6 -8 lbs watermelon, cut into 2 inch pieces
2 cups cold drinking water
1 tablespoon lime juice
1 tablespoon honey
ice cube
lime, to garnish
mint leaf, to garnish

Steps:

  • Process half of your melon cubes with 2 vup of water.
  • Strain into a pitcher.
  • Repeat with second half of melon and cup of water, strain into pitcher.
  • Stir in lime juice and honey.
  • Fill glasses with ice, and then pour in your watermelon juice.
  • garnish with lime slices and mint leaves.

  • Place 4 cups 1/2 inch-cubed watermelon (about 1 1/4 pounds; lightly smashed) and 6 sprigs mint (lightly crushed) in a pitcher. For still infused water, add 2 quarts of water. For sparkling water, add 1 quart of seltzer during prep and a second quart just before serving. Refrigerate 2 to 4 hours to allow the ingredients to infuse. Stir well and strain, discarding the solids. For serving, add fresh watermelon and mint sprigs for garnish and plenty of ice. The infused water will keep refrigerated for up to 2 days.

  • Now you have the option of dissolving the sugar to prepare a syrup or mixing it directly. If you prefer to dissolve it, just heat up a cup of water. When it's hot, add the sugar and stir until it's completely dissolved. Then, remove it from the heat and put it aside for later.
  • Put chunks of watermelon into a bowl with a high rim or a blender. If necessary, do it in two parts. Also add two cups of water and whisk until the watermelon is completely grinded. Add the remaining water and continue whisking.
  • When you have it, add the dissolved sugar in water that you prepared in step 2 and do not stop whisking until you get the watermelon water. If you have not dissolved the sugar, add it directly and whisk until it is all totally liquid. Add the lemon juice and continue whisking.
