WATERCRESS SOUP
This simple soup highlights the flavor of watercress: clean and slightly bitter but not overwhelming. The potato gives this soup enough extra body to make it a satisfying lunch or light dinner.

Steps:
- Heat a medium saucepan over medium-high heat. Add oil and garlic, cook until sizzling and fragrant, about 1 minute. Stir in potato and 1/2 teaspoon salt. Cook 1 minute.
- Add stock and 1 1/2 cups of water and bring to a boil. Reduce to a simmer and cook for 5 minutes. Stir in watercress. Return to a boil. Reduce to a simmer for 1 minute. Season with salt and pepper. Divide among soup bowls and squeeze a lemon wedge into each bowl. Serve immediately.

WATERCRESS SOUP

Steps:
- Heat the oil in a large saucepan over medium high heat. Add the potato and onion, stirring to coat with the oil. Season with salt and pepper to taste. Reduce heat to medium, cover and heat for 5 minutes.
- Pour in the chicken stock and the milk, bring just to a boil, reduce heat to low and simmer for 10 minutes, or until potatoes are tender. Stir in the watercress and simmer, uncovered, for 4 to 5 minutes, or until watercress is just cooked.
- In small batches, transfer the soup to a blender or food processor and puree until smooth. Return the soup to the pot, season to taste, and ladle into individual bowls. (Note: Place in refrigerator if not serving at this point.)
- Top each serving with a dollop of whipped cream, if desired and garnish with watercress leaves.

WATERCRESS AND POTATO SOUP
Blend peppery watercress with potato and shallot for a satisfying soup.

- Heat the butter in a medium saucepan over medium heat. Add the shallot and cook, stirring, until tender, 3 to 5 minutes. Add the potato, garlic, thyme, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and bring to a simmer.
- Simmer until the potatoes are tender, about 15 minutes, adjusting the heat as needed to maintain a simmer. Stir in the watercress and cook 5 minutes more. Remove from the heat, discard the thyme and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full per batch).
- Stir in the cream and reheat the soup if necessary, adjusting the consistency and seasoning with additional water, salt and pepper.
- Serve hot sprinkled with almonds and chives.
MARROW, WATERCRESS, LENTIL AND TOMATO SOUP

Steps:
- Fry chopped onions in the olive oil until starting to brown. Add garlic, then cumin and coriander. Cook for a couple of minutes, then add marrow. Cook for a further 5 minutes, then tip in lentils and mix thoroughly.
- Add chopped tomatoes, stock and the finely chopped watercress. Bring to the boil then reduce and simmer for half an hour, or until lentils are soft and mushy.
- Coarsely blend the soup with a hand lender. Season to taste. Allow to cool before serving.

- 1. Heat the oil in a large pan, add the onion and celery and sauté over a medium heat for 5 mins until pale golden. Stir in the potato and stock and bring to the boil. Cover and simmer for 10 mins or until the potato is tender.
- 2. Stir in the watercress, cover and cook for a further 5 mins or until the watercress is wilted. Transfer the soup to a food processor and blitz until smooth. Return the soup to the rinsed out pan add the milk, nutmeg, lemon juice and seasoning to taste. Gently reheat until piping hot and serve with crusty bread.
WATERCRESS SOUP
Richard Grausman created his lighter version of the classic French watercress soup in his book, "At Home With The French Classics." The traditional soup is thickened with potatoes; this is thickened with zucchini. I in turn adapted his recipe somewhat. Use the leaves from one bunch of watercress. PLEASE NOTE: this soup is WW friendly, even though it is not titled or categorized as such. To make the soup @ zero points, I use no fat and just boil the leeks (can sub white onion) in the broth. I usually add a little olive oil to the bowl just before serving, so if you do that, remember to count points for the oil or butter you use.

Steps:
- Remove the leaves from one bunch of watercress and set them aside. Discard the watercress stems.
- Make sure the leeks are in small dice that will cook up quickly.
- Place butter, leeks and chicken broth in a saucepan.
- Bring to a boil, lower heat and simmer 4-5 minutes.
- Add zucchini, cook several minutes more, until zucchini is just tender.
- Add salt and pepper, stir.
- Add watercress and reduce heat. Simmer 1 minute until watercress wilts.
- Remove from heat and purée in a blender.
- Correct seasoning.
- Just before serving, stir in optional cream OR optional virgin coconut oil.
- Serve hot, warm or cold.
- NOTE 1: Because the traditional French soup is pale green, Richard Grausman used peeled zucchini to create a paler shade of green. You could leave the zucchini unpeeled, thereby giving the soup a darker green color.
- NOTE 2: I am now using almond milk successfully instead of cream. Try Almond Breeze original unsweetened.

