Whenever I can get salmon for a good price, I always turn to this simple and delicious recipe. It's good served with mashed potatoes and fresh green beans, too. -Edie DeSpain, Logan, Utah

4 salmon fillets (4 ounces each)
4 teaspoons Dijon mustard
4 teaspoons honey
2 slices whole wheat bread, torn into pieces
3 tablespoons finely chopped walnuts
2 teaspoons canola oil
1/2 teaspoon dried thyme

Steps:

  • Preheat oven to 400°. Place salmon on a baking sheet coated with cooking spray. Mix mustard and honey; brush over salmon. Place bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in walnuts, oil and thyme; press onto salmon., Bake 12-15 minutes or until topping is lightly browned and fish just begins to flake easily with a fork.

1 tablespoon reduced-sodium soy sauce
1 tablespoon Dijon mustard
1 teaspoon ground ginger
1/4 teaspoon salt
4 salmon fillets (6 ounces each)
1/3 cup chopped walnuts

Steps:

  • Preheat oven to 425°. In a small bowl, mix brown sugar, soy sauce, mustard, ginger and salt until blended. Flaxseed-Crusted Salmon with a Grape and Walnut Salsa image

1 cup walnut halves
4 skin-on salmon fillets (6 ounces each), pin bones removed
2 tablespoons Dijon mustard
Kosher salt and freshly ground black pepper
2 tablespoons ground flaxseed
8 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon raw honey
3 cups seedless red grapes, halved
1/2 cup chopped fresh flat-leaf parsley
2 scallions, thinly sliced

Steps:

  • Preheat the oven to 350˚. Place the walnuts on a sheet pan and cook until lightly toasted, about 8 minutes. Transfer the walnuts to a cutting board and when cool enough to handle, roughly chop and set aside.
  • Increase the oven temperature to 400˚. Line a sheet pan with foil. Using paper towels, pat the fish fillets dry. Evenly coat each salmon fillet with 1/2 tablespoon of the mustard. Season the fillets on all sides with salt and pepper and then sprinkle 1/2 tablespoon of the flaxseed on top of each piece of fish, gently pressing them into the flesh. Place the fish on the lined sheet pan and drizzle each fillet with 1 tablespoon of the olive oil. Transfer to the oven and bake until the fish reaches an internal temperature of 125˚, about 10 minutes.
  • Meanwhile, in a medium bowl, whisk together the remaining 4 tablespoons olive oil, the vinegar and honey. Season with a pinch of salt and a twist of black pepper. Add the walnuts, grapes, parsley and scallions and toss together.
  • When the fish is done, remove it from the oven, top each piece with a generous amount of salsa and serve.

ROASTED SALMON WITH WALNUT-PEPPER RELISH

1/2 cup walnuts
Pinch of cayenne pepper
1 tablespoon fresh lemon juice
1 teaspoon honey
2 tablespoons diced roasted red pepper
1 tablespoon walnut oil
2 tablespoons extra-virgin olive oil
1/4 cup chopped fresh parsley
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives
1 teaspoon grated lemon zest
1 2-to-3-pound piece wild salmon (about 1 1/2 inches thick)

Steps:

  • Make the relish: Preheat the oven to 350 degrees F. Spread the walnuts on a baking sheet and bake until toasted, 7 to 10 minutes. Let cool, then finely chop and transfer to a bowl. Add the cayenne, lemon juice, honey, roasted red pepper, walnut oil, 1 tablespoon olive oil and 2 tablespoons parsley. Add 1/2 teaspoon salt and black pepper to taste and toss to combine. (The relish can be made up to 1 day ahead; cover and refrigerate.)
  • Make the salmon: Raise the oven temperature to 425 degrees F. Combine the remaining 1 tablespoon olive oil and 2 tablespoons parsley, the chives, lemon zest, 1/2 teaspoon salt, and black pepper to taste in a bowl. Rub the herb mixture all over the salmon. Lay skin-side down in a baking dish and roast until just cooked through, 12 to 14 minutes. Let rest 5 minutes, then transfer to a platter and top with the walnut-pepper relish.

1/4 cup lemon juice
2 tablespoons olive oil
1 teaspoon chopped garlic
1/2 teaspoon crushed rosemary
1/2 teaspoon crushed thyme
1/4 teaspoon salt
1/4 teaspoon pepper
4 (8 ounce) salmon fillets, skin on
1 cup finely chopped walnuts
1 cup finely chopped croutons
1 tablespoon chopped oregano
1 tablespoon chopped chives
2 tablespoons olive oil
2 tablespoons lemon juice

Steps:

  • Preheat a grill.
  • Mix marinade ingredients in a baking pan. Add salmon, turn to coat, and marinate for 10 minutes.
  • Preheat the oven to 400 degrees F.
  • In a small bowl, mix walnuts, croutons, oregano, chives, olive oil, and lemon juice. On a grill, place salmon meat side down for 4 minutes or until seared. Remove and place on foil lined baking sheet, skin side down. Lightly brush with marinade. Sprinkle crust on top. Bake for 4 to 8 minutes, or until the salmon is cooked to the desired doneness and the crust is golden.

1 skinless salmon fillet (1 pound), cut into 1-inch pieces
3 tablespoons minced peeled fresh ginger
1 tablespoon Dijon mustard
1/3 cup minced fresh chives
Coarse salt and pepper
2 tablespoons olive oil
Toppings, such as mayonnaise and lettuce

Steps:

  • In a food processor, pulse 1 bun until coarse crumbs form; transfer to a plate. Add salmon to processor and pulse until coarsely chopped but not pureed. Transfer to a bowl and add 1/3 cup breadcrumbs, ginger, mustard, chives, 1 teaspoon salt, and 1/4 teaspoon pepper; stir to combine. Form into 4 patties, then coat with remaining breadcrumbs.
  • In a large nonstick skillet, heat oil over medium. Add patties and cook until golden brown outside and opaque throughout, 4 minutes per side. Drain on a paper-towel-lined plate. Serve burgers in remaining buns with desired toppings.

2 tablespoons white balsamic vinegar or 2 tablespoons white wine vinegar
3/4 cup chopped california walnut
3/4 cup panko breadcrumbs, seasoned breadcrumbs (available in Asian markets) or 3/4 cup regular seasoned dry bread crumb
2 tablespoons chopped cilantro
nonstick cooking spray
1 lb skinless salmon fillet, cut into 1-inch cubes
1/2 cup apricot jam
2 tablespoons water
2 tablespoons finely chopped california walnuts
4 teaspoons low sodium soy sauce
1 tablespoon thinly sliced green onion, white and pale green part
1 teaspoon minced ginger
1 teaspoon white balsamic vinegar

Steps:

  • Preheat oven to 400°F Coat a baking sheet with non-stick cooking spray.
  • Whisk together jam and vinegar; set aside. In a blender or food processor, combine walnuts, bread crumbs and cilantro. Process a few turns until blended but still a coarse texture.
  • Brush salmon pieces with the jam mixture. Coat evenly with the walnut bread crumb mixture. Place on prepared sheet and bake for 12 minutes. Serve with Apricot Ginger Dipping Sauce.

4 teaspoons fresh parsley, chopped
4 (4 ounce) salmon fillets
black pepper, freshly ground

Steps:

  • Preheat oven to 400°; Line shallow roasting pan with non-stick aluminum foil, or spray with non-stick pan spray.
  • In small bowl, blend butter, mustard, and honey, set aside. In another bowl, mix together bread crumbs, nuts, and parsley.
