1 pinch coarse salt, or to taste
1 pinch ground black pepper, or to taste

Steps:

  • Gently mix watermelon, tomatoes, mint, onion, and feta cheese in a large bowl.
  • Whisk olive oil, vinegar, salt, and pepper together in small bowl; drizzle over salad and gently toss to coat.

1/2 seedless cucumber
1 pint cherry tomatoes
1/4 seedless watermelon
1 cup fresh mozzarella balls (bocconcini)
1 lime
handful of fresh basil leaves
extra-virgin olive oil
flaky salt and red pepper flakes

Steps:

  • Halve cherry tomatoes, and add to a large serving bowl. Depending on the cucumber's thickness, slice or chop so that pieces are similar in size to the cherry tomato halves, and add to the bowl. Chop watermelon to a similar size, and add about a cup of watermelon cubes to the bowl.
  • Cut the mozzarella in halves or quarters, depending on size, and add them to the bowl, along with the juice of your lime, the basil leaves, a big drizzle of olive oil, a big pinch of flaky salt, and a sprinkle of red pepper flakes.
  • Use a serving spoon to gently toss it all together, then drizzle with a bit more olive oil and eat!

4 cups 1 1/4-inch chunks seedless watermelon
1/4 cup olive oil
2 tablespoon lemon juice
1 tablespoon honey
Kosher salt and freshly ground black pepper
1 1/2 cups feta, cut into 1/2-inch chunks
1/2 cup torn fresh basil leaves

Steps:

  • Put the tomato and watermelon chunks in a bowl.
  • For the honey vinaigrette: Whisk together the olive oil, lemon juice and honey in a bowl, and add salt and pepper to taste.
  • Drizzle vinaigrette over the tomatoes and watermelon, then toss. Transfer to a serving platter. Sprinkle over the feta and basil.

GRILLED WATERMELON AND TOMATO SALAD

This salad is an ode to summer. I love to grill the watermelon after it's been brushed with a little bit of the honey-lime vinaigrette. The sugars from the melon caramelize nicely on the grill and add the best smoky flavor.

2 large cloves garlic
1 large shallot, halved
2/3 cup olive oil
1/4 cup honey
1/4 cup fresh lime juice (from 2 to 3 limes)
Zest of 1 lime (about 1 teaspoon)
Kosher salt and freshly ground black pepper
2 tablespoons salted butter
1 cup pecan halves
2 tablespoons light brown sugar
1 small seedless watermelon (about 9 1/2 pounds)
One 5-ounce container baby arugula
One 16-ounce container Campari tomatoes, cut into wedges
4 ounces feta cheese, crumbled
1/4 cup thinly sliced red onion

Steps:

  • Make the honey-lime vinaigrette: Add the garlic and shallot to a food processor and pulse until minced. Turn off the motor and add the oil, honey, lime juice and lime zest. Process until smooth. Season with salt and pepper. Set aside.
  • Make the salad: Line a baking sheet with parchment paper and set aside. Melt the butter in a large skillet over medium heat. Add the pecans and brown sugar and cook, stirring to coat, until the sugar begins to caramelize, about 3 minutes. Spread the pecans onto the prepared baking sheet and let cool completely, about 20 minutes.
  • Meanwhile, trim the ends from the watermelon. Stand the watermelon on a cutting board, flat-side down, and cut into quarters. Set aside 2 quarters for another use. Cut the remaining 2 quarters crosswise into 1-inch-thick slices. Brush 2 tablespoons of the vinaigrette onto the slices.
  • Preheat a grill to medium-high heat or place a grill pan over medium-high heat until hot. Grill the watermelon slices, in batches, in a single layer until warmed through and grill marks appear, 2 to 3 minutes per side. Remove the watermelon from the grill and let cool, about 15 minutes. Cut into bite-size cubes.
  • Arrange the arugula, grilled watermelon, tomatoes, feta cheese, pecans and red onions on a platter or in a salad bowl. Drizzle the remaining vinaigrette over the top and toss just before serving.

This is a fun recipe because the tomato and watermelon look very similar when diced, and they complement each other extremely well. Plus, it's customizable: you can add as much or as little of each ingredient as you prefer to make this bright summer salad.

4 heirloom tomatoes
1 small seedless watermelon
2-inch piece of ginger
2 tablespoons rice vinegar
1/4 cup fruity extra-virgin olive oil
Kosher salt
Freshly ground black pepper
8 leaves basil (preferably opal basil)

Steps:

  • Peel tomatoes: Bring a pot of water to a boil. Cut an "X" on the bottom of each tomato, then place into boiling water for about 10 seconds. Remove and discard peel; chop tomatoes and set aside. Remove watermelon rind: Slice off the bottom and top, then stand it upright on its flattened base. Remove the rind by carefully cutting strips away from top to bottom, following the flesh of the watermelon. Once the rind has been removed, slice the watermelon into rounds, then into strips. Chop the strips into a dice the same size as the tomato pieces. There should be equal amounts of tomato and watermelon.
  • Peel ginger with a vegetable peeler or the back of a knife; grate on a Microplane directly into the tomato-watermelon mixture. Add rice vinegar and olive oil. Sprinkle a reasonable amount of salt to balance the sweetness of the tomatoes and watermelon, making it savory. Add a few cranks of pepper and gently mix. Taste to adjust seasonings, and add more salt and grated ginger if necessary. Then gently toss again. Place in a serving bowl. Using scissors, thinly cut leaves of opal basil directly on top of the tomato-watermelon salad before serving.

