2 tablespoons dried Italian seasoned breadcrumbs
1/8 teaspoon paprika
1 teaspoon dried parsley
1/2 teaspoon garlic powder
1/4 teaspoon fresh ground pepper
4 (1/4 lb) boneless skinless chicken breast

Steps:

  • Preheat oven to 400 degrees.
  • In resealable plastic bag, combine cheese, crumbs and all seasonings; shake well.
  • Transfer mixture to plate; dip each chicken breast in cheese mixture, turning to coat all sides.
  • Arrange on nonstick baking sheet.
  • Bake until chicken is cooked through, 20-25 minutes.

This delectable low-calorie chicken dish is packed with flavour but not calories and is perfect for anyone following the 5:2 Diet as well as Weight Watchers. It's a favourite meal for me and my husband when we are on a diet, when I serve it with lots of steamed greens and a grilled tomato. For a gluten free version use crushed cornflakes in place of the breadcrumbs. NB: Please note these don't have any oil brushed on them as they are for a very low-calorie diet! If you are NOT worried about the extra calories, please brush the chicken fillets with a little oil before baking, or pan-fry them in a little oil or butter.

2 boneless skinless chicken breasts (about 250g/8ozs)
2 tablespoons breadcrumbs
2 tablespoons grated parmesan cheese
1 teaspoon garlic granules or 1 teaspoon garlic powder
1 teaspoon dried oregano
salt and pepper
vegetable oil (optional for those not on a calorie controlled diet)

Steps:

  • Beat the chicken breasts with a mallet until they are flat. This is best done between cling-film.
  • Mix the rest of the ingredients together and then put them into a large bowl.
  • Dip the chicken schnitzels in the seasoned crumbs and then place the onto a non-stock baking tray.
  • Bake at 200C/400F/Gas 6 for between 20 and 25 minutes or until the chicken is cooked and the crumb coating is crisp and golden.
  • Serve immediately with a lemon wedge, some grilled tomatoes and seasonal greens.

This is a very fast and delicious meal. You can freeze flattened chicken breasts for quick meal idea. My husband made this for me and I insisted on putting it on here for all of you to try.....I LOVE IT. Also, try using 1/2 bread crumbs and 1/2 panko instead of one or the other. It adds great texture.

2 chicken breasts, thinly flattened
2 eggs
1 tablespoon water
1/2-1 cup seasoned bread crumbs or 1/2-1 cup panko breadcrumbs
1/4-1/2 cup butter

Steps:

  • Flatten chicken breasts very thin between celophane and set aside.
  • Beat eggs and water.
  • Dip chicken breasts into egg mixture
  • Dip chicken in bread crumb mix.
  • Melt butter in skillet.
  • Fry chicken 5 minutes on each side or until brown and crispy.

1 lb boneless skinless chicken breast
1 lemon, juice of
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon celery salt
1 egg
1 teaspoon water
1/2 cup fine dry breadcrumb

Steps:

  • Cut chicken horizontally into 1/4 inch thick slices. Place between 2 pieces of wax paper and flatten chicken. Sprinkle with lemon juice: let stand 10 minutes.
  • In shallow dish combine flour, salt, thyme and celery salt; mix well.
  • In another shallow dish, lightly beat egg with water. Dip chicken into flour, then into egg, then into bread crumbs. Place on lightly greased baking sheet.
  • Bake at 400 degrees F/200 degrees C for 10-15 minutes or until chicken is no longer pink.

I love crumbed chicken, I came up with this a few years ago for something new. It was a hit and we love it!

Number Of Ingredients 7

4 chicken breast fillets
1 cup flour
1 egg
1 tablespoon water
1/3 cup prepared curry paste (your choice, I like a mild curry)
2 cups breadcrumbs
1 cup vegetable oil

Steps:

  • Place your hand on each fillet and CAREFULLY slice them length ways vertically, repeat with each fillet (so you get 8 thinner fillets).
  • Place the flour in one medium sized bowl and the bread crumbs in another.
  • Place the egg, water and curry paste in a third bowl and whisk together with a fork.
  • Dredge each peice of chicken in the flour, then the curry/egg mix and finish with the crumbs. Repeat with all 8 fillets. (This can be done ahead of time).
  • In a large pan or skillet heat the oil and shallow fry the chicken until golden on both sides and cooked through (about 8 minutes).
  • Serve and enjoy!
