1 1/4 pounds sea scallops (about 20), "foot" muscles removed
Juice of 1 1/2 limes, plus wedges for serving
1/2 shallot, finely chopped
3 tablespoons sweet chili sauce
4 teaspoons fish sauce
5 tablespoons vegetable oil
1/2 head napa cabbage, shredded (about 7 cups)
2 Persian cucumbers, halved lengthwise and thinly sliced crosswise
4 radishes, thinly sliced
1 Granny Smith apple, cut into matchsticks
2 cups fresh Thai or regular basil, roughly chopped
1/4 cup unsalted dry-roasted peanuts, roughly chopped

Steps:

  • Place the scallops on a large plate lined with a paper towel and pat dry. Combine the lime juice, shallot, chili sauce, fish sauce and 1/4 cup vegetable oil in a large bowl; whisk to combine. Add the cabbage, cucumbers, radishes, apple and basil to the dressing and toss well to coat.
  • Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over high heat. Add the scallops in an even layer (do not crowd the pan). Cook, undisturbed, until a golden crust forms on the bottom of the scallops, about 3 minutes. Flip the scallops (they should release easily from the pan; if they stick, cook 1 more minute). Cook until lightly browned on the other side, about 2 minutes.
  • Divide the cabbage salad among plates and add the scallops. Top with the peanuts and serve with lime wedges.

10 slices thick-cut bacon
1/2 pound ciabatta bread, cut or torn into bite-sized pieces
1 pound multi-colored heirloom tomatoes, cut into bite-sized wedges
1/2 head iceberg lettuce, roughly chopped (about 5 cups)
2 1/2 ounces baby arugula, roughly chopped
1/4 cup chopped fresh chives
2 tablespoon chopped fresh dill
1/4 cup mayonnaise
1 teaspoon lemon zest
3 tablespoons lemon juice
3 tablespoons vegetable oil
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with foil.
  • For the salad: Place the bacon on the prepared baking sheet, transfer to the oven and cook for 15 to 20 minutes, flipping the bacon halfway through.
  • Meanwhile, make the dressing. Add the mayonnaise, lemon zest, lemon juice, oil, salt, and pepper to a mason jar, cover and shake to emulsify. Set aside.
  • Remove the bacon to a paper towel-lined plate to cool. Add the bread to the pan with the bacon fat and toss to combine. Transfer the pan back to the oven and cook until lightly golden and crisp, 10 to 15 minutes. When the bacon is cool enough to handle, chop it into large bite-sized pieces and set aside.
  • To assemble the salad, add the tomatoes to the base of a bowl or travel container. Add the iceberg and arugula on top. Sprinkle with the chives and dill. Top the salad with the bacon and ciabatta croutons. When ready to serve, drizzle on three-quarters of the dressing and toss to combine. Serve with extra dressing on the side.

1 pound sea scallops
1 tablespoon canola oil
1 medium sweet red pepper, julienned
2 teaspoons minced garlic
1/3 cup Italian salad dressing
1 tablespoon water
6 cups torn mixed salad greens
1/2 teaspoon pepper

Steps:

  • In a large skillet, saute scallops in oil for 2 minutes on each side or until firm and opaque. Remove and keep warm. , In the same skillet, saute red pepper and garlic for 2-3 minutes. Add salad dressing and water; cook 2-3 minutes longer, stirring occasionally. Return scallops to the pan; cook for 2-3 minutes or until heated through., Place the greens in a salad bowl. 1 cup all-purpose flour
1 tablespoon seafood seasoning (recommended: Old Bay)
Sea salt and freshly cracked black pepper
1/4 cup olive oil, divided
24 sea scallops
Field greens
Warm Bacon Vinaigrette, recipe follows
2 cups diced bacon, about 12 slices or a standard package
2 1/2 ounces shallot, minced
1/2-ounce garlic, minced
1 cup brown sugar
3/4 cup cider vinegar
1 1/2 cups olive oil
Salt and freshly ground black pepper

Steps:

  • In a shallow dish combine the flour, seafood seasoning, sea salt and cracked black pepper, to taste.
  • Coat a large saute pan with 2 tablespoons olive oil and put over high heat.
  • Dredge half of the scallops in the flour mixture, making sure to coat completely. Add to the hot oil, and quickly sear, about 1 1/2 minutes. Flip and continue to sear for another 1 1/2 minutes. Remove from heat and allow to rest for 2 minutes. Repeat procedure with the remaining scallops.
  • Meanwhile, arrange a small amount of field greens in the middle of each serving plate.
  • Arrange 4 prepared scallops on the greens and sprinkle with the warm bacon vinaigrette before serving.
  • In a large saucepan over medium heat, add the bacon and render until brown and crisp. Remove the bacon to paper towels to drain and cool. Pour out all but 1 tablespoon of the bacon fat.
  • Add the shallots and garlic to the bacon fat and saute for a minute. Add the brown sugar and stir until melted and incorporated. Remove from the heat, and stir in the vinegar and oil. Blend with immersion blender until smooth and season with salt and pepper, to taste.

