WHITE BEAN FALAFELS WITH CHIMCHURRI YOGURT SAUCE
This recipe is for the Ninja Chef Challenge. Our ingredients were; garlic, tortilla's, yogurt. A mystery ingredient was added; cannellini beans. The fresh herbs in the Chimchurri sauce coupled with the falafels will leave you wanting more... perfect for entertaining or a vegan dinner!! Your guests will rave, and *shhhh* noone...

Steps:
- 1. In a small bowl add all your chimchurri ingredients except the yogurt, and mix well. Place in a mini chopper or food processor and pulse till smooth. Add your yogurt. Mix thoroughly and place in fridge till ready to use.
- 2. Open your can of cannellini beans; drain and rinse. Add the rest of your chimchurri ingredients. Using your favorite *masher*, mash the living daylights out of the beans. Take out all your frustrations I say!! You can leave partial pieces of beans, they look really pretty! Add your yogurt! Taste for seasoning, and set in fridge to chill!
- 3. Over medium heat, warm tortilla's in an skillet or oven, till they are ready and warmed up. Set on a plate and set aside!
- 4. Using your hands or an ice cream scoop, scoop out uniform pieces of falafel mixture and form into patties. Dredge lightly in flour and place on plate. In a medium skillet heat your olive oil till to medium-high heat.
- 5. Cook for a couple of minutes on one side, flip over and evenly brown on the other side. When nicely golden on both sides, remove and place on a paper towel lined plate.
- 6. Assemble your falafel's by starting with your tortilla's, add your chimchurri yogurt sauce, your veggies of choice, then 1 falafel cut in half. Fold over, secure with toothpick if desired and enjoy!!
FALAFEL IN PITA WITH YOGURT SAUCE
Steps:
- In medium skillet over medium heat, add 2 tablespoons oil and sweat onion and peppers 2 to 3 minutes then garlic and cook until translucent, about 5 minutes.
- In a food processor, pulse together chick peas, red chili flakes, ground cumin, the egg, salt and black pepper to form a coarse consistency. Then add flour, parsley, and cilantro. Pulse until mixture starts pulling from the sides of the food processor.
- Remove mixture to a large bowl and mix in the onion mixture. Chill falafel until ready to cook.
- Roll falafel dough into 1-inch rounds. Then form rounds into an oblong quenelle shape, like a football.
- In a thick-bottomed skillet heat 1/2 inch of canola oil over medium heat to 350 degrees F. Cook falafel balls a few at a time, until golden brown, about 5 minutes. Be sure to turn them so they do not burn or stick to the bottom of the pan. Drain on paper towels and sprinkle with salt while still hot.
- Open the pita bread to make pockets. Place 3 to 4 falafels inside. Stuff with lettuce tomato and cucumbers and drizzle sauce generously on the inside. Serve immediately.
- Mix the yogurt, lemon zest, lemon juice, cilantro, parsley and cumin together in a small bowl. Add salt to taste. Chill until ready to use.
CREAMY WHITE BEAN YOGURT SAUCE

- Puree the white beans, garlic, yogurt, lemon juice, and olive oil in a mini food processor until very smooth. Taste and season with salt and pepper. Serve with falafel or as a salad dressing.
FALAFELS WITH YOGURT-DILL SAUCE

- Combine chickpeas, 3/4 cup panko bread crumbs, red potato, red onion, garlic, egg, 1 tablespoon olive oil, cilantro, 1 teaspoon lemon juice, cumin, salt, and black pepper in a large bowl.
- Form mixture into 2-inch patties. Place 1/4 cup panko crumbs in a shallow bowl. Gently press patties into the crumbs to coat.
- Heat canola oil in a large skillet over medium-high heat.
- Fry patties in the hot oil until golden brown, about 4 minutes per side. Set patties aside.
- Stir yogurt, dill, lemon juice, garlic salt, and white pepper together in a bowl. Serve sauce drizzled over falafels.

- Pick over dried beans, discarding any stones or broken beans; rinse. Place in a large saucepan, cover with cold water by 2 inches, and bring to a strong boil over high heat. Cover, and remove from heat; let stand 1 hour. Drain the beans; set aside.
- Meanwhile, place peppers directly over the trivet of a gas-stove burner over high heat or on a grill. As they turn black, turn with tongs. (Alternatively, place peppers on a baking pan; broil in oven, turning as peppers become charred.) Transfer charred peppers to a medium bowl; cover with plastic wrap. Let peppers rest 15 minutes. Transfer to a work surface (do not rinse). Peel off blackened skin; discard. Halve peppers; remove seeds and ribs; discard. Cut pepper into 1/4-inch pieces; set aside.
- Heat butter in a large saucepan over medium heat. Add garlic, onion, carrot, and celery. Cover; cook, stirring occasionally, until softened and slightly browned, about 15 minutes. Add cumin, coriander, paprika, and cayenne, if using; stir to combine. Stir in stock, water, beans, and half the roasted poblano peppers. Cover; cook until beans are soft, about 1 1/2 hours. Uncover; simmer gently until beans begin to fall apart, about 30 minutes more. Season with salt and pepper. Serve chili garnished with remaining poblano peppers, radish, cilantro, and yogurt cheese, if desired.
