2 cups whole wheat flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 tablespoons sugar
3 eggs
3 tablespoons butter or coconut oil, melted
2 cups milk

Steps:

  • Plug in your waffle iron to get it heating. (I love this inexpensive animal waffle maker!)
  • In a medium bowl, add the flour, baking soda, baking powder, salt, and sugar. Use a whisk to combine them.
  • Make a well in the center of your flour mixture and crack the eggs into it, add the melted butter and the milk. Whisk to combine well.
  • Ladle into the waffle iron and cook according to manufacturer's instructions.
  • Eat piping hot or keep warm in a 200 degree oven until you are ready to serve.
  • Delicious with blueberries and freshly whipped cream on top, butter and syrup, jam, or whatever else you enjoy on a waffle.

1 ½ cups water
1 cup sourdough starter
½ cup vegetable oil
2 eggs
2 tablespoons white sugar
2 teaspoons salt
1 tablespoon water
1 teaspoon baking soda

Steps:

  • Mix flour, 1 1/2 cup water, and sourdough starter together in a large bowl to make batter. Cover loosely with plastic wrap and let sit in a warm place until filled with large holes and bubbles, 4 hours to overnight.
  • Stir oil, eggs, sugar, and salt into the batter; mix well to combine.
  • Whisk 1 tablespoon water and baking soda together in a small bowl until dissolved. Fold into the batter with a rubber spatula.

2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 large eggs, separated
2 cups milk
1/4 cup canola oil
CINNAMON CREAM SYRUP:
1 cup sugar
1/2 cup light corn syrup
1/4 cup water
1 can (5 ounces) evaporated milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Mixed fresh berries, optional

Steps:

  • In a bowl, combine the flour, sugar, baking powder and salt. Combine the egg yolks, milk and oil; stir into dry ingredients just until moistened. In a small bowl, beat egg whites until stiff peaks form; fold into batter. Bake in a preheated waffle iron according to manufacturer's directions., Meanwhile, for syrup, combine sugar, corn syrup and water in a saucepan. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the milk, vanilla and cinnamon. Serve with waffles. If desired, serve with fresh berries.Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in a resealable plastic freezer bag. Reheat waffles in a toaster on medium setting. Or, microwave each waffle on high for 30-60 seconds or until heated through.

1/4 cup oil
4 tablespoons ground flax seeds
3/4 cup water
1/2 cup milk

Steps:

  • Combine ground flax and water; set aside until water is absorbed (about 10 minutes).
  • Combine remaining ingredients; add flax.
  • Spread into baking dish. (I actually use a 11" round stoneware deep dish baker for this cornbread with an 11-cup capacity. I think a 9x9x2" square pan would be an equivalent substitution, or a 13x9" rectangular pan - but you may have to adjust the cooking time.).

2 cups whole wheat flour (made from 1.6 cups soft white wheat berries)
4 teaspoons baking powder
4 tablespoons sugar
1 teaspoon salt
1 1/4 cups 1% low-fat milk
2 large eggs
3 tablespoons melted butter
1 tablespoon vanilla

Steps:

  • Grind wheat berries to fine flour. I use a Vitamix blender for 1 minute on high.
  • Mix all dry ingredients.
  • Mix all wet ingredients seperately.
  • Combine wet and dry with a fork or whisk just till moistened. Do not over mix. Let it sit 5-10 minutes if possible.
  • Cook on 300 degree griddle til lightly browned on each side.
