6 cups chopped romaine lettuce
2 cooked salmon fillets, pulled apart with 2 forks into 1-inch pieces
4 slices turkey bacon, cooked until crisp and crumbled
1 cup shredded carrots
1 green bell pepper, seeded and sliced
1/2 cup thinly sliced red onion
2 tablespoons drained capers
2 hard boiled eggs, sliced
1/4 cup crumbled gorgonzola
1/2 cup sour cream
1/2 cup buttermilk
2 teaspoons Dijon mustard
1 tablespoon chopped fresh dill
Salt and freshly ground black pepper

Steps:

  • Arrange lettuce on a platter. Top with salmon, bacon, carrots, bell pepper, red onion, capers, eggs, and gorgonzola.
  • In a small bowl, whisk together sour cream, buttermilk, Dijon, and dill. Season, to taste, with salt and pepper. Pour dressing over salad and serve.

One 12-ounce salmon fillet
Salt and pepper, to taste
4 cups baby potatoes, quartered
1/2 pound green beans, trimmed and halved
1/3 cup plain Greek yogurt
2 tablespoons Dijon mustard
2 tablespoons chopped fresh dill
1 small lemon, zested and juiced
1 garlic clove, grated
4 cups arugula
2 tablespoons capers

Steps:

  • Preheat the oven to 400 degrees F. Place the salmon on a parchment-lined baking sheet and sprinkle with salt and pepper. Bake until the salmon is cooked through, about 15 minutes. Use a fork to flake the salmon and set it aside.
  • At the same time, steam the potatoes in a steamer basket over 2 inches of boiling water until they become fork tender, 13 to 15 minutes. Remove the potatoes and set aside. To the same steamer basket, add the green beans and steam until tender crisp, about 5 minutes. (Check to ensure there is enough water in the bottom pot at all times.)
  • In the meantime, whisk the yogurt, Dijon mustard, dill, lemon zest and juice, garlic and some salt and pepper in a small bowl until well combined. Set it aside.
  • In a large serving dish, arrange the cooked potatoes and green beans on a bed of arugula. Top with the flaked salmon and capers and then pour on the dressing.
  • Serve immediately or store in the refrigerator for 2 to 3 days. (If you're planning on enjoying this the next day, do not add the arugula until just before eating.)

5 medium red potatoes, about 2 lbs
1/4 cup mayonnaise
1 tablespoon grated parmesan cheese
1 green onion, sliced
2 teaspoons cider vinegar
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil.
  • Reduce heat; cover and simmer for about 20 minutes or until tender.
  • In a large bowl, combine the remaining ingredients.
  • Drain potatoes and cut into cubes.
  • Add the mayonnaise mixture and toss gently to coat.
  • Serve immediately.

2 large King Edward potatoes , cut into big chunks, skin left on
200g frozen pea
2 rashers lean back bacon , sliced
2 x 150g salmon fillet , skinned
250g pack beetroot (not in vinegar)
90g bag watercress
bunchs spring onion , sliced
1 tbsp olive oil
squeeze lemon juice
1 tsp Dijon mustard

Steps:

  • Boil the potatoes for 15 mins until tender. Add the peas to the pan for the final 2 mins cooking, then drain together. Slice the potatoes thickly, then leave to cool.
  • Meanwhile, fry the bacon in a non-stick pan for 5 mins until golden. Lift out, season the salmon, then fry for 3 mins on each side until golden and just cooked in the middle. You won't need extra oil to cook the fish.
  • Whisk the dressing ingredients together with seasoning and 1 tbsp water. Toss the veg together with the dressing and put onto plates, then break the salmon into big pieces and nestle into the salad with the bacon.

1 tablespoon dill weed (fresh)
3 tablespoons olive oil
1/3 cup orange juice

1/2 red onion (julienned)
1 tablespoon capers (rinsed)

Steps:

  • Combine dijon mustard,dill,olive oil, orange juice,orange zest, salt and pepper in a small bowl, mix well.

This is a really nice, healthy salad. For a really quick change, tinned salmon could be substituted for salmon fillets.

4 salmon fillets
1 cup French style green bean
1/4 cup almonds, slivered
4 cups mixed greens
1 tablespoon peppercorn, white, ground
1 teaspoon mustard, Dijon
1/2 lemon, juice of
4 tablespoons olive oil
sea salt (to taste)

Steps:

  • Gently poach salmon in lightly salted water. Drain and reserve. Meanwhile, cook beans in lightly salted boiling water until tender. Drain and reserve with salmon, keeping both warm. Lightly toast slivered almonds in a dry, non-stick pan and set aside.
  • Peel skin from salmon, carefully flake flesh into large pieces and place in a bowl with mixed greens and cooked beans.
  • Mix dressing ingredients together and pour over salad. Toss lightly, sprinkle with toasted almonds and ground white pepper, and serve.
