Steps:
- For the filling: Heat the oil in a large saute pan set over medium-high heat. Add the turkey and sprinkle with salt and pepper. Cook, stirring to break up the turkey, until browned and cooked through, about 5 minutes. Using a slotted spoon, transfer the turkey to a bowl and keep the fat in the pan. Add the chili powder, coriander, cumin, garlic, onions and bell peppers, and cook until soft and fragrant, 7 to 8 minutes. Add the meat back to the pan and stir to incorporate. Add the tomato puree, raisins, capers, olives, thyme and bay leaf, and cook until all of the flavors come together and the liquid is absorbed, about 10 minutes. Season with the lime juice, salt and pepper. Cool the filling completely.
- For the dough: In a large bowl, sift together the flour, masa harina, baking powder and salt. Stir in the melted butter. Gradually add 1/2 cup to 3/4 cup water, and work it in with your hands to incorporate; the dough should be easy to handle and not sticky. Form the dough into a ball, wrap it in plastic, and refrigerate for 30 minutes.
- Lightly flour a rolling pin and a clean surface. Divide the dough in half. Refrigerate half of the dough and roll out the other half of the dough to 1/8-inch thick. Using a 4-inch cookie or biscuit cutter, cut out 10 circles of dough. Repeat with the remaining dough.
- In a small bowl, beat the egg with 1 tablespoon water. Spoon 2 generous tablespoons of filling into the center of each pastry circle, leaving a 1/2-inch border. Brush the edges with the egg wash and then fold the dough to enclose the filling and form a semi-circle. Tightly seal the edges by crimping with the tines of a fork. Chill for at least 30 minutes.
- For the sauce: In a small mixing bowl, add the crema, cilantro and lime juice. Mix thoroughly and season with salt and pepper.
- Preheat the oven to 375 degrees F. Grease a baking sheet.
- Place the empanadas on the prepared baking sheet and brush the tops with some egg wash. Using a fork, prick a few holes in the tops of the empanadas for the steam to escape. Bake until the empanadas are golden brown, 30 minutes.

BEEF EMPANADAS WITH BLACK BEAN DIPPING SAUCE
I got this recipe from Bon Appetit, but they didn't have it published on their web site, so I'm putting it here for safe keeping. It was in the 'request' section where readers write in and ask for a recipe from a location / restaurant they'd eaten at. This one comes from the Grace Bay Club in Turks and Caicos. It looks quite good - so I'm hoping some of us enjoy this! UPDATE - I made these this weekend and they were good and went over big at a party. I made a double batch and note the puff pastry at my grocery was $4.99 ea - so for a double batch - that is 3 packages...so not an inexpensive appetizer for a party... Many liked them - but I thought next time I might see about using pie pastry instead of the puff pastry and perhaps adding a bit of cheese or maybe potato inside of the empenadas? The dip was great - even with tortilla chips too.... :)

CILANTRO SAUCE FOR CHILEAN EMPANADAS
I learned to make empanadas over 25 years ago from a Chilean friend. It's the empanada recipe that has beef, onions, garlic, hard-boiled eggs, raisins, etc. While I could find similar recipes for the empanadas on RecipeZaar, I could not find one for the sauce that you pour inside the empanada after baking it, and before eating it. And well...............that's just a shame! So I thought I'd post the one I was taught to make. After making this batch, I pour smaller servings into individual little bowls so each person can spoon a little sauce into their empanada before every bite. Please feel free to tweek according to taste. Also, we think this sauce tastes better the next day after making it. Enjoy!

Steps:
- Preheat the oven to 425 degrees F.
- Add the oil to a large saute pan over medium-high heat. Season the pork with chili powder, salt and pepper, to taste, and quickly sear for 2 minutes. Remove from the pan to a bowl and cool slightly. Add the scallions, cilantro, chipotles and queso fresco and mix well.
- Roll out the pie rounds on a lightly floured surface and using a 3-inch biscuit cutter, punch out rounds of dough. Put about 2 tablespoons of the filling, off-center, on each dough round. Brush the edges of the dough with beaten egg. Fold the dough over the filling and crimp the edges with a fork. Arrange them on a half sheet tray lined with parchment paper and brush the tops with remaining beaten egg. Bake until nicely browned, about 13 to 15 minutes. Remove the empanadas from the oven and arrange them on a platter. Serve with the dipping sauce.
- Dipping Sauce:
- In the same pan the pork was cooked in, add the butter. Turn the heat to high and add the shallots. Cook the shallots until nicely caramelized, about 4 to 5 minutes. Add the shallots, avocado, olive oil, red wine vinegar and sour cream to a blender. Season with salt and pepper, to taste, and puree until smooth and velvety. COLOMBIAN EMPANADAS WITH HOT SAUCE RECIPE - (4.1/5)

