1 lb bacon
1 lb crimini mushrooms (sliced)
1 large Napa Cabbage (chop)
8 oz Honey Mustard Salad Dressing ((See Note 1))
6 oz Bleu Cheese Crumbles

Steps:

  • When the bacon is cold, cut into small pieces, it's easier to handle.
  • In a large sauté pan render the bacon and when almost cooked add the mushrooms, tossing to coat with bacon fat and sauté for several minutes.
  • Add the Honey Mustard salad dressing to the bacon mushroom mixture and cook for several minutes more on low.
  • Wash and chop the cabbage, let drain and place in a large bowl. Pour the bleu cheese crumbles over the cabbage.
  • Next pour the hot mustard, bacon and mushroom mixture over the cabbage and bleu cheese and toss well to incorporate. The cabbage wilts nicely and the flavors are amazing. Serve immediately.

Steps:

  • Cook bacon in a large skillet over medium-low heat, stirring often, until crisp, 8 to 10 minutes.
  • Meanwhile, whisk vinegar, Dijon mustard, whole-grain mustard, honey, salt and pepper in a small bowl. Gradually whisk in oil.
  • Transfer the bacon to a paper-towel-lined plate with a slotted spoon, leaving the fat behind. Increase heat to medium-high and add carrots and onion; cook, stirring often, until starting to soften, 3 to 4 minutes. Add cabbage; cook, stirring occasionally, until starting to wilt, 1½ to 2 minutes. Add the vinaigrette and cook, stirring, until heated through, about 1 minute. 1 tablespoon peeled chopped shallot (1 small)
2 cups apple cider
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup Roquefort cheese or 1/4 cup other blue cheese, crumbled
8 cups shredded cabbage
1/2 diced red bell pepper

Steps:

  • Cook bacon in a Dutch oven over medium-heat; until crisp.
  • Remove bacon from pan; reserving 1 teaspoon drippings in pan.
  • Crumble bacon; set aside.
  • Heat bacon drippings over medium-high heat.
  • Add shallot and saute 1 minute.
  • Remove from heat.
  • Bring apple cider to a boil in a small saucepan over medium heat; cook until reduced to 1/4 cup(about 15 minutes).

4 slices bacon, cooked and diced (I used pepper bacon)
3 garlic cloves, finely minced
1 onion, diced small (I used red onion)
3/4 cup sherry wine (NOT cooking sherry)
1 small green cabbage, cut into 1-inch slender strips
1 small savoy cabbage, cut into 1-inch slender strips
2 tablespoons wine vinegar or 2 tablespoons white balsamic vinegar
1 -2 tablespoon extra virgin olive oil
2 teaspoons fresh lemon thyme, minced
1/2 cup chopped walnuts, toasted and coarsely chopped
salt
pepper

Steps:

  • Toast the walnuts and set aside.
  • Cook the bacon over medium heat until crispy. Set aside to drain and cool. Drain off all bacon fat except for 1 tablespoon.
  • Add the garlic and onion to the pan and saute over medium heat for about 2 minutes.
  • Next add the sherry and cook until reduced by half, approximately 3-4 minutes.
  • Add the cabbage and {{lightly}} cook until wilted but still crunchy, about another minute.
  • Remove pan from heat.
  • Transfer the cabbage mixture to a salad bowl and toss with the wine vinegar, olive oil, thyme, walnuts and crumbled bacon.
  • Season to taste with salt (and freshly ground black pepper if not using pepper bacon).
  • Serve warm.

1/2 cup cider vinegar
2 tablespoons minced garlic

Steps:

  • Cut the bacon into tiny bits.
  • Fry it in a big deep frying pan and fish out all the bits after they are crisp.
  • Cut up the onion and garlic and fry them in the bacon fat.
  • When they are brown, pour in the vinegar.
  • Bring it just up to a simmer, add all the cabbage and bacon, toss it as you would a salad, and serve it.
  • The cabbage doesn't cook, but it wilts a little under the hot vinegar.

