WASABI POTATO SALAD
Although I haven't tried this yet, I think it sounds delicious and spicy and a nice change from the usual! Recipe source: local newspaper

Steps:
- In a medium saucepan over high heat place potatoes covered with water.
- Reduce heat to simmer and cook for 12 minutes or until tender.
- Drain and spread potatoes on a cookie sheet. Cool to room temperature.
- While potatoes are cooling, whisk the wasabi paste and mayonnaise together in a large bowl until blended.
- Stir in potatoes, celery, bacon, onion, apple, mint, salt and pepper (to taste).
- Refrigerate until serving. Serve cold or at room temperature.

EDAMAME SALAD WITH WASABI DRESSING
Steps:
- Place frozen shelled edamame in a microwave-safe bowl with 2 tablespoons of water. Cover and cook on high for 6 to 8 minutes, stirring halfway through cooking time, When finished cooking, let sit covered for 1 minute. Transfer edamame to a bowl of ice water for 2 to 3 minutes. Drain.
- In a medium bowl, combine remaining vegetables. Add edamame when finished cooling and toss to combine.
- In a small bowl, combine salad dressing, wasabi, and soy sauce. Pour over salad and toss to combine.
WASABI MASHED POTATOES
Steps:
- Place the potato in a pot of cold water. Bring to a boil and cook until fork tender, about 30 minutes. Remove from the heat, peel, and mash well. Add 1 tablespoon of butter, salt, freshly ground black pepper, powdered garlic, and wasabi powder. Mix well.
WASABI MASHED POTATOES
These potatoes are slightly green, slightly spicy, and beautifully fragrant with roasted garlic. Good compliment to meat and fish cooked with ginger - soy marinades. The leftovers make great potato pancakes!

- Preheat oven to 400 degrees F (200 degrees C).
- Remove papery outer skin of garlic bulb. Rub with olive oil and place on a small baking sheet. Bake in preheated oven for 45 minutes, or until skin can be easily pierced with a fork.
- While garlic is roasting, peel and quarter the potatoes. Place in a large pot and cover with water. Bring to a boil and allow potatoes to simmer until very soft, about 20 minutes. Drain water and mash potatoes with butter until smooth and fluffy.
- Squeeze softened garlic cloves out of skin into pot; in a small bowl, mix wasabi powder with just enough water to form a thick paste. Mash garlic and wasabi paste into potatoes, pour in milk and continue to mash until mixture is light and fluffy; season with salt and pepper to taste and serve hot.

- You'll want to flake your tuna first. I prefer to use a potato masher, but so long as it gets flaked to bits, it'll work. Use what suits you best.
- Mix in the mayo and relish thoroughly, to your desired consistency.
- Mix in the spoonful of wasabi powder, distributing it evenly throughout the tuna-mayo mixture.
- Seal and refrigerate for 1 or two hours before using, allowing the flavors to mingle properly. It's as simple as that.

- Bring potatoes to boil in large pot of water. Reduce heat to medium; cook until tender, about 17 minutes. Drain well.
- Meanwhile, bring cream, butter, and wasabi paste to simmer in small saucepan over medium heat, stirring until butter melts. Season with salt and pepper. Keep hot. Heat oil in small skillet over medium heat; add green onions and sauté until wilted, about 3 minutes. Set aside. Using potato masher in same large pot or ricer, mash potatoes. Was looking for some new salad dressing that has spunk but unusual enough that you won't find in any store. This definitely meets the need and also goes great with most any meat or fish: tuna, salmon, chicken, shrimp, beef, etc. This stores well in the fridge.

- Place the Potatoes in a large pot of Salted Water and bring the water to a boil. Continue to boil for about 10 minutes, or until just tender. When the Potatoes are done, a sharp knife should be able to pierce the Potato easily and the Potato should glide off the knife without falling apart.
- Using a colander, drain the water from the Potatoes and gently shake the Potatoes in the colander to allow the excess water to drain away.
- Transfer the Potatoes to a large bowl.
- Meanwhile, in a small saucepan, bring the Chicken Broth to a simmer over high heat. Once the Broth boils, add the Shallot, dill pickles, and Capers. Reduce heat to medium-low and simmer very gently for 2 minutes or until the Shallots soften slightly.
- Add one-third of the Broth mixture to the hot Potatoes and, using a silicone spatula, gently fold the Potatoes with the Broth mixture for about 2 minutes, or until most of the Broth has been absorbed. Repeat, adding all of the solids and enough of the stock to moisten. While folding the broth mixture into the Potatoes, the Potatoes should break down a bit. Set aside.
- In a heavy large nonstick frying pan, cook the Bacon over medium-high heat for about 10 minutes, or until crisp and golden brown. Transfer the Bacon to a plate lined with paper towels and cool slightly.
- Gently fold the Bacon and Parsley into the warm Potatoes. Gently fold the Mayonnaise into the Potatoes. Season to taste with Salt and Pepper. Serve warm, room temperature, or chilled.

- Slice potatoes lengthwise, add water to pot. Bring water to a boil and reduce to a simmer. Cook potatoes until slightly undercooked.
- Pour off hot water and submerge potatoes in cold water.
- Once cool to touch, cut into bite sized chunks or break apart into medium pieces.
- Add wasabi mayo, sliced onions and chopped peppers. Toss to coat potatoes. Add salt and pepper to taste.
- Combine, chill & serve.
- NOTES:
- To reduce the heat factor, cut wasabi mayo with your favorite mayonnaise.
- UPDATE: 5/25/08.
- If wasabi mayo is not available, wasabi powder can be mixed with mayonnaise to desired taste. It does pack a little "heat".
- Fingerling or baby red potatoes can be used.