4 medium heirloom tomatoes, cut into wedges

¼ cup very thinly sliced sweet onion
3 ounces goat cheese, such as Capricho de Cabra
2 tarragon sprigs

Steps:

  • Whisk the honey, vinegar, and ½ teaspoon salt in a small bowl. While whisking, add the oil in a slow, steady stream until emulsified.
  • Pulse the corn nuts in a food processor until finely chopped.
  • Arrange the tomatoes in serving dishes in a single layer and sprinkle with ½ teaspoon salt. Top with the watermelon and onion and drizzle with the dressing. Crumble the goat cheese and pluck the tarragon leaves on top. Sprinkle on the corn nuts and serve immediately.

For best results, make the salad without ever refrigerating the tomatoes but with the watermelon cold from the refrigerator. The contrast of temperatures will give the salad an extra fresh taste.

2 tablespoons balsamic vinegar
1 tablespoon fresh lemon juice
1/2 cup extra-virgin olive oil
2 beefsteak (or other large variety) tomatoes, stemmed, washed and dried
1 pint cherry tomatoes, stemmed, washed and dried
1 tablespoon chopped tarragon leaves
4 strawberries, hulled, washed and cut into very small pieces
Maldon sea salt
Freshly ground black pepper
1 to 2 teaspoons superfine (or granulated) sugar
6 ounces cold watermelon, rind removed, seeded and cut into bite-size cubes

Steps:

  • In a bowl, whisk together the balsamic, lemon juice, and olive oil. Taste for seasoning. Set aside.
  • Place the tomatoes on a flat surface. Cut the smaller ones in half and the larger ones into slices. Arrange all of them in a single layer, flesh side up. Season them with salt, black pepper and sugar. Drizzle the tomatoes with the dressing. Toss them with the tarragon and strawberries.
  • Arrange the tomatoes down the length of 6 rectangular plates. Drizzle with the remaining dressing and top with the watermelon. Serve immediately.

handful mint , leaves picked
100g feta

Steps:

  • Put the tomatoes in a large bowl. Remove the outer rind of the watermelon, cut the flesh into medium-sized cubes and add to the tomatoes.
  • Roughly chop the mint leaves, discarding the stalks but leaving a little for the garnish, and add the rest to the bowl. Crumble over the feta, toss everything together lightly and garnish with the reserved mint.

This savory, tart cocktail is based on the flavors of a favorite summer salad that combines seasonal tomatoes, watermelon, mint, and feta cheese (translated for this drink into a greek yogurt foam float).

6 mint leaves
2 ounces white rum
1 ounce lemon juice
1 ounce ketchup simple syrup (instructions below)
1 ounce fresh tomato juice
1/2 ounce fresh watermelon juice
2 ounces plain seltzer water
1 ounce greek yogurt foam (instructions below)
sea salt, and lemon juice to rim glass
1 cherry tomatoes (to garnish)
1 watermelon, cube (to garnish)
1 sprig of fresh mint (to garnish)

Steps:

  • Make ahead: Ketchup Simple Syrup.
  • Combine equal parts water, organic ketchup, and simple syrup (approx. 1 tablespoon of each per cocktail). Refrigerate until ready to use.
  • Make ahead: Fresh Tomato and Watermelon Juices.
  • In a blender, puree approximately 5-6 medium tomatoes, on high, until liquefied. Strain liquid through a fine mesh strainer, pressing the pulp with a spoon to get as much juice as you can. Store in an airtight container in the fridge until ready to use. Repeat process with approximately 4 cups of watermelon cubes.
  • Just before you're ready to assemble the cocktails, make the Greek Yogurt Foam:.
  • In a blender, combine 1/2 cup plain greek yogurt, 1/2 oz. fresh lemon juice, 1/4 cup seltzer water and blend on high until aerated and foamy. Set aside.
  • Prep your glass:.
  • Run a wedge of lemon around the edge of a highball glass and dip the edge in salt to coat. Drop loose mint leaves into bottle of glass and gentle muddle just until fragrance is released. Fill glass with ice.
  • Add rum, lemon juice, ketchup simple syrup, tomato juice, watermelon juice, and seltzer water to glass, and give it a stir. Float about an ounce of yogurt foam on top, garnish, and serve.
