Completely meatless sloppy joes that are loaded with all that flavor and are made filling with a special ingredient! These sloppy joes are hearty and delicious!

1 pound portobello mushrooms (gills+stems removed)
3/4 cup California Walnuts
2 tablespoons oil
1 medium onion, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
1 1/2 cups ketchup
2 tablespoons brown sugar
1/2 teaspoon EACH: dry mustard AND cayenne pepper
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce (or vegan Worcestershire)
1 tablespoon apple cider vinegar
buns for serving

Steps:

  • make the 'meat': Pulse the mushrooms and walnuts in a food processor in batches until it breaks down into a ground beef texture.
  • cook: heat the oil in a large skillet over medium high heat. Add the onions, bell pepper and minced garlic, and let cook for 5 minutes or until the veggies soften. Add the prepared mushroom mix to the skillet, stir so everything is well combined and let cook for 5 minutes. Add the remaining ingredients: ketchup, brown sugar, dry mustard, cayenne, tomato paste, Worcestershire sauce, and apple cider vinegar. Stir everything together and let simmer for 5 minutes. Adjust with additional salt to taste.
  • assemble: Serve the prepared sloppy joe mix on top of toasted buns. Best when served the day it's prepared. I find the sloppy joes mixture looses that texture on day two.

Mushrooms make these kicked-up sloppy Joes ultra-meaty. But there's no meat here, making this vegan sandwich one of the lightest sloppy Joes you'll probably ever make.

1 pound cremini mushrooms, halved
1 tablespoon extra-virgin olive oil
1 large sweet onion, diced
1 3/4 cups light beer (drink what's left in the bottle)
Kosher salt
1/3 cup finely chopped walnuts
1 small green bell pepper, seeded and diced
Freshly ground black pepper
1/2 teaspoon chipotle chile powder
1/4 cup ketchup
3 tablespoons tomato paste
6 whole grain hamburger buns
Shredded red cabbage or lettuce, pickled jalapeno and scallions, for serving, optional

Steps:

  • Pulse the mushrooms in batches in a food processor until finely chopped. Set aside.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, 1 tablespoon beer and 1/4 teaspoon salt and cook, stirring frequently, until the onions are lightly browned, about 5 minutes. Add the walnuts and peppers and cook, stirring occasionally, until the peppers are crisp-tender, about 3 minutes. Add the mushrooms, 3/4 teaspoon black pepper and chipotle powder and cook, stirring frequently, until the mushrooms are just cooked through, about 5 minutes.
  • Add the remaining beer, the ketchup, tomato paste and 1/8 teaspoon salt and cook while stirring until the sauce is the consistency that you like, about 2 minutes.
  • Spoon the mixture onto each bun. Serve with toppings if desired.

These meatless walnut meat vegan sloppy joes will blow your mind! Super easy to make and perfectly similar to the traditional version.

4 cups walnuts, (soaked)
2 sweet onions, (diced)
8 cloves garlic, (minced)
1 red bell pepper ((other colors work too))
1 tbsp avocado (or olive) oil ((can sub vegetable stock if oil free))
2 tsp garlic powder
1 tsp chili powder
1 tsp smoked paprika
1 15oz can diced tomatoes ((not drained))
2 tbsp soy sauce ((can use coconut aminos or no soy soy sauce))
2 tsp liquid smoke
2 cups ketchup
1/4 cup brown sugar ((can sub coconut sugar))
4 tsp yellow mustard
1-2 tbsp sriracha ((Optional. Only add if wanting it spicy))
8 hamburger buns

Steps:

  • Soak walnuts first if not already soaked. *You can do this by letting them sit in boiling hot water for 30 minutes or let them soak in an air tight container for up to 5 days. We usually let them sit for 24 hours and then use them.
  • Drain soaked walnuts and put them into a food processor and pulse until you have meat like crumbles. Scrapping down as needed.*Do not over process or you will end up with walnut butter.
  • Chop onions, garlic, and peppers.
  • Add a small amount of oil to a skillet, and saute onions and peppers until translucent (about 2-3 minutes).
  • Add in the garlic for 1 more minute.
  • Sprinkle garlic powder, chili powder, and smoked paprika across and stir to combine.
  • Add in the crumbled walnut and stir very well.
  • Pour in canned tomatoes, soy sauce, and liquid smoke. Stir well.
  • Cook until the liquid has evaporated, stirring every few minutes. This will take 20-30 minutes.
  • Add in the ketchup, mustard, and brown sugar. If wanting it spicy, add the sriracha.
  • Stir and cook until the dish is heated throughout.
  • Take off the stove and serve on buns

Wonderfully sweet and tangy Sloppy Joes that I grew up with, but veganized! You won't find any bell peppers here. This is far more wholesome than most Sloppy Joe recipes. The spices can be easily adjusted. These are also great with sweet potato fries! Try this for a quick and economical weeknight meal.

1 tablespoon oil
½ medium onion, chopped
1 pound vegan meatless grounds (such as Smart Ground® or Yves®)
1 cup ketchup
3 tablespoons brown sugar, or more to taste
1 tablespoon apple cider vinegar
2 teaspoons ground mustard
1 teaspoon dried dill weed, or to taste
freshly ground black pepper to taste
4 hamburger buns, split

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion and cook until soft and translucent, about 5 minutes. Add meatless grounds and break up the clumps with a spoon until crumbly. Cook until browned and heated through, about 5 minutes.
  • Reduce heat to low. Add ketchup, brown sugar, apple cider vinegar, ground mustard, dill, and pepper. Mix well, cover, and let simmer until heated through, 3 to 4 minutes. Adjust seasonings if necessary.
  • Serve on hamburger buns.

  • If using green lentils: To a small saucepan, add liquid (I used 1 cup water, 1 cup vegetable broth for added flavor // amount as original recipe is written // adjust if altering batch size) and rinsed green lentils and heat over medium-high heat. Bring to a low boil, then reduce heat to a simmer and cook covered for about 18-22 minutes, or until tender. The water should have a constant simmer (not boil). Drain off any excess liquid and set aside.
  • If using red lentils: To a small saucepan, add liquid (water and/or vegetable broth) and bring to a boil over high heat. Once boiling, add rinsed red lentils and bring back to a gentle boil. Reduce heat to a simmer and cook uncovered, stirring occasionally, for 7-10 minutes, or until just tender. You want them to be cooked through but not mushy. Drain well and set aside.
  • In the meantime, heat a large skillet over medium heat. Once hot, add oil, onion, garlic, and bell pepper. Season with a pinch each salt and pepper and stir to combine.