MY MOM'S " SOLE "
My mother's cooking always spelled "comfort" when I was growing up. We weren't wealthy in terms of money, but we were abundantly rich in other ways. One expression of my mother's love was the preparation of delicious meals for her family, many quite involved. Mom never took shortcuts, instead preferring to take the utmost care with every step. (She was also a 1-strand-of-tinsel-at-a-time person at Christmas!) Until her death almost 4 years ago, she took great delight in sending everyone's taste buds into a euphoric orbit. While unpacking boxes of her belongings, I ran across a favorite red and white terry cloth apron Mom wore back in the 60's. Memories flooded back of days spent watching her traipse happily around the kitchen with a passion for cooking I didn't come to identify with until I was well into my own adulthood. The little apron instantly brings me back to my childhood surrounded by the heady aromas of a luscious beef stew, a rich bowl of tomato soup or crispy fried chicken that far surpassed the colonel's. I'm now just as passionate about food and its preparation as Mom was. And when I tie the strings of her old apron around my waist and pull out this recipe of hers which I've renamed Mom's "Sole", I'm treated to a nudge of maternal encouragement from the person I loved most in the world and Mom's "Sole" turns out perfectly every time! Here's to my mother and all mothers, not just on Mother's Day, but EVERY day! This is a fabulous dish which is rolled and poached, then covered with a silky sauce of fish stock, white wine and cream. On that goes a golden hollandaise sauce fluffed with whipped cream which is broiled briefly before serving. Definitely a decadent treat! Times are estimated.

- Make Hollandaise: In double boiler top with wire whisk, slightly beat egg yolks. Slowly beat in melted butter. Cook, stirring, over hot water (water in base should not touch upper pan) just until thick. Mixture will curdle if cooked too long. Whisk the heavy cream into sauce. Gradually beat in lemon juice and 1/4 teaspoon salt. Beat until as thick as mayonnaise. Set aside to cool.
- Preheat oven to 350°F.
- Gently rinse fillets and pat dry with paper towels. Place dark side up on board. Sprinkle fillets with 3/4 teaspoon salt and dash of pepper. Dot with 2 tablespoons butter.
- Starting at narrow end, roll up fillets. Secure with toothpicks. In buttered shallow baking dish, stand fillets upright on even sides. Pour water and white wine over fish. Top with sliced onion and bay leaf.
- Bake, uncovered, 15 minutes or until fish flakes when tested with fork. Remove bay leaf and onion. Remove fillets to oven-proof platter and keep warm. (Leave the oven on; you'll be broiling these soon.) Remove toothpicks gently; fish is fragile. Strain fish stock, reserving 1 1/4 cups liquid.
- Melt 3 tablespoons butter in saucepan. Remove from heat. Stir in flour and dash cayenne until smooth. Gradually stir in fish stock and bring to boil, stirring. Reduce heat and simmer 3 minutes. Stir in light cream and mix well. Pour over fish.
- Increase oven temperature to broil.
- Melt remaining 2 tablespoons butter and sauté mushrooms. Add lemon juice and salt. Cook until tender. Spoon mushrooms around fish. Pour Hollandaise sauce over fillets. Broil 4 inches from heat source until golden brown. Garnish with parsley or watercress.

ROASTED COD WITH EASY WATERCRESS SAUCE & ROASTED CHERRY TOMATOES
For a no-fuss fish dish, try roasted cod with easy watercress sauce and roasted cherry tomatoes

- Smear the skin of the cod with the butter and season with sea salt. Heat 1 tbsp of the oil in a frying pan. When very hot add the cod, skin side down, and fry, without moving the fish, until the skin is crisp and golden. Invert on to a shallow ovenproof dish, ready to finish it off in the oven.
- Put the cherry tomatoes in a separate shallow ovenproof dish and drizzle with another 1 tbsp oil.
- To make the sauce, cook the shallots and wine in a small pan for about 2-3 minutes until the wine has almost gone. Tip into a food processor with the crème fraîche and watercress, season with salt and pepper and blitz. Add a squeeze of lemon juice to taste, return to the pan and set aside. Lightly whip the cream until it just holds its shape. (At this stage the cod, sauce and cream can be kept in the fridge, lightly covered with cling film, for up to 4 hours.)
- About 20 minutes before you are ready to cook, preheat the oven to fan 170C/conventional 190C/gas 5. Roast the cod and tomatoes for 12-15 minutes until just cooked. Meanwhile, gently reheat the sauce, remove from the heat and fold in the cream. Taste and add more seasoning and lemon juice if necessary. Set the cod on warm dinner plates with the cherry tomatoes and spoonfuls of watercress sauce. Garnish with sprigs of parsley or chervil and serve with buttered new potatoes.
