3/4 cup low-fat buttermilk
2 tablespoons canola oil
1 cup all-purpose flour, separated
1 tablespoon all-purpose flour, separated
1 cup whole wheat flour
1/3 cup golden raisin
4 teaspoons caraway seeds
1 teaspoon baking powder
1/2 teaspoon salt
nonstick cooking spray

Steps:

  • Position a rack in the center of the oven and preheat the oven to 325ºF.
  • Whisk the buttermilk and oil in a medium bowl; set aside.
  • Whisk 1 cup all-purpose flour, the whole-wheat flour, raisins, caraway seeds, baking soda, baking powder and salt in a large bowl. Stir in the buttermilk mixture with a wooden spoon until thoroughly moistened.
  • Dust a clean, dry work surface with the remaining 1 teaspoon flour. Turn the dough out onto the work surface and knead for 30 seconds, just until it coheres. Shape into a round loaf about 6 inches in diameter and 1 inch high. Use a sharp knife or a new razor blade to cut a "X" about 1/2-inch deep in the top of the loaf.
  • Lightly spray a baking sheet with nonstick spray, place the loaf on it, and bake until lightly browned and crusty, about 45 minutes. Transfer to a wire rack to cool for at least 15 minutes before slicing.

Irish Soda bread that is quick and easy. The light rye flour gives it a flavour similar to the bread served at the Outback Steak House . Great accompaniment for soups and stews.

2 cups light rye flour or 2 cups whole wheat flour
2 cups all-purpose flour
2 teaspoons double-acting baking powder
1 teaspoon salt
1 teaspoon baking soda
2 tablespoons brown sugar
1 large egg, beaten
2 cups buttermilk
oatmeal (large flakes)

Steps:

  • Combine the flours, baking powder, salt, baking soda, and brown sugar in a large bowl.
  • Mix the egg with the buttermilk and stir into the dry ingredients just to blend.
  • Dust the counter with oatmeal flakes.
  • Turn out dough and knead about 10 times to cover with flakes and form a round ball.
  • Place on buttered cookie sheet, cut a cross lightly on top of loaf and bake at 375 for 45-50 minutes or until it sounds hollow when tapped on the bottom.
  • If you don't want to use rye flour, use whole wheat.
  • It works just as well.

This recipe has been adjusted for high altitude -- if cooking at sea level the baking soda needs to be increased to at least 2 teaspoons and the oven temp lowered to 350.   • Preheat oven to 375 degrees F.
  • Spray cookie sheet with cooking spray or grease well.
  • Combine first 5 ingredients (flours-salt) in a large bowl.
  • Cut in butter with two knifes until butter is pea-sized.
  • Stir in buttermilk.
  • Stir in raisins.
  • Turn dough out onto floured bread board.
  • Knead for one minute and shape into a large round disk.
  • Cut and"X" in th top and place on prepared pan.
  • Bake 45- 55 minutes or until done.

100% Whole Wheat Irish Soda Bread image

I just tried this recipe for the first time, and I immediately wanted to put it online so that I would always be able to find it. It's from La Leche League's cookbook, _Whole Foods for the Whole Family_. Of course a whole wheat bread is always different from a white flour bread, but I was amazed at how well this recipe captures the taste and texture of Irish soda bread. It's dense and crumbly and a bit sweet, and very delicious. It's also quite easy to make. It's a "quick bread" recipe -- no yeast, no rising -- but you shape it into round loaves, and it feels more "bread-y" to me than most quick breads. I can't wait to make it again. Enjoy!

4 cups whole wheat flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/4 cup butter (4 tablespoons)
1 1/4 cups raisins or 1 1/4 cups currants
1 egg, beaten
1 3/4 cups low-fat buttermilk (or substitute 1 1/2 C plain yogurt and 1/4 C milk)
1 tablespoon molasses or 1 tablespoon honey

Steps:

  • In a big mixing bowl, combine flour, baking powder, soda, and salt.
  • Cut in butter until it reaches a coarse meal consistency. (I started with two knives, then finished the process with my fingers.).
  • Add raisins.
  • Combine liquids separately. Add liquids to dry ingredients.
  • Mix until a soft dough forms. At some point it will become hard to stir it, and it will be better to use your hands. Kneading the dough is the best way to combine all the ingredients completely -- knead it gently until it is smooth (about 3 minutes). You can knead it right there in the mixing bowl.
  • Shape the dough into two balls, and place them on a greased cookie sheet. Flatten each ball slightly and cut an X about 1/4" deep in the top of each loaf.
  • Bake at 375 for 35 minutes.

A friend of mine sent me this recipe. It is easy to make and very tasty and nutritious. I visit Ireland every couple of years, and this is much like what we enjoy for breakfast.

4 cups whole wheat flour
2 cups unbleached all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon white sugar or 1/2 teaspoon brown sugar
1 cup skim milk
1 teaspoon lemon juice

Steps:

  • Mix milk and lemon.
  • Combine dry ingredients.
  • Add milk and lemon mixture (buttermilk may be used instead).
  • On floured bread board (I use whole wheat) knead dough for no more than a minute.
  • Shape dough into a circle with a height of about two inches.
  • Place on lightly oiled baking sheet.
  • With (sharp) floured knife, cut an x nearly halfway through the dough.
  • Bake about 40 minutes in 400F degrees degree oven.
  • Dough should sound hollow when tapped with knuckles or handle of spoon.
  • Place loaf on wire rack and let rest at least an hour before slicing.

  • Preheat you oven to 350. Prep a baking sheet for nonstick. WW suggests spraying with a non stick spray and then lightly dusting with flour. I like to use parchment paper.
  • Next, in a large mixing bowl, combine your flour, sugar alternative, baking powder, baking soda and salt. I like to use a whisk to mix my dry ingredients.
  • Cut the pieces of butter into the dry mix until batter is somewhat crumbly in texture. If you are using oil, simply stir it in. If adding the optional ingredients, do so now by gently stirring them in. If adding the optional ingredients, do so now by gently stirring them in.
  • Now add the buttermilk (or yogurt), stirring gently again until the mix is somewhat moistened, avoiding over-mixing is essential. Knead the dough into a ball while still in the bowl. It should take about five or six kneads until a 6-inch ball forms. Then cut an “X” on the top of the bread about 1/2″ deep.