2 tablespoons olive oil, plus 2 ounces
1/4 pound sea scallops
2 U-12 shrimp, shelled and cleaned
1/4 pound calamari, cleaned and sliced into rings
1 cup mixed field greens
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1/2 green bell pepper, chopped
1/2 Bermuda onion, chopped
1 vine ripened tomato, sliced into wedges
Cucumber slices for garnish
1-ounce vinegar
Salt and pepper to taste
Fresh basil for garnish

Steps:

  • Add 2 tablespoons olive oil to saute pan. When oil is heated, add scallops and shrimp. After about 3 minutes or until shrimp is pink, add calamari. Continue to cook approximately 1 minute or until calamari firms. Set aside.
  • In a mixing bowl, add greens, peppers, onion, tomato and cucumber. In a separate bowl, add 2 ounces oil, vinegar, salt and pepper. Whisk until incorporated. Place seafood on salad and then drizzle dressing on top. Add basil for garnish.

24 scallops
8 tbsp olive oil
4 tbsp lemon juice
12 thin slices streaky bacon
2 tsp Dijon mustard
1 tsp clear honey
2 tsp chopped caper
4 tbsp chopped parsley
1 head curly endive

Steps:

  • Wash and dry the scallops and put them in a bowl. Mix 2 tbsp of the olive oil and 2 tbsp of the lemon juice in a bowl with a little salt and pepper, then pour over the scallops. Leave for 15 mins, until the scallops have turned white.
  • Cut each strip of bacon in half across and wrap around a scallop. Secure with cocktail sticks.
  • Whisk together the remaining 2 tbsp lemon juice with the mustard, honey, salt and pepper. Whisk in the remaining 6 tbsp olive oil until the dressing is thick, then stir in the capers and parsley. Divide the curly endive between 8 serving plates.
  • Preheat a grill to hot. Lay the scallops in one layer over a lined grill pan. Grill the scallops for 3-4 mins each side, until the bacon is crisp and golden. Put three scallops on each plate and spoon over the dressing.

1 pound sea scallops
1/3 cup extra-virgin olive oil
3 yellow bell peppers, cut into 2- by 1/4-inch strips
3 orange bell peppers, cut into 2- by 1/4-inch strips
2 large shallots, minced
3 tablespoons Sherry vinegar
1/2 teaspoon sugar
3 tablespoons walnut oil
4 heads radicchio, outer leaves only
1/3 cup walnuts, toasted lightly and chopped

Steps:

  • In a saucepan of boiling salted water boil haricots verts until crisp-tender, 2 to 3 minutes. Drain beans in a colander and refresh in cold water to stop cooking. Pat beans dry and wrap in a kitchen towel. Beans may be prepared 1 day ahead and chilled, covered.
  • Remove tough muscle from side of each scallop if necessary. Halve scallops horizontally and pat dry. Season scallops with salt and pepper.
  • In a non-stick skillet large enough to hold scallops in one layer heat 1 tablespoon olive oil over moderately high heat until hot but not smoking and sauté scallops until golden, about 2 minutes on each side. Transfer scallops with a slotted spoon to a large bowl.
  • In skilled heat 1 tablespoon remaining olive oil until hot but not smoking and sauté bell peppers, stirring, until crisp-tender. Transfer bell peppers with slotted spoon to bowl with scallops.
  • In skillet cook shallots in 1 tablespoon remaining olive oil over moderate heat, stirring, until softened. Add vinegar, sugar, walnut oil, remaining olive oil, and salt to taste and simmer 1 minute. Remove skillet from heat and let vinaigrette cool 5 minutes.
  • Divide radicchio among 8 plates. Add beans and vinaigrette to scallop mixture and toss gently. Divide salad among plates and sprinkle with walnuts.
