This is a recipe my mother made when we were children. It was so moist it never needed frosting. Mom would use a paper doily to make a pretty powdered sugar design on the top. I have found a couple online, but they just were not as good.

1 1/2 cups flour
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking soda
3 tablespoons baking cocoa
6 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla
1 cup cold water

Steps:

  • Preheat oven to 350 degrees.
  • Thoroughly mix dry ingredients in an ungreased 8 x 11" pan. Make 3 wells in the dry mixture and pour the vegetable oil in one, the vanilla in a different one and the vinegar in the last one. Pour the cold water over all and stir with fork until well blended.
  • Bake for 30 minutes. Cake is done when center springs back when lightly touched. Do not test with a toothpick or knife.

I thought this recipe looked familiar when I first saw it and I was right. My Mom used to make this cake for every birthday celebrated in the house but she called it wacky cake. What makes it wacky? There are no eggs or dairy in it.

1 1/4 cups all-purpose flour
1/3 cup unsweetened cocoa
1 cup sugar
1/2 teaspoon salt
3/4 teaspoon baking soda
1 cup water
1/3 cup canola oil
1 teaspoon vanilla extract
1 teaspoon cider vinegar

Steps:

  • In an 8x8 inch square baking pan combine the flour, cocoa, sugar, salt and baking soda. Mix until it is completely light brown.
  • When it is mixed, make 4 dents in the mixture with a spoon, 2 large dents and 2 small dents.
  • Pour the water into one of the large dents.
  • Pour the oil into the other large dent.
  • Pour vanilla into one of the small dents.
  • Pour vinegar into the other small dent.
  • Stir until well moistened.
  • When batter is well mixed, smooth it out and spread into place with a spatula.
  • Bake at 325 degrees for 30 minutes.
  • Cool the cake in the pan for 30 minutes before cutting it into squares.

This was one of my grandpa's favorite things that my grandma made. It looks like an unfrosted chocolate cake but the secret in the pudding layer hiding underneath!

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
4 1/2 tablespoons baking cocoa, divided
1 3/4 cups sugar, divided
1/2 cup milk
1 teaspoon vanilla
2 tablespoons margarine, melted
1/2 cup chopped nuts (optional)
1 cup boiling water (water must be boiling hot!)

Steps:

  • Preheat oven to 350 degrees and grease an 8x8 pan.
  • Sift together flour, baking powder, salt, 1 1/2 tbsp cocoa, 3/4 c sugar.
  • Mix into dry mixture, milk, vanilla, melted margarine and nuts.
  • Pour into prepared pan.
  • Mix 1 c sugar, 3 tbsp cocoa and 1 c boiling water. Pour over the top of the cake.
  • Bake for about 35 minutes. Test for doneness by pressing top of cake with your finger to get a "bounce".
  • Cool completely before cutting.
  • My grandma always served it with a little cream poured over the top or with a scoop of vanilla ice cream.

Based on a recipe from The Wholesome Junk Food Cookbook by Laura Trice. She says of this recipe, "This eggless cake is called a one pan cake because everything is mixed together in the baking pan. It makes for easy cleanup." VARIATION: To make 14 whoopie pie halves, double the recipe except for the water. Drop ¼ cup batter on a baking sheet lined with wax paper and bake for about 20 minutes.

2 teaspoons baking powder
1 (4 ounce) bar sweet chocolate, grated
1 cup chopped walnuts
1 cup butter
2 cups white sugar
4 eggs, beaten
1 teaspoon vanilla extract
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Reserve 1 tablespoon of the cake flour. Sift together remaining flour and baking powder. Set aside.
  • Toss the chocolate and walnuts with reserved 1 tablespoon of flour. Set aside. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Fold in the chocolate and walnuts.
  • Pour batter into prepared pan. Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool before frosting.

GRANDMA'S "WESTERN STYLE PANCAKES"... AND/OR WAFFLES!

My grandma made these pancakes since I was a little girl, then passed on the recipe to my mom and dad (it still remains one of the only things Dad claims that he can actually make), who passed it on to me. After tasting these, I have the hardest time eating pancakes from a mix! I also double the recipe and make waffles, flash-freeze them, and store them in a zipper-lock bag - my family likes these better than the frozen boxed ones!

2 cups flour
8 teaspoons baking powder (levelled teaspoons... but I use about 7)
1/4 cup sugar
1/4 teaspoon salt
2 eggs
2 cups milk
1/3 cup oil

Steps:

  • Combine flour, baking powder and salt in a large bowl.
  • In a separate bowl, beat eggs and add wet ingredients *and sugar*. (If you add sugar to the dry ingredients though, it's still good -- for some reason it seems better if it's added to the wet ones, though!).
  • Add wet ingredients to the dry, and mix well (by hand).
  • Pour into your waffle maker and follow the waffle maker directions, or pour approximately 1/4 cup onto a hot griddle (I use an electric griddle at approximately 350 degrees).
  • When the top of the pancakes start to bubble and the bubbles start to pop, they are ready to flip. Flip the pancakes and cook until the other side has cooked and the pancakes are golden brown.
  • Serve with whipped cream and strawberries or with butter and maple syrup --
  • Enjoy! (Mmmmm!).
