A wafflewich is a masterpiece of textures with chewy waffles, smooth ice cream, gooey caramel syrup and crunchy pecans. This is cold storage comfort food. -Taste of Home Test Kitchen, Milwaukee, Wisconsin

Number Of Ingredients 8

24 frozen mini waffles, unseparated
2 tablespoons butter
1-1/2 cups chopped pecans
2 tablespoons brown sugar
1/2 teaspoon chili powder
1/2 teaspoon vanilla extract
1/4 cup caramel sundae syrup
1-1/2 cups dulce de leche or vanilla ice cream

Steps:

  • Toast waffles according to package directions; separate into mini waffles and cool completely., In a large skillet, melt butter over low heat; stir in pecans, brown sugar, chili powder and vanilla. Cook and stir 4-6 minutes or until nuts are toasted. Transfer to a shallow bowl; cool completely., To assemble, spread 1 teaspoon caramel syrup over a mini waffle; top with 2 tablespoons ice cream. Top with a second waffle, pressing to spread ice cream to edges. Roll sides into spiced pecans; place on a plate. Freeze, covered, until firm.

2 pieces pumpernickel rye bread
3 tablespoons Thousand Island dressing
2 slices Swiss cheese
4 slices pastrami
1/4 cup sauerkraut
2 tablespoons butter (salted or unsalted)
Potato chips, for serving

Steps:

  • Preheat a waffle maker on medium-low heat.
  • Spread each slice of bread with the Thousand Island dressing. Place a piece of cheese on top of each slice.
  • Add the pastrami and sauerkraut to one side. Close the sandwich and butter the top with 1 tablespoon butter.
  • Set the sandwich, butter-side down, in the waffle maker. Spread the remaining butter on top of the sandwich and close the waffle maker.
  • Toast until golden and crisp, 2 1/2 to 3 minutes.
  • Remove, slice in half and serve with potato chips.

Saw a recipe similar to this at the egg beaters web site. This is my version. Very tasty and a good start to the day. I use whole grain waffels and light maple syrup.

4 frozen waffles
1/2 cup egg substitute
4 slices Louis Rich turkey bacon
1/4 cup 2% cheddar cheese
2 teaspoons light margarine
1 teaspoon maple syrup

Steps:

  • Line a paper plate with two layers of paper towels. Place bacon on paper towels, and place another paper towel on top. Cook bacon in microwave on high for 2 minutes Flip bacon over and cook another 1 to 2 mins or till desired donenes.
  • When you flip bacon, put waffles in toaster and toast according to directions. While the waffels are toasting. Cook egg substitute in a little bit of cooking spray. When egg is almost done sprinkle in cheese.
  • Lastly mix maple syrup and margarine together in a small bowl.
  • If cooked as specified above, everything should be ready about the same time.
  • To assemble, spread 1/2 of margarine mixture on two of the waffles. Put 1/2 of egg mixture on each "buttered" waffle. Top wih 2 slices of bacon (torn in half) and one "unbuttered" waffle. Slice in half and enjoy.

2 tablespoons horseradish mayonnaise
2 slices provolone
4 slices deli roast beef
2 tablespoons sliced pepperoncini
2 tablespoons butter (salted or unsalted)
Potato chips, for serving

Steps:

  • Preheat a waffle maker on medium-low heat.
  • Spread each slice of bread with the horseradish mayonnaise. Place a piece of cheese on top of each slice.
  • Add the roast beef and pepperoncini to one side. Close the sandwich and butter the top with 1 tablespoon butter.
  • Set the sandwich, butter-side down, in the waffle maker. Spread the remaining butter on top of the sandwich and close the waffle maker.
  • Toast until golden and crisp, 2 1/2 to 3 minutes.
  • Remove, slice in half and serve with potato chips.

TURKEY BACON WAFFLEWICH

3 tablespoons Dijon mustard
2 slices Cheddar
4 slices deli turkey, folded
4 slices cooked bacon
1/4 cup baby spinach
Thinly-sliced red onion, to taste
2 tablespoons butter (salted or unsalted)
Potato chips, for serving

Steps:

  • Preheat a waffle maker to medium-low heat.
  • Spread each slice of bread with the mustard. Place a piece of cheese on top of each slice.
  • Add the turkey, bacon, spinach and onion to one side. Close the sandwich and butter the top with 1 tablespoon butter.
  • Set the sandwich, butter-side down, in the waffle maker. Spread the remaining butter on top of the sandwich and close the waffle maker.
  • Toast until golden and crisp, 2 1/2 to 3 minutes.
  • Remove, slice in half and serve with potato chips.

2 cups fat-free cottage cheese
4 eggs
4 tablespoons whole wheat flour
1/4 teaspoon salt
4 tablespoons Splenda sugar substitute (or to taste)
1/4 teaspoon cinnamon

Steps:

  • Mash Cottage cheese until as smooth as possible (you can also run in through the blender for a second.).
  • Add eggs and mix.
  • Add remaining ingredients and let sit for 5 minutes.
  • Meanwhile, heat up waffle maker and spray with non-stick cooking spray.
  • Pour about 1/4 cup of the batter onto each waffle mold (1/2 cup total for a double waffle maker).
  • Cook as per machine instructions.
  • Serve with fresh fruit, sprinkle of Splenda, or Sugar Free Syrup.
  • These can be frozen and popped into the toaster to warm as needed.

2 tablespoons jif creamy peanut butter
1/2 banana, sliced
1/4 cup chocolate chips

Steps:

  • Toast waffles in the toaster until desired doneness.
  • heat miniature marshmallows and Jif in microwave until melted, then mix together.
  • Spread the peanut butter mix on waffle, then bananas, then chocolate chips.
  • Close sandwich with other waffle.
