WAFFLE JOY OF COOKING RECIPE - (4/5)

Waffle Joy of Cooking Recipe - (4/5) image

Provided by bdeedman

Number Of Ingredients 9

1 3/4 cups cake flour
2 tsp baking powder
1/2 tsp salt
1 tbsp sugar
3 egg yolks
2 to 7 tablespoons melted butter or oil
1 1/2 cups milk
1 tsp vanilla
3 egg whites

Steps:

  • I just use all-purpose flour, but I sift or whisk it before measuring. Combine all dry ingredients and re-sift or whisk. In a separate bowl, beat the egg yolks and add the butter (I used 3 tablespoons; the more oil, the more crisp the waffle), milk, and vanilla.Combine with a few swift strokes. The batter will be slightly lumpy, like muffin batter. If you want to add anything like nuts or chocolate chips to the batter, now's the time. 1/2 cup is about right for most additions. Beat the egg whites until stiff, but not dry. Fold them into the batter until barely blended. Cook according to your waffle maker's instructions. On mine that's about three minutes, or until steam stops coming out. Makes 12 4" square waffles. Oh, the vanilla is my own addition, and not part of the original recipe. I just like it in my waffles and pancakes. If you're holding your waffles instead of eating them right out of the waffle maker and want to keep them crisp, warm your oven to 200°F and put the waffles on wire racks instead of a tray or plate.

I used almond milk instead of regular milk. The egg whites really make a big difference. Very tasty. Recipe courtesy of JoyFoodSunshine.com.

Time 20m

Yield 20 waffles, 10-12 serving(s)

Number Of Ingredients 10

4 cups all-purpose flour
2 tablespoons granulated sugar
2 1/2 tablespoons baking powder
1/2 teaspoon sea salt
1/2 teaspoon cinnamon
4 eggs, separated
3 1/2 cups milk
1/2 cup butter, melted
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, mix together flour, sugar, baking powder, sea salt, and cinnamon. Set aside.
  • Preheat a waffle maker to medium heat.
  • Separate egg whites from yolks. Make sure to save both parts of the egg.
  • Put whites in the bowl of your standing mixer and beat on high ntil stiff peaks form.
  • Transfer beaten egg whites to a bowl and set aside in the refrigerator.
  • Add egg yolks and butter to the bowl of your standing mixer and mix on medium speed until combined.
  • Add milk, applesauce, and vanilla extract and beat until combined.
  • Add half of the dry ingredients and beat until combined.
  • Repeat with remaining dry ingredients.
  • Add beaten egg whites and fold into the batter by hand with a spatula.
  • Spray waffle maker lightly with non stick cooking spray and scoop 1 cup of batter into the center of the waffle plates. **I don't use cooking spray. I save my butter wrappers when they are used--something my Mom did and use those to grease everything.
  • Cook on medium heat for 3 to 5 minutes or until the waffles are golden brown.
  • Repeat with remaining batter until it has all been used.
  • To keep warm, preheat oven to warm setting and put each batch of waffles on a large baking sheet in the warm oven until ready to serve.
  • Serve with warm maple syrup, whipped cream, fresh berries, etc.
