Wassail image

Wassail is a hot mulled cider, traditionally enjoyed during wassailing, an English Christmas drinking ritual intended to ensure a good apple harvest the following year. The whole baked apples floating on top lend a homey feel to the warming festive drink. Serve as is -- or top with a splash of brandy if you like. It's perfect for a big family gathering or holiday party.

1 cup firmly packed light brown sugar
6 Fuji apples, cored
Four 11.2-ounce bottles English hard cider, such as Strongbow
Two 12-ounce bottles English pale ale, such as Bass
2 cups apple cider
1 cup Madeira
10 whole cloves
10 whole allspice berries
4 cinnamon sticks, plus more for serving
2 wide strips orange zest, plus orange wedges, for serving
2 wide strips lemon zest
1/2 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg

Steps:

  • Preheat the oven to 350 degrees F.
  • Spoon the sugar into the center of each apple, then place in a 9-inch square baking dish with 1 cup water. Bake until the apples are very tender, 1 hour to 1 hour 30 minutes.
  • Meanwhile, add the hard cider, pale ale, apple cider and Madeira to a large pot and bring to a gentle simmer over medium heat. Put the cloves, allspice, cinnamon sticks, orange zest and lemon zest in a piece of cheesecloth and tie it closed. Add to the pot along with the ginger and nutmeg. Reduce the heat to low and steep the mixture until the liquid is well spiced and fragrant, about 1 hour.
  • Add the cooked apples and any of their juices to the pot and stir to combine. Remove the cheesecloth. Serve warm in individual mugs with an orange wedge and cinnamon stick.

5 (25-ounce) bottles sparkling apple cider
1 (64-ounce) carton mango juice

Steps:

  • In a punch bowl or pitcher large enough to blend 7 quarts, pour the rums, sparkling apple cider, and mango juice. Stir to blend liquids. With a ladle, pour wassail into individual goblets.

6 small Fuji apples, cored
1 cup brown sugar
1 cup water
72 ounces ale
750 ml Madeira
10 whole cloves
10 whole allspice berries
1 cinnamon stick, 2-inches long
1 teaspoon ground ginger
1 teaspoon ground nutmeg
6 large eggs, separated

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the apples into an 8 by 8-inch glass baking dish. Spoon the brown sugar into the center of each apple, dividing the sugar evenly among them. Pour the water into the bottom of the dish and bake until tender, about 45 minutes.
  • Pour the ale and Madeira into a large slow cooker. Put the cloves, allspice, and cinnamon into a small muslin bag or cheesecloth, tied with kitchen twine, and add to the slow cooker along with the ginger and nutmeg. Set the slow cooker to medium heat and bring the mixture to at least 120 degrees F. Do not boil.
  • Add the egg whites to a medium bowl and using a hand mixer, beat until stiff peaks form. Put the egg yolks into a separate bowl and beat until lightened in color and frothy, approximately 2 minutes. Add the egg whites to the yolks and using the hand mixer, beat, just until combined. Slowly add 4 to 6 ounces of the alcohol mixture from the slow cooker to the egg mixture, beating with the hand mixer on low speed. Return this mixture to the slow cooker and whisk to combine.
  • Add the apples and the liquid from the baking dish to the wassail and stir to combine. Ladle into cups and serve.

Apple Cider (alcoholic Version) or Apple Juice (The Sober Variety)
3 Gala Apples
1 Large Orange
Cloves
Nutmeg
Ground Ginger (Spice will do!)
Vanilla Pod (If you are adventurous but Vanilla Extract works just as well and comes in larger quantities to make more)
Cinnamon Sticks

Steps:

  • Take the orange peel it and stud it with cloves (13 is enough) dice up 3 small apples and sprinkle them with sugar roast them at 180c in the oven for 30-40 minutes
  • Place the apple juice/cider in a saucepan add the orange peels vanilla extract, 2 Cinnamon sticks, orange peel, nutmeg and ground ginger, simmer slowly until warm
  • When roasted add to the apple juice/cider and spice mixture and simmer until hot
  • Pour and serve pop a cinnamon stick in the glass with some of the roasted apple slices and one clove stick
  • Some brandy can also be added into the alcoholic mix for an extra kick

2 ¼ cups white sugar
4 cups water
2 cinnamon sticks
1 slice fresh ginger root
4 cups orange juice
2 cups lemon juice
8 cups apple juice
8 whole allspice berries
1 tablespoon whole cloves

Steps:

  • In a large saucepan, combine sugar and water. Boil for 5 minutes. Remove from heat, and add cinnamon sticks, allspice berries, cloves, and ginger. Cover and let stand in warm place for 1 hour.
  • Strain liquid into a large pot. Just before serving, add juices and cider and quickly bring to boil. Remove from heat and serve.

4 cups apple cider
1/2 cup firmly packed dark brown sugar
1/2 cup dark rum
1/4 cup brandy
2 tablespoons Grand Marnier, divided
1/4 teaspoon cinnamon
1/4 teaspoon clove
1/8 teaspoon allspice
1/2 lemon, thinly sliced
1/2 orange, thinly sliced
1 cup heavy cream
2 tablespoons confectioners' sugar
freshly grated nutmeg

Steps:

  • Whip heavy cream together with confectioner's sugar until soft peaks form.
  • Flavor with 1 TBSP Grand Marnier.
  • Set aside in refidgerator.
  • Heat apple cidar and brown sugar together in a large sauce pan to a boil.
  • Stir until sugar dissolves.
  • Remove from heat.
  • Add rum, brandy and remaining Grand Marnier.
  • Stir in spices.
  • Add lemon and orange slices.
  • Heat over medium heat for 2 minutes.
  • Do not boil.
  • Pour into champagne glasses.
  • Top each glass with whip ceam and freshly grated nutmeg.
