WHOLE WHEAT BREAD RECIPE
This whole wheat bread recipe makes two loaves of perfectly soft and fluffy homemade brown bread. It's an easy bread recipe you will make again and again!

Steps:
- Heat the milk in the microwave until it is steaming, about 1 minute on high heat, although this will depend on your microwave.
- Stir in the molasses, salt, and butter. Continue stirring until the butter is melted.
- Transfer the milk mixture to the bowl of a stand mixer, and add the water, whole wheat flour, all purpose flour, and yeast.
- Mix with the dough hook (or a wooden spoon in a bowl if mixing by hand) until everything comes together.
- After mixing for a minute or so, the dough should come together and clear the sides and bottom of the bowl.
- If it is too wet and sticky to clear the bottom of the bowl, add a little more flour, a couple tablespoons at a time, until the dough clears the bottom of the bowl. It should be soft and slightly tacky to the touch, but not overly sticky.
- If the dough is really dry and the flour is not completely mixing in, add a bit more water, a tablespoon at a time, until the dough comes together into a smooth ball.
- Knead the dough with the dough hook on low speed for 7-8 minutes (10-12 by hand) until it is smooth and elastic.
- Move the dough to a lightly oiled bowl, turning it to coat, and cover it tightly with plastic wrap.
- Allow it to rise until doubled, about 60-90 minutes.
- Punch down the dough and turn it out onto a lightly oiled surface.
- Divide it into two pieces and shape each piece into a loaf.
- Place each loaf into an oiled 8x4 inch bread pan and cover lightly with plastic wrap (make sure the ends aren't trapped, you don't want it to stop the bread from rising).
- Allow the loaves to rise for 45 minutes to 1 hour, or until they have almost doubled.
- Preheat the oven to 400 degrees F.
- Bake the loaves for 28-32 minutes, until golden brown.
- Turn the loaves out onto a wire rack immediately, rub the tops of the loaves with butter if desired (this makes the crust a bit softer), and cool completely before slicing.

OAT WHOLE WHEAT BREAD
My Danish great grandmother made a bread very similar to this when my dad was a child. Going off memories my dad helped me recreate her recipe. This bread a deep golden brown on the outside and moist on the inside. Everyone agrees it's delicious toasted.

- Warm the milk in a small saucepan to no more than 100 degrees F (40 degrees C). Sprinkle the yeast overtop and let stand until the yeast softens and begins to form a creamy foam, about 5 minutes; stir in the sugar.
- Whisk the whole wheat flour, all-purpose flour, oatmeal, and salt together in a mixing bowl. Make a well in the center and pour the milk mixture into the well. Stir until the dough has pulled together. Turn the dough out onto a lightly-floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl. Place the dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 45 minutes.
- Grease 2 8x4-inch loaf pans. Deflate the dough and turn it out onto a lightly-floured surface. Use a knife to divide the dough into two equal pieces - don't tear it. Shape into dough rounds and let rest for 10 minutes. Form the dough into loaves and place into the prepared pans. Cover with a damp cloth and let rise until doubled in volume, about 40 minutes.
- Preheat an oven to 350 degrees F (175 degrees C).
- Bake in the preheated oven until the top is golden brown and the bottom of the loaf sounds hollow when tapped, 25 to 30 minutes. Cool in the pans for 5 minutes before turning out onto a wire rack to cool completely.

- Dissolve yeast in warm water. Add honey, and stir well. Mix in whole wheat flour, salt, and vegetable oil. Work all-purpose flour in gradually. Turn dough out onto a lightly floured surface, and knead for at least 10 to 15 minutes. When dough is smooth and elastic, place it in a well oiled bowl. Turn it several times in the bowl to coat the surface of the dough, and cover with a damp cloth. Let rise in a warm place until doubled in bulk, about 45 minutes.
- Punch down the dough. Shape into two loaves, and place into two well greased 9 x 5 inch loaf pans. Allow to rise until dough is 1 to 1 1/2 inches above pans.
- Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes.

