1 cup(s) Whole wheat flour
2 tsp(s) Baking powder
1 tsp(s) Table salt
5.333 tbsp(s) Corn oil
3 tbsp(s) Honey
1 large Raw egg(s) beaten
1 cup(s) Fat free skim milk
0.75 cup(s) Uncooked scallion(s) chopped
1 medium Jalapeño pepper(s) seeded and finely chopped (do not touch seeds with bare hands)

Steps:

  • Preheat oven to 350ºF and coat a 12-hole muffin tin with cooking spray or muffin liners.
  • Combine cornmeal, flour, baking powder and salt in a large bowl.
  • In a separate bowl, combine oil, honey, egg and milk.
  • Create a well with a spoon in the middle of cornmeal mixture and pour milk mixture into well; mix until just combined. (Do not over beat.) Fold in scallions and jalapeño.
  • Drop heaping tablespoons of batter into muffin holes until each is about 2/3 to 3/4 full. Bake until tops turn golden, about 20 to 25 minutes. Yields 1 muffin per serving.

1 (11 ounce) can whole kernel corn, drained
3/4 cup 1% low-fat milk or 3/4 cup skim milk
1/2 cup egg substitute (or 2 egg whites and 1 egg yolk)
1 tablespoon vegetable oil
2 large egg whites
cooking spray

Steps:

  • Combine dry ingredients, bell pepper and corn in a bowl.
  • Stir well and make a well in the center.
  • Combine milk and next 3 ingredients, stir well and add to flour mixture, stir until moist.
  • Pour into sprayed muffin pan or cast iron pan.
  • Bake 375 for 20 minutes for muffins.
  • Bake 375 for 25 minutes in a cast iron pan.

Fresh corn provides sweetness and crunch in these corn muffins, while reduced-fat cheddar enriches them with savoury goodness. You could also use canned corn for similar crunch if fresh isn't available or at its peak. The jalapeño slices that top the muffins cue folks in on the flavour profile, but you can just chop all of the peppers and stir them into the batter. For a little heat, leave the seeds in half of a pepper; for more, leave them in one whole pepper or both of them.

Steps:

  • Preheat oven to 450°F. Cut 12 thin slices from 1 jalapeño; set slices aside. Seed the rest of the jalapeño and the other jalapeño and finely chop.
  • Coat a medium nonstick skillet with nonstick spray. Heat pan over medium-high heat. Add chopped jalapeño and corn; sauté until corn begins to brown, about 4 minutes.
  • In a large bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and baking soda. In a medium bowl, whisk together yogurt, oil, and eggs. Add yogurt mixture to cornmeal mixture and stir just until combined. Fold in corn mixture and cheese.
  • Divide batter evenly among 12 muffin cups coated with nonstick spray. Arrange 1 jalapeno slice onto top of batter in each muffin cup. Bake at 450°F until a wooden pick inserted in center comes out clean, 13 to 15 minutes. Serve warm.

2 1/2 cups frozen corn kernels (no need to thaw frozen corn) or 2 1/2 cups fresh corn (no need to thaw frozen corn)
1 tablespoon all-purpose flour
1 cup skim milk
1/8 teaspoon table salt (or more)
1/8 teaspoon black pepper, freshly ground (to taste)

Steps:

  • Melt butter in a large skillet over medium heat. Add scallions and sauté until soft, about 3 minutes. Add corn and sauté 1 minute to heat through (or slightly longer if using frozen corn). Add flour and stir to coat corn and scallions. Add milk and bring to a simmer.
  • Reduce heat to low and cook, uncovered, until mixture thickens, about 8 to 10 minutes. Season to taste with salt and pepper. Yields about 1/2 cup per serving.

1 cup yellow cornmeal
1 cup all-purpose flour
2 teaspoons baking powder
3/4 teaspoon table salt
1/2 teaspoon baking soda
1 (14 3/4 ounce) can cream-style corn
1/2 cup buttermilk
2 large egg whites
2 teaspoons corn oil

Steps:

  • Preheat oven to 400ºF. Coat an 8-inch square cake pan with cooking spray.
  • Combine cornmeal, flour, baking powder, salt and baking soda in a large bowl. Mix well with a fork, then make a well in the center; set aside.
  • Combine creamed corn, buttermilk, egg whites and oil in a medium bowl; mix until blended. Fold mixture into dry ingredients; mix until blended. Pour batter into prepared pan and smooth the top.
  • Bake until a wooden pick inserted near the center comes out clean, about 20 minutes. Allow to cool in pan on a wire rack for 10 minutes. Remove from pan; cool completely before cutting into 8 squares.

A great basic recipe for cornbread that's very low in sugar. If you like sweeter cornbread, you'll want to add a bit more or plan to drizzle it with honey when you eat it.

1-1/4 cups yellow cornmeal
3/4 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1-1/4 cups low-fat buttermilk
1 large egg

Steps:

  • Position an oven rack in the center and heat your oven to 400F degrees. Spray an 8-inch square (or 9-inch round) baking pan with nonstick cooking spray.
  • In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda and salt.
  • In a small bowl, beat together the buttermilk and egg until they're well blended.
  • Add the buttermilk mixture to the cornmeal mixture and stir just until everything is moistened. (Don't overmix or your cornbread will be tough.)
  • Pour the batter into the prepared pan and spread it out evenly.
  • Bake in the center of the oven until your cornbread is golden and a toothpick inserted in the center comes out clean, 20-25 minutes.
  • Remove from the oven and let cool in the pan on a wire rack for about 10 minutes.
  • Cut into 12 pieces.
  • Serve warm.

1 cup blueberries
1 1/3 cups all-purpose flour
1/2 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
2 egg whites
1/2 cup Splenda granular, sugar substitute
1 egg
2 tablespoons applesauce
1 cup skim milk
1 tablespoon skim milk
1 cup confectioners' sugar
1 teaspoon grated lemon zest

Steps:

  • Preheat oven to 375. Grease and flour a cupcake pan.
  • Toss blueberries with 1 tbs. flour.
  • Mix together remaining flour, cornmeal, baking powder and salt.
  • On medium-high speed, beat the 2 egg whites to stiff peaks.
  • On low, beat in the extra egg and applesauce.
  • Alternately beat in flour mixture and 1 cup milk.
  • Fold in blueberries.
  • Divide among the cupcake pan. Bake 25 minutes , until toothpick inserted comes out clean.
  • Cool in pan for 10 minutes. Remove from pan and put them on a cooling rack.
  • For the topping, mix confectioner's sugar, 1 tbs milk and lemon zest. Drizzle over completely cooled muffins.
  • These bake wonderfully and are so much better for you than the high fat and calorie bakery muffins!