Steps:
- Peel and cut the potatoes into small cubes. Put them in a pot, cover them with enough water and add salt. Cook for about 20 to 25 minutes on medium heat or until soft. When the potatoes are cooked, drain them and roughly mash them. To make the dough, add hot water to a large bowl, add the chicken bouillon, Sazón Goya, salt and butter. Stir well to mix all of the ingredients. Slowly add the cornmeal to the water and stir with a big spoon. When all of the corn meal has been added, work the dough with your hands until it becomes soft. Let rest for 20 minutes. Add oil to a large pan on medium heat. Add the garlic, red bell pepper, tomatoes, onion powder, salt, cilantro, and cumin. Cook this guiso (sauce) for about 5 minutes. Add the beef to the guiso and cook it thoroughly. Add the mashed potatoes and mix well to make the filling. To make the empanadas, put a small ball of dough in the center of a tortilla press covered with plastic and press to flatten it. You can also put the small ball of dough between two pieces of plastic and flatten it with a small saucepan. Add a tablespoon of the filling. Fold the circle of dough in half to form a half moon. Cut off the edge of the half moon with a cup or drinking glass. This will shape your empanada and seal it at the same time. Another way to make them is pressing the edge with your fingers and folding the extra dough inwards, this will prevent the filling from coming out during frying. Once you have all of your empanadas ready, you can fry them in a deep frier with enough oil at 350ºF. You can also fry them on the stove at medium high temperature. Fry the empanadas for 6 to 7 minutes or until golden brown. Then put them on a paper towels to drain them. Serve them hot with Colombian hot sauce and lime wedges. HOT SAUCE: Add water, vinegar, habanero peppers, onion, sugar, oil, lime juice and salt to a blender and blend well. Add cilantro, red bell pepper and tomatoes. Pulse once or twice to mix the ingredients without blending. If you wish to have a stronger onion flavor you can add the green onion in this step instead of the previous one.

- In a medium skillet heat the olive oil and add the ground beef. Saute the ground beef until no longer pink, breaking it up with a wooden spoon. Add the onion and garlic to it and continue sautéing until the onion is soft and translucent.
- Add the oregano, cumin, smoked paprika, chili powder, salt, pepper, beef broth, brown sugar and hot sauce to the skillet and stir. Cook for a couple more minutes then remove from heat and let the meat mixture cool until it comes to room temperature.
- Working with one puff pastry sheet at a time, roll it out so that it's long enough to cut 6 circles, 2 on each row, see video. Using a 4 inch cookie cutter or bowl, cut 6 circles, 2 per row. Fill each with a about a tablespoon of meat mixture in the middle of each pastry round. Brush half of the pastry round edge with egg wash, then fold the dough over into a half-moon shape so the edges meet and then press them together with your fingers to seal. Use a fork to crimp the edge. Place it onto a baking sheet and repeat with remaining ingredients. You should get around 40 empanadas. See notes.

- 1. Melt the butter for the dough and let cool down a bit. Mix the hot water with the salt. Add the flour, melted butter, and hot salt water to a bowl and mix until you get a nice and smooth dough. Add some more flour if too wet or some more water if too dry. Wrap in plastic wrap and let rest for about 30 minutes on the counter.
- 2. While the dough is resting, prepare the filling. Add the oil to a frying pan and heat up, add the chopped onions, garlic and carrots and fry until the onions are glossy. Add the ground meat and fry until browned a bit. Add the parsley and oregano and mix with everything. Add the diced potato and egg and mix in. Season with salt, pepper, Tabasco (or chili sauce) and take off the heat and set aside to cool down a bit.
- 3. Preheat the oven to 350°F (180°C). Line a baking sheet with baking parchment and set aside. Roll out the dough thinly and cut out circles of about 4 inches (10cm) – of course, you can make the empanadas bigger if you want. Place a dough circle in the palm of your hand add about 1-2 tsp. of filling on top. Brush the edges of the dough circle with some water, press the edges together and create a half circle, sealing in the filling. Use a fork and press the edges together so they won’t open when baking. Place close to each other on the baking sheet. Mix the egg and water and brush the empanadas with that mixture. Bake for 16-18 minutes until light golden in color, then take out of the oven and let cool down on a wire rack.
- 4. For the sauce add the parsley, basil, garlic, and chili to a mixer and mix until you got a green paste. Add the vinegar and water and continue mixing. Add the oil and mix until everything is well combined. Season with salt, lime juice, and soy sauce. Serve the empanadas still a bit warm or cold with the chimichurri sauce.

- To make the dough: In a bowl, combine flour, baking powder, and salt. Using your fingers, cut in butter until mixture is crumbly. Add just enough cold water so dough comes together.
- Turn out dough onto a lightly floured work surface, and divide in half. Knead each half 2 or 3 times to form smooth balls. Cover dough balls with plastic; let stand until slightly risen, 20 minutes.
- Roll out half of the empanada dough very thinly, 1/4" thick or less. Cut 4 to 5 inch circles of dough. Place about 2 teaspoons of the chicken mixture inside each circle of dough. Fold the dough in half over the filling, making a half moon shape, and pinch the edges together to seal in the filling. Fold curved edges under and crimp decoratively.