1 tablespoon coarse-grained mustard
1 tablespoon sugar
2 1/2 pounds red potatoes, diced into 1-inch cubes

6 bacon slices, chopped
1 medium sized red onion, diced
Freshly ground black pepper
2 cloves garlic, chopped
1/4 cup freshly chopped dill leaves, plus more for garnish
Vinaigrette:

Steps:

  • For the vinaigrette:
  • Mix all the ingredients together in a small bowl and set aside.
  • Add potatoes to pot of salted cold water. Bring to a boil, over high heat, then reduce heat to a simmer and cook for 20 minutes until tender. Drain and place in a large bowl. Cover with foil to keep warm, if necessary.
  • Add bacon to large saute pan and cook until crisp over medium heat. Remove to a paper towel-lined sheet tray and reserve. Add onion, dash of pepper and garlic to bacon grease and saute until tender, about 3 minutes. Add vinaigrette to vegetables. Let cook until reduced and thickened, about 2 to 3 minutes.
  • Add potatoes, dill and bacon to the pan and toss to coat with dressing. Allow to cook for 3 minutes. Season, to taste, with salt and pepper. Transfer potato salad to a serving platter and sprinkle with chopped fresh dill.

Pour off all but 2 tablespoons bacon fat from the skillet and add the olive oil. Add the shallot and cook over medium heat until softened, 2 to 4 minutes. 1 pound assorted-color new potatoes (about 4), cut into 1/4-inch dice
1 cup artichoke hearts, roughly chopped
1 sweet yellow onion, cut into 1/4-inch dice
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
Bacon Vinaigrette, recipe follows
2 tablespoons fresh basil, thinly sliced into chiffonade
1/2 pound extra-thick-cut bacon, cut into 1/4-inch strips (lardons)
Juice of 1 lemon
1 tablespoon honey
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F. Toss the asparagus, potatoes, artichokes and onion together in a large bowl along with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper so that all the ingredients are well mixed.
  • Divide the vegetables evenly between 2 sheet pans, and give the pans a shake so that the veggies spread into an even layer. Roast the vegetables, rotating the pans halfway through cooking, for 15 minutes.
  • Transfer the roasted vegetables to a large mixing bowl and toss with the Bacon Vinaigrette and chiffonaded basil. Season to taste with additional salt and pepper.
  • Cook the bacon in a 10-inch saute pan over medium heat, stirring occasionally, until the bacon is browned and crisp at the edges, 6 to 8 minutes. Remove the bacon from the pan and place on a plate lined with a paper towel. Pat the bacon pieces dry with a paper towel to remove excess grease. Reserve 3 tablespoons of the rendered bacon fat from the pan.
  • In a small mixing bowl, whisk together the lemon juice, honey and reserved bacon fat, along with 1/2 teaspoon salt and a pinch of pepper until smooth. Taste and add additional salt and pepper as desired.

  • Preheat oven to 350°F..
  • In a shallow baking pan spread bacon in one layer and sprinkle generously with additional pepper. Bake bacon in oven, stirring occasionally, 15 to 20 minutes, or until crisp, and transfer with a slotted spoon to paper towels to drain, reserving drippings.
  • In a small heavy saucepan boil wine with shallot until most wine is evaporated and add cream, mustard, 1/2 teaspoon pepper, and salt to taste. Simmer mixture until thickened slightly and keep warm.
  • In a very large skillet heat half of reserved drippings over moderately high heat until hot but not smoking and cook half of cabbage, stirring, until it begins to wilt, about 2 minutes. Transfer wilted cabbage to a bowl and cook remaining cabbage in remaining reserved drippings in same manner. Return wilted cabbage in bowl to skillet. Add vinegar and cook, stirring, 1 minute. Stir in cream mixture and cook stirring until cabbage is crisp-tender. Add Roquefort, stirring until melted.
  • Divide salad among 6 plates and sprinkle with bacon.

2 large shallots, minced
2 -3 lbs assorted cabbage, cored and cut into shreds 1/4 inch wide
1/2 teaspoon caraway seed (or more if you like)
2 tart green apples, such as granny smith,halved,cored and cut into thin slices
3 tablespoons white wine vinegar
salt & freshly ground black pepper, to taste
1/4 cup fresh flat leaf parsley

Steps:

  • In a large frying pan over medium heat, warm the olive oil.
  • Add the shallots and saute', stirring occasionally, until soft, about 10 minutes.
  • Add the cabbages and caraway seeds, cover and partially cook, stirring often, until the cabbages just begin to soften, about 10 minutes.
  • Add the apples and vinegar and stir together.
