Yield Makes 4 servings

Number Of Ingredients 8

3/4 cup wasabi peas (about 3 ounces)
4 (8-ounce) salmon fillets with skin (each about 1 inch to 1 1/4 inches thick)
1 tablespoon finely grated lime peel
2 tablespoons olive oil, divided
6 cups thinly sliced red cabbage (about 1/2 large head)
1 (8-ounce) package trimmed sugar snap peas
2 tablespoons fresh lime juice
Lime wedges

Steps:

  • Preheat oven to 400°F. Blend wasabi peas in processor until ground but with some coarsely crushed pieces. Lightly oil rimmed baking sheet. Sprinkle grated lime peel over salmon; drizzle with 1 tablespoon oil. Roast salmon just until opaque in center, about 10 minutes.
  • Meanwhile, heat remaining 1 tablespoon oil in large nonstick skillet over medium-high heat. Add cabbage and sugar snap peas; sauté until vegetables are crisp-tender, about 5 minutes. Season to taste with salt and pepper.
  • Transfer 1 salmon fillet to each of 4 plates. Drizzle with lime juice. Mound cabbage-snap pea mixture alongside. Garnish with lime wedges and serve.

WASABI-CRUSTED SALMON SALAD

Wasabi-Crusted Salmon Salad image

If a special luncheon is planned to honour Mother on her day this Sunday, here is an unusual salad to serve. Wasabi powder is pressed into the salmon fillet before cooking it and served with salad greens and crumbled blue cheese. Wasabi powder can be found at traditional Asian Markets or at some select supermarkets.

1 tablespoon wasabi powder
1 tablespoon water
1 tablespoon rice wine vinegar
1/4 teaspoon soy sauce

1 cup cold unsalted butter, cut into pieces

Categories     Tuna

Time 1h

Yield 4 serving(s)

Number Of Ingredients 7

2 fresh tuna steaks, 1-inch inch thick
5 ounces wasabi peas
1 egg
1 cup milk
1 cup flour
salt
canola oil

Steps:

  • Cut each steak in half. Wash and dry them well and wrap in plastic wrap tightly. Place in freezer for about 45 minutes.
  • Mix the egg and milk together.
  • Crush the peas with a mortar and pestle until they have the consistency of coarse salt. (I used a rolling pen and rolled it over the peas in a plastic bag.).
  • Unwrap each piece of tuna. Coat it in the flour, then dip in egg/milk mixture, then roll in the crushed peas. Place on a plate and allow to rest for 10 minutes.
  • Preheat a heavy cast iron frying pan on low heat. After the 10 minute resting period of the tuna, add 3 tablespoons of oil and turn the pan to high heat. Allow to heat about a minute then add the tuna.
  • With heat on high, saute tuna 1 minute on each side, including the sides.
  • Serve immediately.
