TUSCAN WHITE BEANS WITH OLIVE OIL

Steps:
- Sort the beans to make sure they are free of stones or other debris. Rinse, then cover with cold water, refrigerate, and soak overnight. The next day, drain the beans, place them in a large pot, and cover with the stock. Bring to a boil, then lower the heat and simmer the beans for 1 1/2 to 2 hours, or until they are tender. Add 1 teaspoon of salt in the final 15 minutes of cooking. The addition of salt earlier in the cooking process will result in tough beans.
- Remove the beans with a slotted spoon and transfer to a large mixing bowl. Add all the remaining seasoning and other ingredients to the warm beans in the bowl and toss together. Adjust the salt and add freshly ground pepper to taste. Serve warm or chilled.
NANA'S YELLOW (WAX) STRING BEANS
My Polish grandmother never used recipes. This so simple dish was the most difficult to duplicate because of it's simplicity. There are versions of this in Polish cookbooks using bread crumbs but they lacked the slightly sweet, butter baked flavor of cracker crumbs that accent the mild taste of the yellow beans. I haven't posted this recipe before because it sounds "too simple" but it's one of my most favorite!

Steps:
- Cook beans in salted boiling water until soft (not crispy) tender and drain.
- Add butter and mix until butter melts.
- Add cracker crumbs, salt and pepper, stir to combine and serve.

TOMATO AND WAX-BEAN SALAD WITH OLIVE-OIL CROUTONS

- Bring a large pot of water to a boil. Add 1 tablespoon salt and beans and return to a boil, then cook until crisp-tender, 30 seconds to 1 minute. Drain and run under cold water, then drain again and pat dry.
- Preheat oven to 375 degrees. On a rimmed baking sheet, toss bread with 1/4 cup oil; season with salt and pepper. Toast, turning occasionally, until golden brown and crisp, 15 minutes. Let cool completely on sheet, about 20 minutes.
- In a large bowl, toss beans, tomatoes, dill, remaining 6 tablespoons oil, and vinegar. Add croutons. Season with salt and pepper; serve, garnished with dill flowers and sprigs.
WHITE BEANS WITH SAGE AND OLIVE OIL

- Place beans in large saucepan. Add enough cold water to cover by 3 inches and let soak overnight.
- Drain beans and return to pan. Add 6 cups cold water, 1/4 cup oil, chopped sage and garlic. Bring to boil. Reduce heat to medium-low. Cover partially; simmer until beans are just tender, stirring occasionally, about 45 minutes. Season with salt and pepper. (Can be made 1 day ahead. Cool. Cover and keep chilled. Rewarm before continuing.)
- Using slotted spoon, transfer beans to bowl. Top with more oil.
WAX BEANS WITH OLIVES

- 1 Snap off the stem ends of the green beans. Bring about 2 quarts of water to a boil in a large saucepan. Add the beans and salt to taste. Cook uncovered until the beans are crisp-tender, 4 to 5 minutes. Rinse the beans under cold water and drain well. Pat dry. Cut the beans into 1-inch pieces. 2 In a skillet large enough to hold all of the beans, melt the butter over medium heat. Add the onion and garlic and cook until tender and golden, about 10 minutes. 3 Stir in the beans, olives, and parsley until heated through, about 2 minutes. Serve hot. From "1,000 Italian Recipes."
