JUICY BAKED PORK CHOPS
These baked pork chops are the best oven baked pork chops ever! They are so easy to make, super juicy, and flavorful. Rub them with a few pantry staple spices and pop them into the oven for about 18 minutes and dinner will be ready!

Steps:
- Turn your oven to 400 degrees Fahrenheit.
- In a small bowl, mix together the paprika, onion powder, garlic powder, salt, pepper, and oregano.
- Drizzle the 1 tablespoon of olive oil over both sides of the pork chops. Sprinkle the spice mix evenly over both sides of the pork chops and place them in a baking dish. (see notes) Drizzle them with the remaining tablespoon of olive oil.
- Bake the pork chops uncovered for 18 minutes, or until they reach an internal temperature of 140 degrees Fahrenheit. Once you remove them from the oven, let them rest in the pan for 5 minutes before serving.

Steps:
- Season chops with salt & pepper, brown in lightly oiled skillet.
- Place in 9x13 pan sprayed with cooking spray.
- Preheat oven to 350 deg.
- Prepare Stove-Top according to package, spoon over chops.
- Mix soup and milk in bowl, pour over top.
- Cover with foil and bake 1hr, or a little more until pork has reached safe internal temperature. You can bake longer for increased tenderness if desired, chops will be moist. You can also uncover last 20 mins or so of baking for top of casserole to brown.
BAKED PORK CHOPS W/ GARLIC PARMESAN SAUCE
A very tasty and easy dinner in less than an hour. I found this in a Southern Living cookbook and thought it was worth passing on. I served this with Uncle Ben's Garlic and Butter rice and a vegetable.

- Preheat oven to 375 degrees.
- Season chops with salt and pepper.
- Mix milk and mustard; dip chops into mixture and coat with breadcrumbs.
- Place chops on rack in a broiler pan; bake for 30 minutes or until done.
- FOR THE SAUCE: Melt 1 Tbsp butter in small saucepan over med-high heat; add garlic and saute for 2-3 minutes.
- Stir in cream, wine/broth and cheese; reduce heat and simmer (no boil) for 3-4 minutes.
- Whisk in 3 Tbsp of butter until melted.
- Pour over chops and serve.

- Combine cracker crumbs, cheese, salt and pepper in a bowl. Dip pork chops in flour, this way, the coating will stick.
- Beat egg and milk in shallow bowl.
- Coat pork chops in crumb mixture.
- Dip in egg mixture and into crumbs again.
- Pour melted butter into baking dish.
- Arrange pork chops in prepared dish.
- Bake at 350 degrees for about 30 minutes on each side (I use THICK chops, so if yours are thin, decrease baking time.).

- Preheat oven to 350º.
- Spray baking dish lightly with cooking spray.
- Mix in baking dish the Whole Berry Cranberry Sauce & Onion Soup Mix.
- Place pork in baking dish and spoon some of the mixture over the top.
- Cover with foil and bake 30 minutes.
- Remove foil, turn chops and continue to bake uncovered additional 20-30 minutes or until pork is done & tender.
- Serve spooning sauce over pork.
- To freeze: Place chops in a freezer bag and seal. Mix together the soup and cranberry sauce. Place in a second bag and seal. Place both bags into a larger freezer bag. Seal, label and freeze.
- To serve: Thaw overnight in fridge. Proceed with cooking directions.

- In a sml bowl, combine seasoned breadcrumbs, parsley, melted butter, garlic & thyme. Set crumb mixture aside.
- In a wide, shallow bowl combine flour, coriander, salt & pepper.
- Evenly coat both sides of ea chop w/mustard & then coat w/flour mixture.

- Optional: Remove the pork chops from the refrigerator 30 minutes ahead of time to approach room temperature.
- Preheat oven to 400°F (204°C) with the rack in the middle position. Lightly grease a rimmed baking sheet with vegetable oil or cooking spray and set aside.
- Pat dry the pork chops with paper towels. Place them on a sheet pan in a single layer and rub with oil on all sides.
- In a small bowl combine paprika, garlic powder, salt, and black pepper. Rub the seasoning mixture over all sides of each pork chop.
- Cover the pork chops loosely with aluminum foil and bake for about 15 minutes depending on thickness (see note). Do not flip the chops while baking.

- Preheat the oven to 450 degrees F.
- Combine the panko, oil, Parmesan, Italian seasoning and 3/4 teaspoon each salt and pepper in a large resealable plastic bag. Put the pork chops in a large bowl and toss to coat with 1 tablespoon water. Place the pork chops in the bag and shake well to coat, pressing the breadcrumb mixture firmly into the meat.
- Place the pork chops on a wire rack set on a baking sheet and top evenly with any breadcrumbs remaining in the bag. Bake until the breadcrumbs are dark golden and the internal temperature of the chops registers 145 degrees F on an instant-read thermometer (avoid touching bone), 15 to 20 minutes.

- Pare seven good sized potatoes, slice as for scalloped potatoes. Take one and a quarter pounds of lean pork chops, put a layer of potatoes into baking dish, then layer of pork chops, dust with salt and pepper, sprinkle with chopped onions, continue until all is used. Have potatoes on top. Pour in 1 cup of water or milk. Put on the cover and bake in moderately hot oven for one hour and fourty minutes; uncover during the last ten minutes so potatoes will brown.