- In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
- Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
- Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
- Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

- Add salt and shortening.
- Mix honey and yeast in mixing bowl; let stand until yeast is dissolved.

This is my "when I'm home all day" recipe. I use the dough cycle and bake it in 2 loaf pans but you can just use the whole wheat cycle and bake it in the machine as well. I love this bread.

Steps:
- Add ingredients in the order given to bread machine.
- Set on dough cycle if baking in oven, otherwise set on whole wheat/2 lb.
- After dough cycle is done remove dough from pan and flour a work surface lightly. Flour the top surface of the dough.
- Punch down the dough, rolling it into a length equal to 2 greased loaf pans. This might take some work, the dough holds a lot of air. Squeeze and roll the air bubbles out.
- When you have a roll double the length of of a pan cut it in half and place in the greased pans. Cover with a tea towel and set aside in a warm place to rise until doubled in size.
- Rising usually takes about 45 minutes.
- Preheat oven to 350 degrees.
- Bake loaves for 20 to 25 minutes, until browned. Turn out onto a rack and cool.

Wow - this is delicious bread! I'm always trying new bread recipes and am glad I ran across this one in a recent magazine! It is delicious! Enjoy! This makes two loaves. Updated 2/10/05 - I just wanted to update that I halved this recipe and did the dough in the dough cycle and it turned out wonderfully. I did use a full package of yeast instead of halving that. I took the dough out of the ABM and let it rise one more time in the loaf pan. Then I baked it at 375 degrees for 35 minutes.

- Combine 1 1/2 cup water, cracked wheat, and salt in a saucepan. Bring to a boil; reduce heat to medium low. Cook, stirring occasionally, until water is absorbed, about 15 minutes. Remove from heat.

- Sprinkle yeast into 1/2 cup warm water, let stand 10-15 minutes. (Add 1 tsp sugar to help it work faster.
- Combine hot water and 10 cups whole wheat flour in mixer. Mix on low speed until well blended.
- Add salt, oil, and honey. Continue to mix until well blended.
- Add 2 more cups of wheat flour and oatmeal and/or potato flakes, blend thoroughly.
- Add yeast mixture.
- Add 6 cups white flour. Knead on low speed for 6 minutes. Add enough flour that the dough leaves the side of the bowl but is still a little sticky - the consistency of cookie dough.
- Oil hands and mold into 6 loaves on oiled counter. Place in oiled pans and let rise just to the top of the pans.
- Bake and 350 for 35-40 minutes Remove from pans to cool.
- Brush tops with butter.
- Notes: Sugar or molasses may be used instead of honey.
- Only let rise to tops of pans, it will rise more in the oven when baking. If it rises too much it will create an air bubble between the bread and the crust.
- Use smaller size pans, the bigger ones will not work as well.

MAKE 6 LOAVES OF WHOLE WHEAT BREAD IN ONE HOUR!
Steps:
- If grinding your own wheat, begin there (I use a hard white winter wheat, but red wheat is good too. Grinding the wheat using a NutriMill only takes about 4 minutes and it only has one ingredient: wheat!).
- With dough hook in place on your Bosch mixer, place water, dough enhancer, gluten, oil, honey, yeast, and 6 cups flour in the bowl. On the Bosch mixer, flip the switch over to "M" to incorporate.
- Add another 7-8 cups of flour and salt and turn the speed on the mixer to "1".
- Continue adding flour 1/2 cup at a time until dough cleans the edges of the bowl (takes just a minute or two).
- Continue kneading dough on speed "2" for another 6-8 minutes.
- Oil your hands and lightly oil a spot on a clean surface. Divide the dough into six equal portions and shape into loaves.
- Put loaves into greased pans and let rise until double in size (about 20 minutes).
- Bake at 350 degrees for 30-40 minutes (internal temperature should be about 195 degrees and the outside will be nice and golden).
