WAFFLED BRIOCHE FRENCH TOAST



Waffled Brioche French Toast image

No skillet-or stovetop-required for quick, decadent French toast. Waffling creates two textures: thin and crunchy and thick and fluffy, for variation in every forkful.

1 1/2 cups milk
3 tablespoons sugar
1 teaspoon pure vanilla extract
Pinch salt
5 large eggs
Four 1 1/2-inch-thick slices brioche or challah bread
Melted unsalted butter, for brushing waffle iron
Maple syrup, raspberries and confectioners' sugar, for topping
Special equipment: waffle iron (preferably Belgian style)

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F (to keep cooked waffles warm). Whisk together the milk, sugar, vanilla, salt and eggs in a bowl or baking dish. Soak a piece of bread in the mixture for 2 minutes per side.
  • Lightly brush the top and bottom of the waffle iron with butter. Place the soaked bread on the waffle iron and close gently (don't push down). Cook until golden brown and dry underneath when you lift a corner, 5 to 6 minutes. Keep the warm in the oven or covered with foil on a plate. Repeat with the remaining bread.
  • Top the French toast with syrup, raspberries and confectioners' sugar.

8 large eggs
2 cups 2% milk
1/2 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
16 slices Texas toast
Maple syrup

Steps:

  • In a large bowl, whisk the first 6 ingredients until blended. Dip both sides of bread in egg mixture. Place in a preheated waffle iron; bake until golden brown, 4-5 minutes. If desired, cut waffles into thirds. Serve with syrup. Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in freezer containers. Reheat frozen waffles in a toaster on medium setting.

½ cup whole milk
2 large eggs
1 tablespoon maple syrup
½ teaspoon vanilla extract
1 pinch salt
4 pieces 1/2-inch thick pieces brioche

Steps:

  • Preheat a waffle iron according to manufacturer's instructions and spray with cooking spray.
  • Whisk milk, eggs, maple syrup, vanilla extract, and salt together in a wide bowl until thoroughly combined. Dip bread slices 1 at a time in the egg mixture, coating both sides completely. Lift bread with a slotted spatula to allow excess egg mixture to drain back into the bowl. Place dipped bread slices on a rimmed baking sheet and let rest until mixture soaks in, about 2 minutes.
  • Place dipped bread in the preheated waffle iron. Gently close the lid without forcing it down. Cook according to manufacturer's instructions until golden brown, 3 to 5 minutes. Repeat with remaining slices.

Just a little twist on the traditional French toast, using waffles instead of bread. Use as much or as little cinnamon and Splenda as you'd like.

2 frozen waffles
1 egg white
2 tablespoons soymilk
cinnamon
Splenda sugar substitute

Steps:

  • Heat the waffles in the microwave, about five or ten seconds on each side. You want it to be mostly defrosted, but not totally hot.
  • Whisk the egg white and soymilk in a small bowl, and add cinnamon and Splenda to taste.
  • Dip each waffle in the egg mixture, making sure to get the egg into the nooks in the waffles. Sprinkle each side of the waffles with some more cinnamon and sugar, and cook over medium heat in a nonstick pan sprayed with cooking spray for about five minutes, or until nicely browned.
  • Sprinkle with more cinnamon and Splenda to serve, if desired.

2 eggs, beaten
1/4 cup milk

Steps:

  • Preheat waffle iron.
  • Allow 2 to 3 slices of bread per serving.
  • Trim bread, if necessary, to fit your waffle iron.
  • Beat the eggs, milk, butter, vanilla and cinnamon in a shallow bowl or pie plate.
  • Dip bread in egg mixture, coating both sides.
  • Cook in hot waffle iron until golden brown.

Melt ½ cup (1 stick) unsalted butter in the same small microwave-safe bowl in a microwave on medium power, in 20-second intervals (or in a small saucepan over medium heat). Gradually pour butter into syrup, whisking constantly until completely incorporated. If mixture does not come together or is too thick (it should look like a light, thin caramel sauce), warm slightly by placing bowl on the warm waffle iron or briefly in the oven, then whisk again.
