I made this for Russ and me the other night and was very pleased with the result. We ate it over horseradish mashed potatoes. I cooked this in our electric frying pan (skillet), but you could do it on the stove top on low.

2 tablespoons oil
3 onions, sliced
3 garlic cloves, crushed
100 g pancetta, cut into small dice
2 red chilies, chopped finely
800 g diced beef (we used a blade roast)
2 green capsicum, sliced (bell peppers)
1 (400 g) can chopped tomatoes
1/2 cup white wine
1 cup water
3 teaspoons sweet paprika
1 teaspoon smoked paprika (if you don't have it use sweet)
1 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Heat the oil and cook the onions, garlic and pancetta until the onions are soft (about 10 minutes).
  • Add the chilies and beef and cook until the beef changes colour and browns a little.
  • Add the remaining ingredients and cook on a low setting (just simmering) for 1 ½ hours or until very tender. Add a little extra water if it ever looks like catching.

8 ounces beef round steak, cut into thin strips
1 cup onion, thinly sliced
1 cup mushroom, thinly sliced
1 garlic clove, crushed
1/2 cup nonfat beef broth
1 tablespoon tomato paste
2 tablespoons paprika
1 teaspoon grapeseed oil
1/2 cup nonfat sour cream

Steps:

  • Heat a non-stick fry pan.
  • Add oil and saute the beef til browned, remove and set aside.
  • Add the onions, garlic and mushrooms. Saute for 3 minutes.
  • Add the paprika and saute a further minute.
  • Return the beef to the pan, add the beef broth and tomato paste. Bring to boil and simmer lightly 5 minutes.
  • Remove the pan from the heat add the sour cream.
  • Over low heat, gently bring to a simmer but do not boil.
  • Season to taste with salt and pepper.

low-fat cooking spray
500 g lean beef (all visibile fat removed, cut into large chunks)
4 slices lean bacon (all visibile fat removed, cut into large chunks)
4 medium onions (peeled and cut into vertical cunks)
4 carrots (cut into 1 inch chunks)
400 g plum tomatoes
1 tablespoon tomato paste
2 bay leaves
2 beef bouillon cubes
1 teaspoon paprika
1 teaspoon mustard
1 teaspoon caraway seed
hot water

Steps:

  • in a non stick frying pan fry the bacon until crisp, add the meat and brown on all sides in batches.
  • place all of the veg in bottom of slow cooker put meat on top, add herbs and stock cubes. pour in enough hot water to come up just meet the veg and meat.
  • cook for 6 hours on high in slow cooker.
  • you can add other ingredients like garlic, red wine, beer etc just remeber to syn point it.

This has got to be one of the best marinades I have used. Best part....it has no oil!!! The ingredients balance out each other so nicely that it is such a pleasure to taste. I make it up alot in the summer when the mint from my garden is plentyful. This recipe could be used on pork tenderloin quite successfully. This is 7 points per serving

2 tablespoons soy sauce
2 tablespoons brown sugar (or Splenda)
1 tablespoon lime juice

Do you have your boss, MIL or really good friends coming for dinner and you want to impress them? This side dish will certainly fit the bill! I usually coral my friends into making the dish (with me peeking over the shoulder), as it needs constant attention. So while I am doing the finishing touches to the dinner, friends are (literally) stirring the pot. We have had some lively conversations doing this recipe, with one time, my friend kept "splashing" her wine into the pot. Every time though, it has turned out perfectly. This will serve 4 as a main dish (Weight Watcher 10 points) or 6 - 8 people as a side dish (6 points Weight Watcher)

3 1/2 cups chicken broth
2 teaspoons vegetable oil
1 cup onion, chopped
2 teaspoons garlic, minced
1 cup arborio rice
180 g prawns, peeled, deveined, diced (6 - 7 oz)
75 g goat cheese (2 - 3 oz)
2 tablespoons parmesan cheese, grated
1/4 teaspoon black pepper
1/4 teaspoon salt
1/3 cup fresh basil, chopped
1/2 cup white wine (optional)

Steps:

  • In a medium saucepan, bring broth to a boil. Reduce heat to maintain a simmer.
  • In another large saucepan sprayed with cooking spray, heat oil over medium high heat. Cook onion and garlic for 5 minutes or until onion is softened. (Can be made ahead up to this point).
  • Stir in rice, coating the rice with the garlic-onion mixture. Cook for 1 minute.
  • Add 1/2 cup simmering broth to the rice mixture. Cook, stirring until liquid is all absorbed. Continue adding liquid until all has been absorbed, about 20 minutes.
  • Adjust heat as necessary to maintain a slow bubbling simmer. Taste the risotto before adding the prawns. It should taste creamy, and the rice "al dente".
  • Just before serving main meal, add prawns and goat cheese. Cook for 2 minutes longer or until prawns are cooked through and the cheese has melted. Add the parmasan cheese and pepper.
  • Remove from heat. Add the basil.
  • Options: In some recipes, white wine is added to the broth mixture. Decrease the chicken broth a bit to accommodate the wine, using only about 1/2 cup.

500 g lean stewing beef (In NZ I use topside steak)
1 large onion (roughly chopped)
2 garlic cloves (peeled and finely chopped)
2 cups mushrooms (roughly chopped)
2 tablespoons tomato paste
1 tablespoon paprika
1 1/2 cups water
1/2 teaspoon beef stock powder
1 tablespoon cornflour
2 tablespoons water

Steps:

  • Remove any fat from the meat and cut into cubes.
  • Brown in a little hot oil. Do this in batches to keep from 'stewing'.
  • Return all meat to pan and add onion, garlic, mushrooms, tomato paste, paprika, stock powder and first measure of water.
  • Cover and simmer gently for 1-11/2 hours or until the meat is tender.
  • Mix the cornflour with the 2 Tbsp water and stir into the beef.
  • Heat for a few minutes until thickened.
  • Serve sprinkled with chopped parsley if liked.

1 1/2 cups Fiber One caramel delight cereal (crushed)
4 tablespoons reduced-fat peanut butter (chunky is OK)
1 tablespoon honey
1 (3 1/2 ounce) package sugar-free instant chocolate pudding mix
2 cups skim milk
1 tablespoon Cool Whip Lite

Steps:

  • Mix peanut butter with honey and microwave on high for 20 seconds.
  • Stir in the crushed cereal immediately after removing from microwave.
  • Place mixture in a 9" pie pan and spread flat(with hands)to make the bottom crust.
  • Combine pudding mix and milk in a seperate bowl. After mixing, pour pudding over the prepared crust and refrigerate for 2 hours.
  • Remove from refrigerator and cut into 8 equal size pieces.
  • Top each piece with a tbsp of lite cool whip (optional).

  • Spray large skillet with cooking spray. Heat skillet over medium high heat.
