With just 3 ingredients and about 5 minutes of prep, this Dump-and-Bake Wagon Wheel Pasta Casserole is an easy and healthy vegetarian dinner that's perfect for busy weeknights!

16 ounces (about 5 cups dry) uncooked mini wheels pasta
3 cups (about 25.5 ounces) marinara sauce
3 cups water
1 teaspoon salt
¼ cup chopped fresh basil (optional)
2 cups grated mozzarella cheese
Optional garnish: grated Parmesan cheese; chopped fresh parsley or basil

Steps:

  • Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish (or two 8-inch square baking dishes) with cooking spray.
  • In the prepared dish (or in a separate bowl), stir together dry (uncooked) pasta, marinara sauce, water, salt and basil (if using). Cover tightly with foil.
  • Bake (covered) for 25 minutes.
  • Remove dish from oven, take off cover, and give the pasta a stir. At this point it should be almost done, but still a bit firm ("al dente").
  • Sprinkle the grated mozzarella cheese over the top of the casserole. Return the dish to the oven (uncovered) for an additional 5-10 minutes -- or just until the cheese is melted and the pasta is tender.
  • Garnish with optional grated Parmesan cheese and fresh herbs, if desired.

1 pound wagon wheel-shaped pasta (rotelle)
1 tablespoon olive oil, plus 1/4 cup
8 ounces pancetta, finely diced
1 large or 2 small shallots, chopped
1/2 cup low-sodium chicken broth
1 1/2 cups (5 ounces) sugar snap peas, cut into 1-inch pieces
1 1/2 cups (9 ounces) shelled edamame peas
1 cup frozen petite peas, thawed
1 cup finely grated Parmesan
1 teaspoon kosher salt
1/4 cup chopped fresh mint leaves

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and reserve 1 cup of the pasta water.
  • In a large skillet, heat 1 tablespoon oil over medium-high heat. Add the pancetta and cook, stirring frequently, until golden and crisp, 6 to 8 minutes. Using a slotted spoon, remove the pancetta and drain on a paper towel-lined plate. Add the shallots to the pan and cook until soft, 2 to 3 minutes. Add the broth and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Stir in the snap peas and simmer until tender, about 2 minutes. Add the pasta, cooked pancetta, edamame peas, petite peas, Parmesan, the remaining 1/4 cup olive oil, salt, and mint leaves. Toss until coated, adding the reserved pasta water, 1 tablespoon at a time, to loosen the sauce. Transfer to a large bowl and serve.

1 cup shredded reduced-fat cheddar cheese, divided
1/4 cup uncooked instant rice
1 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in the chili, tomatoes, chips, 1/2 cup cheese, rice, chili powder, salt and pepper. Drain pasta; add to beef mixture. , Transfer to a 2-qt. baking dish coated with cooking spray. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 25-30 minutes or until cheese is melted.

1-1/2 cups meatless spaghetti sauce
1 cup shredded part-skim mozzarella cheese, divided

1 boneless skinless chicken breast, cut into 1/2 inch pieces
1 1/4 teaspoons salt, divided
1/2 cup all-purpose flour
4 1/2 cups whole milk
2 cups shredded cheddar cheese
1 cup shredded swiss cheese
1 cup shredded mozzarella cheese
1 (10 ounce) package frozen chopped broccoli, thawed and drained (I use fresh cooked chopped broccoli)
1 (16 ounce) box mini wheels pasta, cooked and kept warm
1 cup panko breadcrumbs
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350°; spray 12 (1 cup) ovenproof ramekins with nonstick cooking spray.
  • In a large skillet, heat 1/4 cup butter over med-high heat until melted and hot.
  • Sprinkle chicken with 1/4 teaspoon salt; add chicken to skillet and cook for 3-4 minutes, stirring occasionally, or until cooked through.
  • Add flour and remaining 1 teaspoon salt; cook, stirring constantly, for 2 minutes or until blended and smooth.
  • Gradually stir in milk.
  • Cook, stirring occasionally, for 5-6 minutes or until mixture is slightly thickened.
  • Add cheese, stirring until melted and smooth.
  • Stir in broccoli.
  • Add cooked pasta to cheese mixture, stirring gently until well blended.

1/2 cup chopped onion
1/2 cup chopped green pepper
1 lb lean ground beef
1 (15 1/2 ounce) can mild chili beans, in sauce
3/4 cup barbecue sauce
1/2 teaspoon salt
1 (8 1/2 ounce) package corn muffin mix
1 (11 ounce) can Mexican-style corn, drained

Steps:

  • Preheat oven to 400 degrees.
  • Chop onion and bell pepper.
  • Brown meat with onion and pepper un til beef is no loner pink; drain .
  • Stir in chili beans, barbecue sauce annd salt. Bring to a boil.
  • Spoon into a 9 inch square pan.
  • Prepare corn muffin mix acording to package irections; stir in corn.Spoon over meat mixture.
  • Bake 30 minutes or until golden brown.

1 (12 ounce) package frozen breakfast pork sausage links
3 cups loose-pack frozen hash brown potatoes
1/2 cup chopped green onion (with tops)
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 (8 ounce) package cream cheese, softened
3/4 cup Bisquick baking mix
1/3 cup milk
2 eggs
1/2 cup shredded cheddar cheese

Steps:

  • Heat oven to 400 degrees.
  • Cook sausages until very light brown; drain.
  • Generously grease 10 x 1 1/2 inch pie plate.
  • Spread potatoes in bottom of pie plate.
  • Mix onions, 2 tablespoons milk, salt, pepper and cream cheese; spread over potatoes.
  • Sprinkle with shredded cheddar cheese.
  • Arrange sausages in a spoke fashion on top.
  • Beat baking mix, 1/3 cup milk and the eggs with wire whisk or hand beater until almost smooth, about 1 minute; pour around sausages.

  • Cut sausage links in half lengthwise; arrange over potatoes in a spoke-like fashion. In a small bowl, whisk the biscuit mix, egg, nutmeg, and remaining milk until smooth; pour between sausages. Sprinkle with paprika. Bake at 400 for 25-30 minutes or until golden brown and filling is bubbly.
