1/4 cup chopped onion
1 garlic clove, minced
1 tablespoon butter
1/2 cup chicken broth
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/8 to 1/4 teaspoon crushed red pepper flakes
1 pound cooked medium shrimp, peeled and deveined
4 cups torn mixed salad greens

Steps:

  • In a large skillet, saute the onion and garlic in butter until onion is tender. Stir in the broth and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 4 minutes or until heated through. Add shrimp; cook and stir for 2 minutes or until heated through. , Place salad greens on four serving plates; top with shrimp mixture.

1 pound medium shrimp - peeled and deveined
2 tablespoons butter
2 lemons, juiced
2 heads butter lettuce
2 tomatoes, chopped
1 avocado - peeled, pitted and diced
2 stalks celery, chopped
1 cucumber, cleaned and chopped
½ cup shredded carrots
⅓ cup vinaigrette salad dressing

Steps:

  • In a large saute pan melt butter over medium heat. Add the shrimp and lemon juice, cook until shrimp just turn pink. Remove from heat and drain.
  • In a large bowl tear lettuce into bite-size pieces, add the tomatoes, avocado, celery, cucumber carrots and cooked shrimp, toss to combine. Top with your favorite dressing or vinaigrette.

2 tablespoons reduced-fat plain yogurt
4-1/2 teaspoons Dijon mustard
1 tablespoon honey
2 tablespoons orange juice
2 tablespoons white wine vinegar
1/4 cup fat-free Italian salad dressing
1/8 teaspoon pepper
3 tablespoons finely chopped green onions
2 pounds cooked medium shrimp, peeled and deveined
8 cups torn romaine
2 cups pink grapefruit sections (about 2 large)
2 navel orange sections (3 to 4 large)

Steps:

  • In a large bowl, whisk together the first eight ingredients in the order listed. Add shrimp; toss to coat. Let stand for 15-30 minutes. Drain, reserving the marinade. , Arrange romaine on a serving platter or individual plates; top with shrimp, grapefruit and oranges. Drizzle with reserved marinade.

2 large navel oranges
1 tablespoon heavy cream
1 tablespoon rice vinegar or white wine vinegar
2 teaspoons Dijon mustard
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 1/4 pounds extra-large shrimp, peeled and deveined, tails removed
1/2 teaspoon Old Bay seasoning
Kosher salt
2 tablespoons extra-virgin olive oil
1 large ripe avocado, pitted and diced
1 Persian cucumber, thinly sliced into half moons
1 medium bulb fennel, trimmed, quartered, cored and very thinly sliced (on a mandoline or by hand), fronds reserved for garnish
2 heads butter lettuce, trimmed and torn into bite-size pieces

Steps:

  • For the dressing: Cut the top and bottom from an orange so it sits flat. Working from the top down, cut away the peel and pith to expose the flesh. Cut out the orange segments, leaving the membrane behind. Squeeze any juice from the membrane into a large bowl. Repeat with the remaining orange. You should have about 1/4 cup juice. Reserve the segments.
  • Whisk the cream, vinegar, mustard, 1/2 teaspoon salt and several grinds of black pepper into the orange juice. While whisking, pour in the olive oil in a slow, steady stream to make a creamy, slightly thick dressing. Chill while you make the salad.
  • For the salad: Sprinkle the shrimp with the Old Bay and 1/2 teaspoon salt. Heat the olive oil in a large skillet over medium-high heat. Sear the shrimp in two batches until just cooked through, about 3 minutes per batch. Remove to a plate to cool slightly, about 5 minutes.
  • Combine the shrimp, reserved orange segments, avocado, cucumber and fennel in the bowl with the dressing and toss gently. Mound the lettuce on a platter or individual plates and top with the salad. Garnish with fennel fronds.

4 cups freshly squeezed orange juice
2 tablespoons Dijon
2 minced shallots
1 tablespoon soy sauce
2 tablespoons rice vinegar
1 cup extra virgin olive oil
1 english cucumber, very thinly sliced
2 large heads celeriac, peeled and fine julienned
1 tablespoon olive oil
1/3 cup sliced scallions
1 pound rock shrimp, rinsed and patted dry
2 navel or other large oranges, segmented
1 grapefruit, segmented
2 limes, segmented
1 lemon, segmented
Salt and black pepper, to taste

Steps:

  • For the Cucumber, Celeriac and Citrus Salad: In a non-reactive saucepan, reduce the orange juice by 80 percent, until a syrupy consistency is reached. Set aside. In a bowl, whisk together the Dijon, soy, vinegar and olive oil. Season with salt and pepper. Toss some of the vinaigrette to coat the celeriac and the rest to coat the cucumbers. Check for seasoning. Using a stainless steel or plastic o-ring (3-inch diameter, 2 inches tall), line with cucumbers then fill with celeriac salad. In a saute pan, add olive oil and caramelize scallions. Add shrimp and season. Cook for 3 minutes and add the citrus, just to warm, 1 minute. Check for seasoning. Top celeriac with warm shrimp. Remove o-ring and drizzle orange syrup around.

  • Mix all dressing ingredients and set aside.

  • Spary a non-stick frying pan with an olive oil spritzer. Add garlic, pepper, onion and crushed chilies. Stir fry on med-high until veggies are cooked. Add to salad.
  • Spary same pan again. Add shrimp and cook until pink. Add shrimp to salad.
  • Top with dressing and serve.

1/2 cup sunflower oil
1 clove garlic, minced
1 1/2 inches fresh ginger, minced
1 shallot, minced
lime, juice and zest of
1/2 orange, juice and zest of
1 tablespoon sugar
1/2 teaspoon salt
fresh ground black pepper
6 cups torn assorted salad greens
1/4 cup chopped cilantro
1/4 cup chopped of fresh mint (or less, to taste)
2 oranges, peeled and sectioned
1/2 lb scallops, cooked
1/2 lb peeled and deveined cooked shrimp
2 tablespoons sunflower seeds, toasted
fresh edible flower (optional)

Steps:

  • Heat 1 tablespoon of the oil in a medium-sized skillet over medium heat; add garlic, ginger and shallot; cook, stirring often, until tender, about 4 minutes.
  • Stir in lime zest and juice, orange zest and juice, sugar, salt and pepper to taste; cook 1 minute then slowly whisk in remaining oil.
  • Toss together greens, cilantro, and mint in a large serving bowl.
  • Arrange orange sections, scallops and shrimp on to of the greens; sprinkle with sunflower seeds and edible flowers, if desired.
  • Pour 1/4 cup of the warm dressing over salad; toss to coat.
  • Add additional dressing as needed.
  • *To toast sunflower seeds, heat them in a small dry pan over low heat, stirring often, until lightly browned; immediately remove seeds from the pan to stop cooking.
