VORTEX CHICKEN THIGHS
Chicken thighs are so tasty, and can take a lot of flavor. We're grilling these hot and fast with a custom rub, and then toss them in an Asian style glaze.

Steps:
- Place the chicken thighs on a cutting board or on a tray.
- Blend the rub ingredients in a small bowl, and stir well. Now apply the rub evenly on all sides of the chicken thighs.
- Fire up your grill and prepare it for high indirect heat. I use a Vortex in my grill to get high heat in the middle, which allows me to place the chicken in a circle around the hot air. If you don't have one you can place all charcoal to one side in your grill, and the chicken on the other side.
- Cook the chicken for 20-30 minutes until their inner temp reads 70° C / 158° F.
- Place the chicken thighs in a bowl and mix the sauce ingredients in a small bowl separately.
- Now drizzle the sauce all over the chicken thighs and toss them a few times. And that's it, now they're ready to serve!

Steps:
- Combine the paprika in a bowl with the herbs and garlic granules, if using, together with ½ tsp salt and ½ tsp ground black pepper. Scatter onto a plate. Rub the chicken thighs with the oil, then coat in the spice mix.
- Put in the basket of your air fryer and cook, skin-side down, for 10 mins at 180C. Turn over and cook for a further 10-15 mins until cooked through and the skin is crispy. To check they are cooked, pierce the thickest part of the thigh with a knife to see if the juices run clear. Remove from the air fryer immediately to stop the skin from softening.

- Start by placing your Chicken Thighs in a food bag and add the Hot BBQ Rub. Seal the bag and shake the bag making sure you fully cover all of the thighs with the rub. I placed these in the fridge for 2 hours but you could leave longer.
- When you are ready to cook take the Chicken Thighs out of the fridge. I usually do this at least 30 minutes before I want to start cooking.
- Take each Chicken Thigh and roll into a cylinder, and using a cocktail stick pierce the chicken to hold them in place. When your BBQ is up to temperature add the chicken to the grill.
- I like to add a wood chunk to get some extra smoke. If you are using the vortex you will need to rotate the lid 90 degrees every 15 minutes to get an even cook of the thighs.
