WAFFLE CORN DOGS
Make these savory waffle corn dogs! Filled with beef franks and baked with a corn muffin mix, these are the perfect party appetizers.

Steps:
- Spray 8-inch electric waffle iron with cooking spray. Heat to medium heat.
- Thread each frank piece onto separate wooden skewer; place on grid of prepared waffle iron, letting ends of sticks hang over sides of waffle iron. Close lid. Cook franks 1 to 2 min. or until heated through. Remove from waffle iron.
- Prepare corn muffin batter as directed on package; stir in cheese.
- Spread half the batter onto bottom grid of waffle iron. (Batter will not completely cover waffle grid.) Place franks over batter, letting ends of sticks hang over sides. Spread remaining batter over franks. Close lid. Cook 4 to 5 min. or until waffles are golden brown.
- Remove waffles from iron in quarters; cut each quarter in half. Serve with ketchup.

Steps:
- Fill a large pot halfway with the oil. (You should have a least 4 inches of oil in the pot.) Bring the oil to 350 degrees F over medium to medium-high heat. Line a plate with a paper towel.
- Meanwhile, in a large bowl, combine the corn muffin mix, milk, egg, pickled jalapeno juice and a pinch of salt and whisk until blended. If the batter is really thick, add a little more milk. (It should be the consistency of thick pancake batter.) Let rest for about 5 minutes.
- Skewer each hot dog on a chopstick or skewer. Place the flour on a plate or sheet tray. Working in batches of three, dredge the hot dogs in the flour so they are completely coated, making sure to shake off any excess flour. Dip the hot dogs in the batter and turn to completely coat. Gently slide them into the oil and fry, rotating occasionally so they evenly brown, until golden brown all over, 4 to 6 minutes. Remove to the lined plate. Serve with mustard for dipping.

- Preheat a waffle iron. Meanwhile, in a large bowl, combine corn muffin mix, egg, and sour cream. Stir until evenly combined then fold in cheddar and chives.
- Cut each hot dog in half lengthwise and then in half crosswise; stick a skewer into each piece.
- Spread about half of the batter onto waffle iron. Place hot dogs on top, then spread the remaining batter over hot dogs.
- Close the waffle iron and cook until the waffle is cooked through, about 4 minutes.
- Carefully remove waffle and slice into eighths.
- Serve with ketchup and mustard for dipping.

- Prepare the cornbread mix according to package directions. Put the wooden skewers through the center of each hot dog.
- Heat the waffle iron and when heated spray the non stick cooking spray the top and bottom well. Put some of the cornbread mix in each of the four squares. Place two hot dogs in each square with the skewers facing out. Cover each hot dog with more cornbread batter.
- Carefully remove the waffle corn dogs and cut each one in half.Hint: Letting them cool for a few minutes makes them less likely to fall apart, and use a butter knife to help getting them out a little easier.
