Roast Leg of Lamb With Anchovy, Garlic and Rosemary image

1 4-pound bone-in leg of lamb
4 large garlic cloves, peeled and sliced lengthwise into thirds
20 anchovy fillets in oil, drained
1 bunch rosemary
6 tablespoons butter, softened
Freshly ground black pepper
1 2/3 cups white wine
Juice of 1 lemon
Salt, as needed
1 small bunch of watercress, to garnish (optional)

Steps:

  • Preheat the oven to 425 degrees. With a small, sharp knife, make 12 incisions 2 inches deep into the fleshy side of the leg. Insert a piece of garlic, half an anchovy and a small sprig of rosemary into each incision. Push them in with your little finger.
  • Cream the butter with the remaining anchovies and smear it all over the meat. Sprinkle the meat generously with black pepper, place in a roasting pan and pour the wine around it. Tuck in any leftover sprigs of rosemary and pour the lemon juice over the meat.
  • Roast in the oven for 15 minutes; lower the oven temperature to 350 degrees and roast for 1 hour more, basting from time to time with the juices. (Cook slightly longer, depending on how well done you like your meat.) Let rest in a warm place for at least 15 minutes before carving.
  • Meanwhile, taste the juices, adding salt as needed. (It should not need much because of the anchovies.) If the gravy is too thin, simmer it in a skillet to thicken. If you choose, garnish the slices of lamb with sprigs of watercress. Serve with gravy and mashed potatoes or creamed eggplant.

Steps:

4 rosemary sprigs, leaves removed
4 garlic cloves , crushed
1 tbsp capers , finely chopped
3 anchovy fillets in oil, drained and finely chopped
2 tbsp olive oil
2 whole lemons
1 ½kg shoulder of lamb , on the bone
2 red onions , cut into wedges
small glass white wine

Steps:

  • Heat oven to 160C/140C fan/gas 3. Finely chop the rosemary, then mix with the garlic, capers, anchovies, olive oil and zest and juice of 1 lemon, reserving the used lemon halves. Make 3-4 slashes across the top of the shoulder, then rub the rosemary mixture all over the lamb.
  • Scatter the onion into the base of a large roasting tin, cut the remaining lemon in half, squeeze the juices into the tin, and place all the used lemon halves in the tin with the onions. Place the lamb on top and roast for 1 hr. Pour in the wine and roast for a further 3 hrs until the meat is really tender. Leave to rest for 15 mins then serve, pulled into chunks rather than carved, with any pan juices.

1 (7-pound) semi-boneless leg of lamb, aitchbone removed, fat trimmed to 1/4 inch thick, and lamb tied
4 garlic cloves
1 tablespoon fine sea salt
2 tablespoons chopped fresh rosemary
1/2 teaspoon black pepper
1/4 cup dry red wine or beef broth

Steps:

  • Pat lamb dry and score fat by making shallow cuts all over with tip of a sharp small knife.
  • Pound garlic to a paste with sea salt using a mortar and pestle (or mince and mash with a heavy knife) and stir together with rosemary and pepper. Put lamb in a lightly oiled roasting pan, then rub paste all over lamb. Let stand at room temperature 30 minutes.
  • Preheat oven to 350°F.
  • Roast lamb in middle of oven until an instant-read thermometer inserted 2 inches into thickest part of meat (do not touch bone) registers 130°F, 1 1/2 to 1 3/4 hours. Transfer to a cutting board and let stand 15 to 25 minutes (internal temperature will rise to about 140°F for medium-rare).
  • Add wine to pan and deglaze by boiling over moderately high heat, stirring and scraping up brown bits, 1 minute. Season pan juices with salt and pepper and serve with lamb.

6 anchovy fillets, roughly chopped
2 tbsp roughly chopped rosemary , plus extra sprigs, to serve
4 tbsp olive oil
12 lamb leg steaks, about 250-300g each
lemon wedges, to serve

Steps:

  • Put the lemon zest, anchovies, rosemary and the oil in a food processor, then blend to a rough paste. Put the lamb in a large food bag or bowl, then pour over the marinade, massaging it into the meat. Marinate in the fridge for at least 1 hr, preferably overnight.
  • Heat the barbecue, then cook the lamb for 4-5 mins each side (depending on the thickness of the lamb and how you like it cooked) until nicely browned on the outside. Transfer to a board, cover with foil and leave to rest for 10 mins. Serve sprinkled with rosemary sprigs, and lemon wedges for squeezing over.

4 kg lean lamb shoulder
1 large onion, peeled and quartered
2 sticks celery, chopped
1/4 teaspoon dried rosemary
1 2/3 liters water
570 ml red wine
450 g button onions, peeled
115 g all-purpose flour
4 tablespoons anchovy puree
300 g button mushrooms
50 g walnuts, chopped
salt & freshly ground black pepper
chopped parsley

Steps:

  • Peel the button onions, peel and quarter the large onion, chop the celery sticks into 2 inch pieces, chop the walnuts roughly and finely chop the parsley.
  • With a sharp knives, cut all the meat off the shoulders of lamb, reserving the bones.
  • Trim off any fat, then cut the meat into cubes.
  • Put the fat into a frying pan over gentle heat to melt it down. Place the lamb bones in a large pot with the quartered onion, celery, a good pinch of rosemary and the water. Bring to the boil, cover and simmer gently for 1 ½ hours then strain the stock into a bowl.
  • Heat 4 tablespoons of the lamb fat in a large pot and fry the button onions over high heat until brown.
  • Remove the onions with a slotted spoon and set them aside on a plate.
  • Fry the lamb cubes in two or three batches until browned on all sides.
  • Set the browned meat aside with the onions.
  • Once all the meat has been browned and set aside, sprinkle the flour into the remaining fat in the pot, add a little extra lamb fat if necessary, cook over a very gentle heat, stirring frequently until the flour is browned, them gradually stir in the wine and 1.1 litres of the lamb stock, bring to the boil stirring all the time. Add the remaining rosemary and stir in the anchovy puree with a wire whisk.
  • Return the meat and onions to the pot.
  • Cover and simmer gently for 1 hour stirring from time to time.
  • Add the mushrooms and walnuts, cover and simmer gently for 15 minutes.
  • Season to taste with pepper and salt if necessary
  • Turn into a serving dish and sprinkle generously with parsley.
