PEANUT BUTTER BUTTERSCOTCH FONDUE

Number Of Ingredients 5

2 (11 ounce) packages butterscotch chips
3/4 C half and half
1 C smooth peanut butter
1 tsp vanilla
dash salt

Steps:

  • 1. Into a large heavy sauce pan place 2 (11 ounce) packages of butterscotch chips and 3/4 C Half and Half.
  • 2. Melt the mixture over medium low heat, stirring occasionally. Make sure you don't allow the temperature to get too high.
  • 3. Remove from the heat and add 1 C smooth peanut butter, 1 tsp vanilla and a dash of salt. Stir until incorporated and smooth. Pour the mixture into a crock pot or fondue pot and serve immediately.

Every year during New Years, you can see me at home of with a few friends. A few warm snacks is great to have on hand. This year, not only will I celebrate New Years this way, but Valentines Day as well! Dust off that Fondue pot, cut up some snacks and dip away!

3/4 c whole milk
2 bags (11oz) butterscotch chips
1 c smooth peanut butter
2 Tbsp boiling water

Steps:

  • 1. In a medium saucepan, warm the milk over medium heat. Add the butterscotch morsels and cook, stirring, until smooth, about 10 minutes; remove from heat. Whisk in the peanut butter until smooth. Stir in the boiling water.
  • 2. Transfer sauce to fondue pot to keep warm. Arrange a platter or decorative plate with fondue skewers, dipping items to serve. Serve fondue warm with the suggestions below or your favorite dippers.
  • 3. Suggestions for dipping: Thick-cut bacon, cooked and cut into 1-inch pieces, Gala apples, cored and sliced, Pretzel rods, Marshmallows Bananas peeled and cut into big bite size chunks Pound Cake cubed Dried fruits Fresh fruits

¼ cup light corn syrup
2 tablespoons butter
½ cup peanut butter
½ cup evaporated milk
4 large marshmallows
1 teaspoon vanilla extract

Steps:

  • Stir brown sugar, corn syrup, and butter together in a small saucepan over low heat until butter is melted and mixture is combined, about 5 minutes.
  • Add peanut butter, evaporated milk, and marshmallows; cook, stirring constantly, until marshmallows are melted and mixture is smooth, 3 to 5 minutes more.
  • Stir vanilla into peanut butter mixture, remove from heat, and transfer mixture to a fondue pot.

4 cups almonds, ground
2 eggs
1 1/2 cups sugar
1 teaspoon espresso, instant
1 teaspoon cocoa
1/2 teaspoon almond extract
1/2 cup sugar
60 blanched almonds (optional)
1 teaspoon lemon rind

Steps:

  • Preheat oven to 350°F Lightly grease cookie sheets.
  • Using an electric stand mixer, beat eggs and 1 1/2 cups of sugar for a couple of minutes until you see a considerable increase in volume. Add the lemon rind, espresso, cocoa and almond extract. Slowly add the ground almonds until blended.
  • Roll the dough into 1" balls. Pour remaining 1/2 cup of sugar into a small flat dish. Roll the formed balls in the sugar and place on cookie sheets about 2" apart. If using the blanched almonds, press one almond per cookie in the center.
  • Bake in the preheated oven for 10-12 minutes or until lightly browned. Remove and cool on a rack.

1 (10 ounce) package frozen chopped broccoli
1 teaspoon beef bouillon granules
1 cup sour cream
1 teaspoon Worcestershire sauce
1 dash garlic powder
crackers or breadstick

Steps:

  • Cook broccoli according to package directions.
  • Drain, reserving 1/3 cup liquid, adding water if necessary.
  • Stir granules into the liquid.
  • In a blender, combine broccoli, reserved liquid and sour cream.
  • Cover and blend till smooth, stopping to scrape down sides of container as necessary.
  • Pour broccoli mixture into a saucepan.
  • Stir in worcestershire sauce and garlic powder.
  • Heat through.
  • Transfer to a fondue pot and place over the burner.
  • Serve with veggies, crackers, and breadsticks.

2 tablespoons natural-style peanut butter
2 cups nonfat milk
cocoa (optional)
chopped dry roasted peanuts (optional)

Steps:

  • Put the peanut butter in a bowl.
  • Using a whisk, mix 2/3 cup of the milk with the peanut butter and whisk till almost smooth, tiny peanut butter chunks are desirable.
  • Mix in the remaining milk.
  • Add the dry pudding mix and using the whisk blend well.
  • Let stand till firm.
