2 squares. Make the patties very thin. Then make 5 holes, with the pen cap to look like #5 on a dice. Now freeze these patties, for later. Cut the ends off of each hot dog bun and cut the bun into 2 pieces. Very finely chop the onion. Pre-heat electric griddle to 375 and spray with Pam. Lay about 1-1/2 Tablespoons of onion on the grill for each meat pattie you want to cook. Be sure the onions are laid down very thin. Quickly place a frozen pattie on the top of each of the onions. Cook for about 4 minutes. The holes in the meat allow the steam to cook the top side of the meat.! Salt & pepper now if you wish. Put 1/4 of a slice of cheese (a small square) on top of the cooked pattie, then a pickle slice. Immediately place the bun top on the top of the pickle. Take off the grill and place onto the bottom 1/2 of the bun. Serve with mustard or catsup...your choice. Enjoy this wonderful delicacy. Bet you can't eat just one!!!
  • 2. P.S. a bonus for you. Go to : Whitecastle.com. for many recipes using, White Castle hamburgers! You will be surprised...frozen are acceptable. Have fun

I'm not real fond of White Castle myself but I gobbled these up. Note: To freeze: Assemble hamburgers less the condiments. Flash freeze, wrap in plastic wrap, put in a ziplock bag and label. To heat: Microwave until heated through.

WHITE CASTLE-STYLE SLIDERS

White Castle-Style Sliders image

White Castle was America's first fast food hamburger chain, and it's often credited with launching the country's burger obsession, with its small square steam-grilled sliders. They're sold in packs of four, sacks of 10 and even cases of 30. The company calls its fans "cravers" (Harold and Kumar of the 2004 cult movie weren't the only ones!), and every year new devotees are inducted into the Cravers Hall of Fame.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h

Yield 8 burgers

Number Of Ingredients 7

1 onion, finely chopped
10 ounces ground beef chuck (80% lean)
1 teaspoon onion powder
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter, cut into pieces
8 slider buns, split
8 thin dill pickle chips

Steps:

  • Put the onion in a medium bowl and cover with 1/2 cup water. Set aside 30 minutes.
  • Meanwhile, puree the beef with 2 teaspoons water, the onion powder, 3/4 teaspoon salt and a few grinds of pepper in a food processor until smooth. Draw a 6-by-12-inch rectangle on a piece of parchment paper; flip over the paper so the pencil side is down (you should still be able to see the rectangle). Press the beef into the rectangle; cover with another piece of parchment and press until the beef is very thin and fills the rectangle completely. Uncover and score the beef into eight 3-inch-square patties. Poke 5 holes into each patty with a chopstick (one in the center and one near each corner). Slide the beef on the parchment onto a baking sheet, loosely cover with plastic wrap and freeze until firm, 10 to 15 minutes.
  • Trim the edges of the rectangle to make it even; cut patties along the scored lines. Heat an extra-large skillet over medium-high heat. Add the onion and liquid; bring to a boil. Stir in the butter and arrange the patties over the onion. Cook until the meat is no longer pink around the edges, 3 to 4 minutes. Put a bun bottom upside down on each patty. To steam the bun tops, rest each across 2 bun bottoms (like a bridge). Continue cooking until the patties are completely cooked through, about 2 more minutes, adding 1 to 2 tablespoons water if the skillet is too dry or if the onion starts browning.
  • Remove the bun tops from the skillet. Slide a spatula under each patty, picking up the onions and bun bottoms along with the meat; flip over onto a plate. Top each with a pickle and a bun top.

5-INGREDIENT WHITE CASTLE HAMBURGERS

5-Ingredient White Castle Hamburgers image

White Castle is known for its signature steamed sliders. Now, you can make them at home with this simple 5-ingredient copycat White Castle hamburger recipe.

Provided by Lindsay Mattison

Categories     lunch, dinner

Time 21m

Number Of Ingredients 4

1 pound ground beef (preferably 80/20 ground chuck)
1 cup dehydrated or dried onions
1/2 cup water
16 slider buns

Steps:

  • Create a 10x10 piece of wax paper or parchment paper and place it on a baking sheet. Place the ground beef on the paper and spread it until it's a thin, even layer about 1/4-inch thick. Using a butter knife, divide the beef into 16 equal portions to create 2-1/2 inch square patties.
  • Using your finger or the back of a chopstick, create 5 holes in each patty.
  • Freeze the patties for an hour.
  • Rehydrate the onions by mixing them with the water. Allow the mixture to sit for 5 to 10 minutes.
  • Add the onions and water to a skillet or griddle. Bring the mixture to a simmer over medium-high heat before reducing the heat to medium-low.
  • Add the frozen patties to the skillet and cook the beef for 2 to 3 minutes, until the edges start to brown. Add additional water if the pan looks too dry.
  • Flip the hamburger patties and top each one with the slider's bottom bun, cut-side down. Place the top bun cut-side down on top of the bottom bun and continue to cook the patties until they're browned through, an additional 2 to 3 minutes.
  • Remove the top buns and set aside. Slide a spatula underneath the patty and flip it over onto a plate so it sits on the bottom bun. Top the patty with pickles (optional), a half slice of American cheese (if using), and garnish the burger with the condiments of your choice.
  • Add the top bun to the burger and serve immediately.

WHITE CASTLE BURGERS

White Castle Burgers image

Make White Castle Hamburgers just like they do with this copycat recipe. They are the perfect late-night snack!

Provided by Stephanie Manley

Categories     Main Course

Time 30m

Number Of Ingredients 8

1 pound ground beef
1/2 cup water (for beef)
1/2 teaspoon salt
3/4 cup onion (diced)
1 beef bouillon cube
1/2 cup water (for onions)
12 dinner rolls ((Parker house shape, 2 1/2" x 2 1/2" size))
dill hamburger slices

Steps:

  • In a food processor place ground beef, salt, and water. Process for a few seconds so water and salt are blended through ground beef and meat should look a little pasty.
  • Place plastic wrap on the bottom of an 11 x 13-inch jelly roll pan. Place blended hamburger in the middle and cover it with another piece of plastic wrap. Roll the hamburger out to 1/4-inch thick.
  • Remove the plastic wrap and cut the meat into 3-inch squares. Leave the ground beef pieces on the tray. You should get between 12 and 14 squares.
  • Perforate each piece five times with the end of a plastic straw, this will give the meat little steam holes. Cover the hamburger with plastic wrap and place it in the freezer until the meat is partially frozen but not solid.
  • Place onions, beef bouillon, and 1/2 cup water in a frying pan over medium-low heat. Saute and stir onions until they are clear, more water may be added as needed. Turn the heat off until ready to cook hamburger patties.
  • When beef patties are ready to prepare, turn the heat to medium-low heat and add enough water to onions just so the bottom of the frying pan is covered. Place patties in pan and cover with lid. Frying time is just a few moments.
  • Turn the patties and cook until done but not dry. The patties should be juicy. When hamburgers are finished cooking, place on top of a roll, add pickles, cover hamburgers so they will steam slightly or pop them in the microwave covered just for a few seconds until ready to serve.
