These delightful pancakes are zero points on WW Blue and Purple and 2 points per serving on Green.

2 eggs
2 bananas
1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp vanilla extract
2-3 T pancake mix (optional, see note) (such as Kodiak or whole wheat flour)

Steps:

  • Preheat griddle to med heat.
  • Mix all ingredients together until well combined.
  • Using 1/3 measuring cup, pour out enough batter for 6 pancakes.
  • Cook about 2 minutes on each side checking frequently. They can burn easily.
  • Makes 6 pancakes. A serving is 3 pancakes.

Bound simply with beaten eggs and containing no flour or starch, they get crisp and browned on the outside and have a creamy, custardy interior. Because the fruit has its own natural sweetness, there's no need for any sugar in the batter. It's also the best way to use up super-ripe bananas. You can simplify the filling by leaving out the spices, if desired. Then just garnish the pancakes with some fresh blueberries to help tie everything together and create the prettiest presentation.

Steps:

  • In a medium bowl, mash 1 1⁄2 bananas; slice remaining banana and set aside for serving. Into bowl with mashed bananas, add eggs, vanilla, baking powder, cinnamon, and nutmeg and whisk until blended.
  • Coat a large nonstick skillet with nonstick spray; set over medium heat. Into skillet, spoon 2 tbsp batter per pancake (you may need to do this in 2 batches). Cook until edges are set and bottoms are golden, about 1 minute. Carefully flip pancakes with a thin spatula and cook on other side until bottoms are golden, about 1 minute.
  • Serve pancakes topped with reserved sliced bananas and blueberries and dusted with powdered sugar.
  • Serving size: 8 pancakes, 1⁄3 cup fruit, and 1 tsp sugar

3/4 cup whole wheat flour
1/3 cup unsweetened applesauce
1/2 tablespoon baking powder
1/2 cup fat-free buttermilk or 1/2 cup skim milk, with 1/2 tsp lemon juice mixed in
1 egg white, lightly beaten
1/2 tablespoon cinnamon
1 -1 1/2 teaspoon no-cal artificial sweetener

Steps:

  • Mix all ingredients until smooth.
  • Note: Batter will be kinda thick. If it is too thick for you, add a tablespoon of water at a time until desired consistency.
  • Heat a large skillet or griddle that has been sprayed with non-stick butter flavored cooking spray.
  • Spoon two good sized heaping tablespoon fulls of the batter into the skillet per pancake and spread out slightly. Let cook like a regular pancake and then flip, allowing to cook another minuet or so. Serve!
