Steps:
- Heat oven to 375°F. Grease 11x7-inch (2-quart) glass baking dish with shortening or cooking spray.
- In large bowl, toss apples, peaches and granulated sugar. Pour into baking dish. In same bowl, mix oats, brown sugar, flour and cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Stir in walnuts. Sprinkle over fruit.
- Bake 30 minutes or until topping is golden and fruit is tender. Cool 15 minutes. Serve warm.

- Preheat oven to 350 degrees F (175 degrees C).
- Arrange peaches evenly in an 8x8-inch baking dish.
- Mix flour, brown sugar, butter, cinnamon, and salt in a bowl using a pastry cutter until evenly crumbled. Fold oats into flour mixture; sprinkle and press topping into peaches.
- Bake in the preheated oven until topping is lightly browned, about 30 minutes.

APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

- Preheat oven to 350 degrees F (175 degrees C).
- Toss apples with white sugar and 1/2 teaspoon cinnamon in a medium bowl to coat; pour into a 9-inch square baking dish.

- Heat the oven to 375 degrees F. Butter a large baking dish and set aside. Place the apples, lemon juice and vanilla in a large bowl and toss to coat. Add the granulated sugar, 1 1/2 tablespoons flour and nutmeg, stirring to combine.
- Place remaining 1 cup flour, nuts, brown sugar, cinnamon and salt in a medium bowl. Using a pastry cutter or 2 knives, cut the butter into the flour mixture until it resembles coarse crumbs. - In a bowl stir together well the flour, the oats, the brown sugar, the cinnamon, and the salt. Add the butter, blend the mixture until it resembles coarse meal, and stir in the walnuts. In a large bowl toss the apples with the lemon juice and the granulated sugar and transfer the mixture to a buttered 10-inch (2 quart) pie plate. Crumble the topping evenly over the apple mixture and bake the crisp in the middle of a preheated 375°F. oven for 25 to 30 minutes, or until the apples are cooked through and the top is golden. I used McIntosh apples for this but Granny Smith will do also, though you might have to bake the crisp slightly longer if using Granny Smith apples. This is the best apple crisp!

- Set oven to 375 degrees.
- Butter a 10-inch deep-dish glass pie plate (or use an 11 x 7-inch baking dish).
- For the topping; in a bowl stir together the flour, oats, brown sugar, cinnamon and pinch salt; add in butter and blend with fingers until mixture resembles coarse meal.
- Add in the toasted walnuts; set aside while preparing the filling.
- In a large bowl toss the apple slices with the lemon juice; add in all remaining ingredients except the vanilla ice cream, toss well to combine and transfer to the prepared pie plate or baking dish.
