Steps:
- Trim fat from steak.
- Slice steak diagonally across grain into 1/4 inch wide strips.
- Place a non-stick skillet over medium high heat until hot.
- Add steak; cook 3 minutes.
- Drain well.
- Place skillet over medium-high heat until hot.
- Return steak to skillet.
- Add mushrooms, onion, and garlic; saute 2 minutes.
- Add beef broth and next 5 ingredients; bring to boil.
- Cover, reduce heat, and simmer 50 minutes or until meat is tender.
- Remove from heat; stir in sour cream.
- Spoon over noodles; sprinkle with parsley.
- Serving size approximately 1 1/4 cup steak mixture and 1/2 cup noodles.

Steps:
- Remove any fat and gristle from the roast and cut into strips 1/2-inch thick by 2-inches long. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
- Melt 1 tablespoon butter in a large skillet over medium heat. Add mushrooms and green onions and cook, stirring occasionally, until mushrooms are browned, about 6 minutes. Remove to a bowl and add 1 tablespoon butter to the skillet. Cook and stir one half the beef strips until browned, about 5 minutes, then remove to a bowl. Repeat with the remaining butter and beef strips. Pour wine into the hot skillet and deglaze the pan, scraping up any browned bits.
- Combine flour and 1/4 cup beef broth in a jar with a tightly fitting lid and shake until combined. Stir into the skillet, whisking until smooth. Stir in the remaining broth and mustard, then return the beef to the pan. Bring to a simmer. Cover and simmer until the meat is tender, about 1 hour.
- Stir in the prepared mushrooms and the sour cream five minutes before serving. Heat briefly and season with salt and pepper.

Steps:
- In med. skillet, heat 2 tsp oil; add chicken.
- Cover over med.-high heat, stirring frequently, until golden brown.
- Remove chicken from skillet; set aside.
- In same skillet, heat remaining 2 tsp oil; add mushrooms and onion. Cook stirring frequently, until all liquids has evaporated and onions are golden brown.
- In small bowl, with wire whisk, combine broth and flour, blending until flour is dissolved; strain and add to skillet. Stirring constantly, bring liquid to a boil over high heat; reduce heat to low. Simmer 10 minutes, stirring frequently.
- Stir reserved chicken into broth mixture; simmer 5 minutes.
- Remove skillet from heat; stir in sour cream, red wine vinegar, mustard, and pepper.

- Wrap steak in heavy duty plastic wrap; freeze for 30 minutes.
- Unwrap steak; cut steak diagonally across the grain into 1/8 inch thick slices.
- Place steak, onion, and next 7 ingredients in a 3 quart electric slow cooker.
- Combine flour and broth in a bowl; stir with a whisk until blended.
- Add broth mixture to cooker; stir well.
- Cover and cook on LOW heat for 8 hours or until tender.
- Turn slow cooker off; remove lid.
- Let stand 10 minutes;.
- Stir in sour cream; blend well.
- Serve stroganoff over noodles.

Very similar to the beef stroganoff my mum made when I was little. No cream of mushroom soup here!! I use a good amount of beef broth, and often more sour cream, which makes it very saucy. But hey, I like it that way!

- Preheat a large dutch oven, and add olive oil. Brown the beef, in batches if you have to, setting aside in a bowl when browned.
- In the same dutch oven cook the green pepper and onions for one minute, adding more oil first if necessary. Add the sliced mushrooms, breaking them up of the pieces are too large. Cook for 2-4 minutes, until mushrooms are softened.
- Add the 3 cups beef broth, worchestershire sauce, paprika, thyme, and salt. Add the beef back into the pot. Broth should cover the beef.
- Bring to a boil, cover and simmer for about an hour until beef is tender.
- Mix the flour and the 1/2 cup beef broth with a whisk until smooth. Add to the pot and stir until thickened. Add the sour cream, adjusting to taste.
- Remove from heat and serve over mashed potatoes. Or egg noodles if you must.
