I checked all the other recipes here, and each one is a little different in one way or another. THIS is the real deal. I got the recipe from the chef at the Watergate Hotel in Washington, DC where the recipe originated. If you want the same one served there that was made famous there....this is it.

1 (20 ounce) can crushed pineapple with juice, undrained
1 cup miniature marshmallow
1/2 cup chopped nuts
1 3/4 cups non-dairy whipped topping, thawed

Steps:

  • Stir pudding mix, pineapple with juice, marshmallows and nuts in a large bowl until well blended.
  • Gently stir in whipped topping.
  • Refrigerate one hour or until ready to serve.

Watergate Salad is a creamy and fluffy concoction that has been a staple on holiday tables for generations. Not only is the recipe uniquely delicious, but the mystery behind it is fascinating too!

8 oz Cool Whip ((one small container))
1 package pistachio pudding mix (3.4oz box)
20 oz crushed pineapple (drained)
1/2 cup chopped pecans
1 cup miniature marshmallows
1/2 cup Shredded coconut (optional)

Steps:

  • Combine all ingredients in a large bowl. Make sure that pineapple is drained first.
  • Stir to fold ingredients together so that pudding dissolves completely and the nuts and marshmallows are evenly distributed.
  • I recommend covering and placing in the fridge to chill for 30 minutes to an hour -- I think it gives the flavors a little extra time to meld together. However, you can serve immediately if you like.

Our version adds a bit of cream cheese to the whipped cream, providing a welcome tang to the sweet notes. Although the origin of the name might be cloudy (some say it was a newspaper that renamed Kraft's pistachio pineapple delight with the name of the famous Washington, D.C. hotel), no one will dispute its appeal at the dessert table.

2 cups heavy cream, chilled
4 ounces cream cheese, at room temperature
3 tablespoons confectioners' sugar
One 20-ounce can crushed pineapple in juice
One 3.4-ounce box instant pistachio pudding mix, such as Jell-O
1 cup chopped walnuts
1 cup mini marshmallows
8 maraschino cherries, drained

Steps:

  • Slowly whisk the heavy cream into the cream cheese and confectioners' sugar in a large mixing bowl with an electric mixer until very smooth, then increase the speed to medium high and beat until medium-stiff peaks form.
  • Combine the pineapple (with juice), pistachio pudding mix and 3/4 cup of the walnuts in a separate bowl until the pudding mix is dissolved.
  • Fold in the marshmallows and 2 cups of the whipped cream-cream cheese mixture until fully incorporated. Refrigerate until well chilled, at least 4 hours.
  • To serve, spoon into small bowls and top with the remaining whipped cream-cream cheese mixture, remaining 1/4 cup walnuts and the maraschino cherries.

This Watergate Salad Recipe was initially called Pistachio Pineapple Delight when it first debued in the 1970's, and only canned pineapple was used. This easy and simple Watergate recipe has since been varied to use other canned fruits as well. How and why the name was changed to Watergate is a mystery. Some people think it has a lot to do with the Watergate Scandals that were prevalent during that time. Whatever the name is - Watergate or Pistachio Pineapple Delight - it is the results of the recipe that are important and this easy and simple Watergate recipe has lots of flavour. Although the original recipe called for canned pineapples, fruit cocktail seems to have become more of a favourite choice. Canned diced peaches or mandarins work really well in this recipe also. So, pick your choice of fruit and get stirring.

0.5 (8 ounce) container frozen whipped topping, thawed

Steps:

  • 1. In a large bowl, mix together pudding mix, pineapple with juice, marshmallows, and nuts. Fold in whipped topping. Chill.
  • My Note: This is a good recipe that you may needs some modifications. To get the pineapple to pudding mix ration right, I make it with a 20 ounce can of fruit with two boxes of pudding, adding double the whipped cream. Sometimes it is good to add coconut as well.
  • Sometime I would add more pineapple than called for - I used a 20-oz. can of (unsweetened) pineapple chunks. The second time I made this, I wanted to make it less soupy (adding all the juice was just too much liquid), so I drained the entire 20-oz. can of pineapple (chunks) into a measuring cup, then added 1/2 cup juice to the pudding. Letting it sit overnight is key, as it will taste too much like unprepared pudding if you don't. I used pecans instead of walnuts, and cut down on the amount (used 1/4 cup instead of 1/2), and would do that again. I also used the entire 8-oz. tub of whipped topping.
  • My wilf had tons of requests at a baby shower for this recipe. Here it is wath she did -- 2 (3.4 oz) packages of instant pistachio pudding, 2 (20oz) cans of crushed pineapple, drained (1/4 cup reserved juice), 1/2 cup chopped walnuts, 1(16 oz) cool whip, thawed. Fold all ingredients into the cool whip and chill for several hours.
