DOUBLE CHOCOLATE BARS
These bars are perfect for when your next chocolate craving hits! Totally addictive! From TOH Quick Cooking '99. (I've made these with the Mint Oreos and mint chocolate chips, and they are heavenly!)

Steps:
- Preheat oven to 350 degrees F.
- Combine cookie crumbs and butter; pat into bottom of an ungreased 13x9 baking pan.
- Combine milk and 1 cup of chocolate chips in a microwave-safe bowl.
- Microwave on high for 1 minute, or until chips are melted; stir until smooth.
- Pour over the cookie crust.
- Sprinkle with remaining chips.
- Bake for 10 - 12 minutes or until the chips are melted.
- Cool and enjoy!
WANDA BARS (DOUBLE CHOCOLATE OREO BARS)
These are so easy - a little bit of chocolate heaven. I have been making these for over 10 years and have been asked more for this recipe than any other. They are named for a woman that gave a friend the recipe - we never knew Wanda but we love her for sharing this one. One reviewer has suggested I rename these "Chocolate Insanity Bars." :) * Some have had trouble with them being gooey - my advice is to use national brand name condensed milk, not store brand, as it tends to be thicker. Also, keep them refrigerated or in a cooler. Enjoy!

Steps:
- Preheat oven to 350 degrees.
- Place cookies in large bowl and crush into small pieces with a small mallet, or place them in a zip bag and crush with a rolling pin, then place in large bowl. Stop when pieces are smaller than a dime but not yet crumbs.
- Pour melted margarine over cookies in bowl and mix until all cookie pieces are well coated. Press in bottom of ungreased 9x13 baking pan.
- Place sweetened condensed milk and 1 cup of the mini chocolate chips in a microwave safe bowl and heat until melted together (30 seconds at a time with stirring in between until smooth). Pour over cookie crust. Sprinkle remaining chocolate chips over top.
- Bake 10 minutes.
- Cool in refrigerator at least 2 hours before cutting.

Steps:
- Preheat oven to 350°F.
- Lightly butter a 9x13-inch baking pan.
- To make the bottom layer, stir together 1 1/3 cups flour, 1/2 tsp baking powder, pinch salt and the brown sugar.
- Use a pastry blender to add the 1/2 cup of butter (in small pieces), until the mixture is crumbly and coarse.
- Press into the bottom of the baking pan.
- Bake at 350°F for 10 minutes, then place pan on rack to cool.
- Leave oven on.
- Next prepare the chocolate ganache.
- After the chopped chocolate is placed in a medium bowl, bring the cream to a simmer in a small saucepan.
- Pour the cream over the ganache, and wait 5 minutes before stirring.
- The ganache will be smooth when ready to refrigerate and set (15 minutes in the refrigerator).
- To prepare the topping, cream the remaining butter in a bowl.
- Add the granulated sugar, and extracts.
- Beat until blended, then beat in the eggs; then stir in coconut and nuts.
- Drop the topping by spoonfuls evenly over the ganache and spread with a spatula or a knife.
- Bake at 350°F for 25-30 minutes, until golden brown.
- Set pan on rack to cool before cutting into bars.
